Abstract
1414529 Food products containing microbial protein H MULLER 31 Aug 1973 [6 Sept 1972 13 Oct 1972 16 April 1973] 41213/73 Heading A2B [Also in Division C6] A food product of high protein content is prepared by growing a microorganism in an aqueous nutrient broth containing dissolved proteins and carbohydrates, then ultrafiltering the fermented broth and drying the solid product. The product may be washed and ultrafiltered a second time before drying. The broth before ultrafiltration or the product may be bleached. The preferred nutrient is whey and the preferred microorganism is Saccharomyces fragilis.
