Abstract

1452380 Edible product derived from whey BEECHAM GROUP Ltd 24 April 1975 [19 April 1974] 17179/74 Heading A2B [Also in Division C6] Cheddar cheese whey is heat treated e.g. at 90 to 98‹C to coagulate protein, and the resulting suspension is cooled to e.g. 38 to 46‹C and fermented with lactic acid producing bacteria until the lactic acid concentration is 0.4 to 1.3 % w/v. The initial lactic acid content of the whey should not exceed 0.3% w/v. The bacteria e.g. L. bulgaricus and S. thermophilus may be added in the form of a starter culture in whole milk, skimmed milk or whey. The product may be mixed with sweeteners, colourings, flavourings or fruit, together with a stabiliser e.g. sodium CMC, propylene glycol alginate, locust bean or guar gum, starch or pectin, to give a yoghurt. Alternatively the fermented product may be concentrated e.g. by evaporation and used as a clouding agent in soft drinks. The product may be pasteurised and stored under refrigeration. Preservatives, e.g. sorbic, benzoic or p-hydroxybenzoic acid, may be included.
