Abstract
La presente invención se basa en el descubrimiento de que las grasas de estearina, que se pueden obtener mediante el fraccionamiento en seco o con solvente de aceites de girasol con alto contenido de ácido esteárico y alto contenido de ácido oleico, opcionalmente con la siembra con cristales templados de estearina, tienen un alto contenido de grasa sólida a temperaturas superiores a 30ºC, aún más altas que la manteca de cacao u otras grasas de climas tropicales, saturadas, altas con un contenido similar de triacilglicerol disaturado debido a la presencia de triacilgliceroles disaturados ricos en ácido esteárico y un punto de fusión mejorado debido a la presencia de ácidos araquídicos y behénicos en estos triacilgliceroles disaturados, siendo al mismo tiempo más saludables que las grasas actuales hechas de aceite de palma, palmiste y coco, o aceites vegetales hidrogenados y transesterificados.
