Abstract

Grasas de estearina, que se pueden obtener por fraccionamiento en seco o con solvente de aceites ricos en ácido esteárico y ricos en ácido oleico de girasol, opcionalmente con siembra de cristales de estearina templadas que presentan un contenido elevado de grasas solidas a temperaturas mayores que 30°C, aun mayores que la manteca de cacao u otras grasas tropicales altamente saturadas con un contenido de triacilglicerol disaturado similar debido a la presencia de triacilgliceroles disaturados ricos en ácido esteárico y punto de fusion mejorado debido a la presencia de los ácidos araquídico y behénico en estos triacilgliceroles disaturados, siendo al mismo tiempo más saludables que las grasas existentes obtenidas a partir de aceites de palma, granos de palma y coco, o aceites vegetales hidrogenados y transesterificados.
