Abstract
Η παρούσα εφεύρεση αναφέρεται σε νέα α-γαλακτοζιδάση με δραστικότητα trans-γαλακτοζυλίωσης η οποία απομονώνεται από bifidobacterium bifidum. Η α-γαλακτοζιδάση είναι ικανή να μετατρέπει τη μελλιβιόζη σε δισακχαρίτες α-γαλακτοβιόζης οι οποίοι μπορούν να ενσωματωθούν σε πολυάριθμα τρόφιμα ή ζωοτροφές για τη βελτίωση της υγιεινής του εντέρου με προαγωγή της ανάπτυξης δισχιδών βακτηρίων εντός του εντέρου, και με καταστολή της ανάπτυξης της παθογόνου μικροχλωρίδας.
