Abstract

Se producen galletas o bocadillos de queso que tienen forma de pastas a traves de la mezcla de al menos un tipo de harina, queso y agua para obtener una masa que tiene contenido real de queso que va de aproximadamente 60% en peso, con base en el peso de la masa, y se extrusiona la masa a una presion y termperatura que eviten la gelatinizacion sustancial del almidon y la expansion de la masa.
