Abstract
Las galletas o snacks de queso con forma de pasta se producen mediante la mezcla de al menos una harina, queso y agua para obtener una masa con un contenido de queso verdadero de alrededor de 5% en peso a alrededor de 60% en peso, sobre la base del peso de la masa, la extrusion de la masa a una temperatura y presion tal que eviten la sustancial gelatinizacion del almidon y la expansion de la masa.
