Abstract
Un método de preparar productos coloreados de materiales comestibles comprende procesar jugo de fruta de Genipa americana, que contiene genipina, derivados de genipina o compuestos de pre-genipina, con otros jugos o extractos comestibles que contienen compuestos nitrogenados tales como aminoácidos, polipéptidos, o proteínas.
