Abstract

Una bebida con sabor a frutas, de alto contenido proteico que comprende agentes saborizantes frutales y composiciones de proteínas del suero desnaturalizadas, con un alto contenido proteico, y un método de producción de la bebida. En particular, se refiere a bebidas con sabor a frutas que tienen un contenido de proteínas de por lo menos un 4% (p/p). Además, se relaciona con preparaciones de frutas y/o de verduras de un alto contenido proteico que son ventajosas, por ejemplo, para la producción de yogur con sabor a frutas y/o verduras con un alto contenido proteico. También se relaciona con productos alimenticios que contienen dichas preparaciones de frutas y/o verduras de alto contenido proteico y con métodos para su producción. Reivindicación 1: Una bebida con sabor a frutas de alto contenido proteico que contiene: agua, un endulzante, una cantidad total de proteínas de por lo menos un 4% (p/p), una cantidad total de los sólidos de una composición de proteínas del suero desnaturalizadas de por lo menos un 2% (p/p) con relación al peso total de la bebida, donde la composición de proteínas del suero desnaturalizadas contiene: una cantidad total de proteínas de por lo menos un 60% (p/p) basado en el peso seco con relación al peso total de la composición de proteínas del suero desnaturalizadas, partículas de proteínas del suero insolubles que tienen un tamaño de partícula en el rango de 1 - 10 mm, donde la cantidad de dichas partículas de proteínas del suero insolubles se encuentra en el rango de 50 - 100% (p/p) con relación a la cantidad total de proteínas de la composición de proteínas del suero desnaturalizadas, un agente saborizante de frutas y un ácido alimenticio, donde dicha bebida tiene un pH en el rango de 3,0 - 4,8.
