Abstract

Un postre de varias capas con cuando menos un componente tratadotérmicamente que consiste de espumas o mousse, cremas, jaleas y/o salsas, caracterizado porque ese componente está recubierto con una capa atravesante esterilizada de glaseado de substancia grasa o chocolate con un espesor entre 0.1 y 3 mm, o bien los componentes se dividen por medio de una o varias capas atravesantes esterilizadas de glaseado de substancia grasa o chocolate con un espesor de entre 0.1 y 3 mm y esos componentes poseen una viscosidad de Bostwick menor a 8 cm. Dispositivo para la dosificación de la capa de glaseado o de chocolate, caracterizado porque consiste de dos líneas conectadas; una línea de preparación que funciona por cargas y una línea de rocío de funcionamiento continuo.
