Abstract
Un procedimiento para la preparación de un producto de confitura recubierto congelado por medio del cual se congela una solución acuosa que se encuentraen estado super-enfriado mientras se aplica en al menos parte de la superficie de un elemento precongelado del producto. También se provee un producto deconfitura congelado recubierto que contiene una solución acuosa congelada en donde por lo menos parte de la solución acuosa congelada tiene un índice dehomogeneidad de 0,5 -2,0, por ejemplo un núcleo de helado de crema rodeado por una capa helada de sorbete. Los productos pueden ser obtenidos con el métodomencionado. El método provee productos de confitura congelados recubiertos que tienen una capa de cobertura suave y una textura excelente sin la necesidad demétodos o moldes complicados.
