Abstract
Proceso para la preparación de una confitura congelada revestida en virtud del cual una solución acuosa en estado superenfriado se hace congelar al aplicarse en al menos parte de la superficie de un elemento precongelado, que tiene una temperatura inferior al limite metastable de la solución acuosa. Dicha solución acuosa es una solución de helado, y dicho elemento precongelado contiene una emulsión de aceite de agua, preferentemente una crema helada. El elemento precongelado se sumerge en la solución acuosa superenfriada. La solución acuosa superenfriada se rocía sobre los elementos precongelados de la confitura. La solución acuosa congelada tiene un índice de homogeneidad de 0.5 a 2.0. La confitura comprende un núcleo de crema helada rodeado por una capa suave de helado.
