Abstract

Description

本发明涉及食品包装膜及用其制成的用来贮存如蔬菜和水果等制成品的食品贮存袋,尤其是涉及柔性食品贮存袋,其中设有微孔,其设置方法特别可使袋中含有的制成品以控制速度呼吸,从而减少局部冷凝,并进而减少微生物(细菌和霉菌)繁殖和制成品粘糊化(软化)。本发明微孔袋还可控制贮存制成品的重量损失(失重),因而尽可能减少开袋制品的枯萎和凋残。
因新鲜果品和蔬菜存于袋中时要排放气体并保持湿分,所以包装工业面临的挑战是提供贮存制成品的容器或袋,这可有助于保持贮存制成品的质量或贮存寿命。
已有几种制成品包装技术可保持制品质量或延长其存放寿命,包括例如应用可控改进气氛包装,收缩包装,功能或积极包装以及不透气塑料贮藏袋,但这些已知技术不可能适当控制或保持制成品质量,因此包装工业仍需开发新包装材料,如尽可能减少局部冷凝和制成品失重的贮物袋。
为解决贮物冷凝问题,US  4735308公开了内加衬食品存放袋,可用于贮存含湿食品,如果品和蔬菜,该贮物袋包括手工密封的不透水外袋及其中的吸收剂内袋,其结构很复杂,但其中并不用微孔控制制成品呼气。
还提出通气塑料袋,如US  3399822所述含缝袋或US  4886372所述微孔带,均可用于存放蔬菜,前者中的缝防止袋中所存蔬菜受污染,但并没有解决所存蔬菜的湿份或失重问题,而后者提出控制成品和果品的成熟过程,其中应用具有按需要选择孔尺寸和数量的容器或袋,但其中孔太大,如20-60mm,因此不能用来对制成品失重问题进行适当控制。现有技术还说明了具有微孔的袋,但该孔太小或太多,不宜于存放室内消费的少量制成品。
由于现有技术有这些缺陷,所以现要求提供带微孔的膜和食品贮存袋,其尺寸和数量可保持制成品质量并减少与现有技术中包在通风袋中,在完全不透气包装中或在受控/改性气氛包装中的制成品有关的问题。
本发明涉及食品存放袋或包装,其中具有一定图案的微孔,尤其可用来使制成品,如蔬菜和果品以受控速度呼吸,从而尽可能减少水滴汇集,并进而减少微生物(细菌和霉菌)繁殖及粘糊化(软化)。
所设计的微孔图案可控制制成品失重,事实上失重会使制成品枯萎和凋残,该微孔可保持蔬菜和果品质量并延长其表观贮存寿命。
本发明不受存放制成品产品,形状,量和蒸腾特性的限制,这与一般设计来包装某一特定产品的受控气氛不同。
本发明优选方案之一涉及透明带微孔并扣拉链的袋,这与不透明无孔功能膜不同。
另外,本发明微孔袋可减少袋中局部冷凝,这种局部冷凝在用常规无孔贮存/冷藏塑料袋中是很明显的。
本发明微孔袋还可控制贮存制品失重,从而尽可能减少开袋制品枯萎和凋残。

广义地讲,本发明包括用来包装制成品的柔性热塑性薄膜材料,其中包括具有选定数量和尺寸的微孔的热塑性材料膜片,在该薄膜片中形成微孔时是从其中去除少量薄膜材料以留下空白区域,该空白区域足以使膜中空白面积与膜片表面积之比可足够控制该膜用于包装制成品时的制成品失重和局部冷凝。
本发明所用热塑性材料包括例如聚烯烃,如聚丙烯或聚乙烯或其它已知塑料。膜可制成单层或多层结构,并优选用于包装或包裹制成品。在更优选方案中,用膜制造容器或袋。
在本发明方案之一中,制成具有优选微孔图案的柔性食品贮存袋。
本发明优选方案之一包括例如图1-3所示带拉链塑料袋,制造这种袋的方法见于US  5070584(Dais  et  al),可附加给该袋的其它特点包括例如用已知方法打褶,印刷表面,染色,达到一定构型或加浮雕图案。
本发明拉链袋优选用薄膜片按已知加热密封法制成(见US  5012561(Porchia  et  al))。一般来说,可将膜片对折而形成底后再沿其侧边加热密封,其中顶部留下开口以便加装可手工密闭的设施,如拉链,即相互锁紧的塑料边,也可压在一起而使袋密封并可撬开或拉开以将袋打开。
存放在袋中的食品可为各种保持湿份的食品,如新鲜果品和蔬菜,包括例如“低呼吸”成品如葡萄和胡萝卜,“中呼吸”成品如莴苣以及“高呼吸”成品如花茎甘蓝,其中“低呼吸”指呼吸速度(mlCO2/Kg·hr)低于10的成品,“中呼吸”指呼吸速度10-20的成品,而“高呼吸”成品指呼吸速度高于20的成品。“低呼吸”,“中呼吸”和“高呼吸”在本专业众所周知,某些例子见于“Postharvest Physiology of Vegetables的表1,J.Weichmann,Marcel Dekker,Inc.,New York,New York,1987,page 33。
为达到贮存成品的最好结果,放有成品的袋存在呼吸温度下,一般低于约15℃,优选低于约10℃,更优选低于约5℃。
本文中“微孔”和“微口”可互换,指极小的孔,其尺寸(直径)一般小于约2000微米(μ)。在本发明袋中存放任何制成品时,袋中微孔直径优选大于250μ-1900μ,更优选300μ-800μ,最优选400μ-600μ,以在贮存任何制品时尽可能降低该制成品失重和冷凝。在存放具有特定呼吸速度的制品时,孔尺寸可变化,如对于“低呼吸”制成品,孔尺寸(直径)可为例如150μ-1900μ,优选100μ-1600μ,更优选180μ-600μ,对于“中呼吸”制成品,孔直径可为例如100μ-1200μ,优选150μ-1000μ,更优选200μ-800μ,而对于“高呼吸”制成品,孔直径可为例如250μ-950μ以上,优选大于325μ-850μ,更优选350μ-800μ。
孔数量和尺寸是以使袋中总空白面积与袋总表面积之比或空白比例符合要求,空白面积/袋面积百分比如下式:
V=〔(H)2×( (π)/4 )×D〕×100
其中V=空白面积/袋面积百分比,H=孔径,D=孔密度(即孔数/袋面积)。
在本发明袋中存放任何制成品时,空白面积/袋面积百分比优选0.05-2.75%,优选0.07-0.5%,更优选0.12-0.27%。在贮存特定呼吸速度的制成品时,空白面积/袋面积可变化。例如对于“低呼吸”制成品,空白面积%为0.002-2.75%,优选0.008-1.95%,更优选0.017-0.27%,对于“中呼吸”制成品,空白面积%为0.008-1.10%,优选0.017-0.75%,更优选0.03-0.5%,而对于“高呼吸”制成品,则空白面积%为0.07-0.62%,优选0.08-0.55%,更优选0.09-0.5%。
一般来说,袋的孔密度为3-8孔/英寸2(1英寸2=6.45Cm2),优选3.5-7孔/英寸2,更优选4-6.5孔/英寸2
微孔形状并不关键,只要能使湿份通过即可,一般为圆(环)形或椭圆形。
微孔尺寸一般可变化,但袋中所有微孔优选具有基本相同尺寸。为获得本发明有利效果,微孔尺寸应均匀并且微孔在袋表面上均匀分布。
“均匀分布”指膜片或袋整个表面上微孔相互基本上等同并基本上均匀分开,而且优选呈圆点花纹矩阵或图案,其中孔处于均匀分开的正方形或三角形图案中,但孔也可呈任意分散图案,任何两个相邻孔间间距优选不大于约2英寸(50.8mm),这样可尽可能减少局部冷凝,更具体地讲,D1和D2孔间间距(如图3所示可为例如0.2英寸(5.08mm)-0.9英寸(22.9mm),优选0.3英寸(7.62mm)至0.6英寸(15.24mm),更优选0.4英寸(10.16mm)至0.5英寸(12.7mm)。作为举例,微孔可呈园点花纹正方图案,孔中心(D1和D2)间距13/32英寸(10.32mm),如图3所示。
如本文所述的本发明中举微孔分布的膜或袋可有效地减少用其包装的制成品失重和局部冷凝。图4示出了制成品失重和局部冷凝(以下由“Padres数”定量)与孔尺寸之关系图,其中要求尽可能降低或减少制成品失重,理想的是完全消除失重。一般来说,若失重保持在约8%以下,则制成品可基本上保存使用,优选制成品失重不高于约6%,更优选少于5%,最优选少于约3%。
本发明中局部冷凝可用以下称为“Padres数”的单位定量。
一段时间贮存后袋中余下的冷凝水量在本发明中可按例6和表ⅩⅠⅩ-ⅩⅩⅤ所述定量,其中所得结果单位定为“Padres数”,其值如下:
Padres数=Log〔( (C(g))/(Wtl(g)) )×100〕
该冷凝结果是袋中所存制成品失重造成的。
图4所示失重%和Padres数曲线为本发明所试验制成品的典型例之一。具体制成品的实际Padres数取决于贮存条件和被存制成品种类等特性。图4中Padres数曲线的斜率可随例如制成品种类,贮 存温度,袋中孔径,贮存时间和环境相对湿度变化。为尽可能减少袋中冷凝,本发明中Padres数一般小于1.74,优选小于约1.7,更优选小于约1.65,最优选小于约1.6。
图4示出了Padres数,失重和孔尺寸之间的关系,其中Padres数越小,孔尺寸越大,则袋中冷凝越少,而另一曲线中孔尺寸越小,失重越少,因此为尽可能减少失重,孔尺寸应尽可能小。而且,如图4所示,两条线对于具体制成品在其各自贮存条件下会相交,则其交点对于本发明袋而言为空白比例的最佳孔尺寸。
再参见图1-3,热塑性袋10用常用作食品存放袋的柔性薄片材料,如聚乙烯,聚丙烯或其它已知塑料等热塑性膜片11制成。
袋壁厚一般0.1至小于5密耳,优选0.5至小于3密耳,更优选1至小于3密耳,更为优选的是1.1至2.75密耳。
袋的膜11中设有多个微孔12,并以一定方式或图案,如按图1排列。如图1所示,袋中必要时设有封口装置13,包括例如拉链类型的封口,粘合带,线结等,袋10中优选用相互锁紧的拉链型封口件13。
微孔可设在例如袋10的一侧或两侧,只要微孔在袋一侧或两侧表面上均匀分布并且微孔数量和尺寸足以达到上述要求空白比例就行。
为制成膜片和袋中的微孔,可用任何常见的穿孔办法和措施,包括例如激光穿孔,打孔,微型冲孔和空气压力办法,优选用US  4667552所述穿孔机等穿孔设备形成孔。
在以下每一例中,下述每种袋中制成品失重和冷凝按以下办法确定:在将制成品放入袋之前先称重(Wi),过一段时间后在实验的测定时间内测定袋及其中的制成品的总重(Wt),然后从袋中取出制成品并用布擦干表面,再称出制成品重(Wp),之后擦干袋内表面上的任何湿份并测定袋重(Wb)。
Wi-Wp之差为制成品总失重(Wtl)(g),失重%如下:
(Wtl)/(Wi) ×100=制成品失重百分比(%)
袋中冷凝量(C)如下:
Wt-(Wp+Wb)=C(g)
Padres数如上述测定并如图4,例6以及表ⅩⅠⅩ-ⅩⅩⅤ所示。
例1
图1示出了该例所用微孔图案,在1加仑(10和9/16英寸(268.2mm)宽,11英寸(279.4mm)深,1.75密耳厚)塑料袋每一面上由20×20孔点阵组成,分别制成含800个尺寸为10,100和439μ的孔的袋,并分别试验装花茎甘蓝(“高呼吸制成品”)的12个袋,装鲜胡椒(“中呼吸制成品”)的12个袋以及装鲜葡萄(“低呼吸制成品”)的12个袋。在5℃和30-35%相对湿度(RH)(冷藏条件)下蔬菜在袋中存放2星期,其间测定每种制成品的失重和物理外观,即在两星期期间及结束时肉眼评价制成品冷凝情况,稀释情况,霉菌繁殖情况,凋残或枯萎情况。下列所有结果均基于三种测定试验的平均值。
该例结果见于表Ⅰ,Ⅱ和Ⅲ。

上述结果表明,对于所有试验制成品,孔尺寸439μ的袋均得到最好结果,因为袋中未见汇集水并且蔬菜质量好。对于低和中呼吸制成品,孔尺寸100μ的袋性能良好。而孔尺寸10μ及无孔袋性能相同,但未降低冷凝,使水滴在袋中汇集,产品变稀软。对照(未包装)制成品样品失重严重,导致质量严重下降(枯萎和凋残)。
表Ⅳ中示出了该例中具有尺寸439μ的孔的袋所得结果与用无孔其它各种材料制成袋所得结果的比较情况。
例2
该例中同例1制成并测试袋,其中在冷藏和箱冻条件下试验下列1加仑袋样品:
样品1:800孔袋,平均孔径439μ,
样品2:400孔袋,平均孔径439μ,
样品3:1孔袋(孔径1/4英寸(6.35mm)),
样品4:无孔ZIPLOC (The Dow Chemicel Cornpany商标)贮存袋,
样品5:对比(未包装)。
贮存条件如下:
冷藏:(5℃/30-35%RH),14天
霜冻:(5℃/85-92RH),14天
试验制成品包括花茎甘蓝和鲜胡椒(约1磅),测定失重%并记录观测结果,列于表Ⅴ和Ⅵ,其中穿孔袋样品用“(孔数/孔径(μ))”表示。
例3
该例中同例1制成并测试袋,其中在霜冻贮存条件(5℃/85-95%RH)下试验以下1加仑袋:
样品6:800孔袋,平均孔径578μ,
样品7:1200孔袋,平均孔径414μ,
样品8:800孔袋,平均孔径439μ,
样品9:600孔袋,平均孔径405μ。
试验制成品包括花茎甘蓝和鲜胡椒,测定失重%并记录观测结果,列于表Ⅶ和Ⅷ,其中穿孔袋样品用“(孔数/孔径(μ))”表示。

在该例中据测定,失重(%)在冷藏条件下(30-35%RH)大于在霜冻条件下(85-92%RH)。
基于上述结果,可看出样品7(414μ/1200孔)的总的效果最好。
例4

Claims (24)

1、柔性食品贮存袋,其中包括用于制成品贮存的柔性袋,其顶部可封口,该袋用热塑性材料制成并具有多个均匀分布的微孔以在袋中提供可大大降低袋中局部冷凝和制成品失重的空白面积%。
2、权利要求1的袋,其Padres数小于1.74。
3、权利要求1的袋,其中成品失重小于约8%。
