本发明提供一种纸上活体综合胚芽功能性微量激活源,以重量分数计,包括以下原料:小麦芽15‑50份、豌豆芽15‑50份、蚕豆芽10‑30份、芸松芽10‑30份。本发明使用不同品种种子,经过不同的发芽时间,使其胚芽萌发,胚芽的长度全部控制在5mm以下采收,而且与胚芽与种子一起食用,在产品中即包含胚芽的营养成分,也包含了种子的营养成分,可以达到或超越平时食用营养保健食品的功能性营养成分,而且全部是带有活体植物细胞的活性物质,有利于被人体吸收营养和功能性作用,从而达到亚健康人群代谢性慢病管理的疗效。

本发明属保健食品领域,具体涉及一种纸上活体综合胚芽功能性微量激活源及其制备方法。
背景技术
种子萌发是指种子从吸胀作用开始的一系列有序的生理过程和形态发生过程;种子的萌发需要适宜的温度,适量的水分,充足的空气。种子萌发时,首先是吸水;种子浸水后使种皮膨胀、软化,可以使更多的氧透过种皮进入种子内部,同时二氧化碳透过种皮排出,里面的物理状态发生变化;其次是空气,种子在萌发过程中所进行的一系列复杂的生命活动,只有种子不断地进行呼吸,得到能量,才能保证生命活动的正常进行;最后是温度,温度过低,呼吸作用受到抑制,种子内部营养物质的分解和其它一系列生理活动,都需要在适宜的温度下进行的。种子的萌发大致可分四个阶段:
1.吸胀:为物理过程,种子浸于水中或落到潮湿的土壤中,其内的亲水性物质便吸引水分子,使种子体积迅速增大(有时可增大1倍以上)。吸胀开始时吸水较快,以后逐渐减慢;种子吸胀时会有很大的力量,甚至可以把玻璃瓶撑碎;吸胀的结果使种皮变软或破裂,种皮对气体等的通透性增加,萌发开始。
2.水合与酶的活化:这个阶段吸胀基本结束,种子细胞的细胞壁和原生质发生水合,原生质从凝胶状态转变为溶胶状态。各种酶开始活化,呼吸和代谢作用急剧增强;如大麦种子吸胀后,胚首先释放赤霉素并转移至糊粉层,在此诱导水解酶(α-淀粉酶、蛋白酶等)的合成;水解酶将胚乳中贮存的淀粉、蛋白质水解成可溶性物质(麦芽糖、葡萄糖、氨基酸等),并陆续转运到胚轴供胚生长的需要,由此而启动了一系列复杂的幼苗形态发生过程。
3.细胞分裂和增大:细胞分裂和增大时吸水量又迅速增加,胚开始生长,种子内贮存的营养物质开始大量消耗。
4.胚突破种皮:胚突破种皮时胚生长后体积增大,突破种皮而外露;大多数种子先出胚根,接着长出胚芽。
研究表明种子发芽后会发生一系列变化,不仅会将原有的脂肪酸消耗掉,并将蛋白质的大分子降解成更易人体吸收的氨基酸,维生素含量也随之提高。
中国专利CN 200910164294.0公开了一种即食调味芽苗菜的制备方法,通过选用多种品种的芽苗菜原料,单独品种或混合品种,经去杂清洗、烫漂去水、味型调制、称量包装、灭菌除水、化验装箱,制得能常温保存,有多种品种与味型,能在各种食品零售商处销售,消费者易于购买,买后开启包装即可做为菜品或休闲食品食用的芽苗菜包装食品;其中所述芽苗菜包括小麦芽、豌豆芽、萝卜芽、香椿芽、荞麦芽、花生芽等多种,但是该专利存在以下缺点:实施例中只公开了单种芽苗菜的制备方法,只是做外菜品或者休闲食品食用,没有提到哪些芽苗菜共混会起到对于慢病预防及辅助治疗作用;并且将芽苗进行了烫漂去水,并加入了食品添加剂,而且进行了味型调制,不利于人体健康。
发明内容
本发明的目的之一在于克服现有技术存在的上述不足,提供一种纸上活体综合胚芽功能性微量激活源,是一种混合种芽;本发明使用不同品种种子,经过不同的发芽时间,使其胚芽萌发,胚芽的长度全部控制在5mm以下采收,而且胚芽与种子一起食用,在产品中即包含胚芽的营养成分,也包含了种子的营养成分,可以达到或超越平时食用营养保健食品的功能性营养成分,而且全部是带有活体植物细胞的活性物质,有利于被人体吸收营养和功能性作用,从而达到亚健康人群代谢性慢性病管理的疗效。

本发明纸上活体综合胚芽功能性微量激活源以重量分数计,包括以下原料:小麦芽15-50份、豌豆芽15-50份、蚕豆芽10-30份、芸松芽10-30份。

本发明纸上活体综合胚芽功能性微量激活源中,还可以加入萝卜芽10-30份。

本发明纸上活体综合胚芽功能性微量激活源中,还可以加入苜蓿芽5-10份。
本发明所用原料的种子发芽控制在3-5mm。
本发明纸上活体综合胚芽功能性微量激活源的制备方法,依次包括如下步骤:
1)选种:选用颗粒饱满的纯天然非转基因植物种子,要求种子为专用品种,具高芽率、高活力等优点,以保证生产出高营养率、口感好的功能性种子胚芽。
2)浸种:把种子清选干净,用清水浸泡8-12小时,在此期间,用清水淘洗2-3次。
3)发芽:将浸泡后的种子放到纸张上进行发芽,播种时种子之间不能有相互遮盖,此生产过程中无土、无肥、免营养液、零添加,避免了采用土壤或基质栽培而可能产生的细菌等有害物质,发芽过程中温室控制在15-25℃。
4)包装:当70%以上种子发芽接近5mm时,将发芽的种子放入包装盒或塑料袋中,所使用包装需具有透气性,并放入少量的清水,以使种子在包装及后期的运输过程中继续保持活性。
5)食用方法如下:
食用方法一:按本发明配方,将所用纸上活体综合胚芽功能性微量激活源从包装盒中取出,称重,用清水冲洗,加入米粥中,煮沸,作为米粥的配料;
食用方法二:按本发明配方,将所用纸上活体综合胚芽功能性微量激活源从包装盒中取出,称重,用清水冲洗,加入牛奶中,煮沸,作成牛奶饮品;
食用方法三:按本发明配方,将所用纸上活体综合胚芽功能性微量激活源从包装盒中取出,称重,用清水冲洗,加入豆浆中,煮沸,作成豆浆饮品。
本发明的有益效果是:
(1)本发明使用不同品种种子,经过不同的发芽时间,使其胚芽萌发,胚芽的长度全部控制在5mm以下采收,而且与胚芽与种子一食用,在产品中即包含胚芽的营养成分,也包含了种子的营养成分,可以达到或超越平时食用营养保健食品的功能性营养成分,而且全部是带有活体植物细胞的活性物质,有利于被人体吸收营养和功能性作用,从而达到亚健康人群代谢性慢病管理的疗效。
(2)含有小麦芽的配方富含维生素A、C、E、复合维生素B群、胡萝卜素、核黄素、铁、粗纤维、多种蛋白质、醣类、铁、钙、磷、膳食纤维及多种必要胺基酸及微量元素的天然食物,具有帮助消化系统、刺激肠胃蠕动、清除老废物、预防便秘、可美容养颜、促进消化、增加食欲,还有助于消炎退热、健胃消食、疏利肠胃,能去除体内有害化学物质、可降血糖、稳定糖尿病患的血压及改善并发症、抑制肺癌、直肠癌、肝癌、骨癌等的癌细胞株的生长,有清肝、预防贫血、增强心脏功能等功效。对脂肪肝、脑血管障碍、糖尿病、肠胃疾病及老年失智症都有帮助。
(3)含有豌豆芽的配方,因豌豆芽性味甘平,有和中下气、利小便、解疮毒的功效;现代研究发现,豌豆芽含有丰富的维生素A原,维生素A原可在体内转化为维生素A而后者具有润泽皮肤的作用。豌豆芽可美容养颜、促进消化、增加食欲,改善便秘、其“芸香苷”具维护血管弹性、预防狭心症及脑血管出血、预防及改善老年失智症。
(4)含有蚕豆芽的配方,其蚕豆芽中含有调节大脑和神经组织的重要成分钙、锌、锰、磷脂等,并含有丰富的胆石碱,有增强记忆力的健脑作用。蚕豆芽中的钙,有利于骨骼对钙的吸收与钙化,能促进人体骨骼的生长发育。蚕豆芽中的蛋白质含量丰富,且不含胆固醇,可以提高食品营养价值,预防心血管疾病。蚕豆芽中的维生素C可以延缓动脉硬化,蚕豆皮中的膳食纤维有降低胆固醇、促进肠蠕动的作用。
(5)含有芸松芽的配方,芸松芽营养丰富,清香味浓郁,富含钙、钾、锌、磷等微量元素,还含有丰富的膳食纤维,含有大量的维生素C。芸松芽是碱性食品,食用后消化水解产生的盐基,可以中和体内多余的酸,达到酸碱平衡,经常食用可感到精神饱满。另外芸松芽的膳食纤维,能帮助胃肠蠕动,防止便秘;经常食用芸松芽能降低血脂血糖,能滋阴壮阳,延年益寿,并有减肥效果。芸松芽中大量的维生素C,可以提高人体免疫力,预防坏血病。
(6)含有萝卜芽的配方,萝卜芽中含有丰富的维生素C,其含量比梨高8-10倍,而维生素C是防癌抗癌的能手,可以阻断致癌亚硝胺的形成;阻断外来致癌物的活化;解除外来致癌物的毒性;提高机体免疫功能抵抗癌细胞;发挥抗氧化、抗辐射作用来对抗致癌物质;通过促进干扰素合成来对抗癌细菌及致癌病毒等。萝卜芽中含有一种叫“干扰素诱生剂”的抗肿瘤和抗病毒的活性物质,科学家用实验让明,这种物质能刺激细胞产生干扰素,对食道癌、胃癌、鼻咽癌、子宫颈癌等均有显著的抑制作用。萝卜芽中含有一种能分解亚硝酸的酶,可使致癌物质亚硝酸分解而失去作用,但这种酶遇热即分解而失去抗癌作用;萝卜芽中丰富的纤维素可促进肠蠕动,减少粪便在肠道内的停留时间,及时把肠道中的有毒致癌物质排出体外,有利降低结肠癌的发病率。萝卜芽中的木质素可将巨噬细胞的活力提高2-3倍,提高机体的抗癌能力;可见,萝卜芽中含有多种抗癌活性物质,它们发挥着很好的防癌抗癌作用。据日本食品研究所分析的结果,萝卜芽除含有丰富的维他命A、B1、B2、C、E及钙、铁、钾、磷、纤维素及胡萝卜素,等矿物质外,其维他命A含量高达柑桔的50倍,维他命C含量超过柠檬1.4倍,且含多量淀粉分解酶,可以将色氨酸在高温下分解产生的强致癌物分解成无害物质,是一种营养价值很高之健康蔬菜,可以帮助消化、刺激肠胃蠕动、改善便秘及慢性胃肠病。
(7)含有花生芽的配方含多种维生素和各种微量元素,具有促进人体健康和防病,治病的营养价值,花生芽经检验证明完全没有因花生发霉产生的黄曲毒素,为富硒健康食品;花生芽中的抗氧化物「白藜芦醇」比红酒高,还可以抗氧化、抗老化,有助降低心血管疾病;虽然其它蔬果也都含有其它抗氧化物,例如维生素E、胡萝卜素等,但研究显示,花生芽中的抗氧化物「白藜芦醇」可应用在慢性肺阻塞、气喘,甚至在关节炎的治疗上,都很有帮助。

(9)含有藜麦芽的配方,因藜麦是唯一的全谷全营养完全蛋白碱性食物,胚乳占种子的68%,且具有营养活性,蛋白质含量高达16%-22%(牛肉20%),品质与奶粉及肉类相当,富含多种氨基酸,其中有人体必需的全部9种必需氨基酸,比例适当且易于吸收,尤其富含植物中缺乏的赖氨酸,钙、镁、磷、钾、铁、锌、硒、锰、铜等矿物质营养含量高,富含不饱和脂肪酸、类黄酮、B族维生素和维生素E、胆碱、甜菜碱、叶酸、α-亚麻酸、β-葡聚糖等多种有益化合物,膳食纤维素含量高达7.1%,胆固醇为0,不含麸质,低脂,低热量(305kcal/100g),低升糖(GI升糖值35,低升糖标准为55),几乎都是常见食物里最优秀的。藜麦芽属于易熟易消化食品,口感独特,有淡淡的坚果清香或者人参香,具有均衡补充营养、增强机体功能、修复体质、调节免疫和内分泌、提高机体应激能力、预防疾病、抗癌、减肥、辅助治疗等功效,适于所有群体食用,尤其适于高血糖、高血压、高血脂、心脏病等慢性病,以及婴幼儿、孕产妇、儿童、学生、老年人等特殊体质和生活不规律人群。长期食用,效果显着。
本发明用到的原料说明如下:
小麦芽:小麦芽味甘、性微寒,含丰富的粗纤维,多以榨汁饮用,并依各人喜好调整浓度即可;C、E、复合维生素B群、多种蛋白质、水份、脂肪、醣类、钙、磷、膳食纤维及多种必要胺基酸及微量元素的天然食物。含有一百四十多种营养的超级食物。小麦芽在所有绿色植物中,是富含最佳活性酵素、矿物质、维生素。小麦芽的叶绿素,其化学构造和血红素类似,可消除有害微生物及细菌、促进新陈代谢,因此有绿色血液之称。唯一的差别,是血红素含铁,叶绿素含镁,是最好的一种造血食物和活力恢复剂。人体需要丰富的营养素来使血液做最佳的循环,而小麦芽正可提供这些营养。小麦芽含有的维生素A比胡萝卜素丰富六倍,含有的维生素C比柑桔丰富八倍,比牛奶的钙质多五倍,比波菜的铁质多十八倍。小麦芽纤维是大肠和结肠的洗刷剂,帮助消化系统清除老废物预防便秘、痔疮和肠癌症。此外小麦芽还有助于消炎退热、健胃消食、疏利肠胃,能去除体内有害化学物质、抑制癌细胞分裂、净化体内,更有清肝、平衡血糖及血压、预防贫血、改善便秘、增强心脏功能等功效。

藜麦芽:藜麦是唯一的全谷全营养完全蛋白碱性食物,胚乳占种子的68%,且具有营养活性,蛋白质含量高达16%-22%(牛肉20%),品质与奶粉及肉类相当,富含多种氨基酸,其中有人体必需的全部9种必需氨基酸,比例适当且易于吸收,尤其富含植物中缺乏的赖氨酸,钙、镁、磷、钾、铁、锌、硒、锰、铜等矿物质营养含量高,富含不饱和脂肪酸、类黄酮、B族维生素和维生素E、胆碱、甜菜碱、叶酸、α-亚麻酸、β-葡聚糖等多种有益化合物,膳食纤维素含量高达7.1%,胆固醇为0,不含麸质,低脂,低热量(305kcal/100g),低升糖(GI升糖值35,低升糖标准为55),几乎都是常见食物里最优秀的。藜麦芽属于易熟易消化食品,口感独特,有淡淡的坚果清香或者人参香,具有均衡补充营养、增强机体功能、修复体质、调节免疫和内分泌、提高机体应激能力、预防疾病、抗癌、减肥、辅助治疗等功效,适于所有群体食用,尤其适于高血糖、高血压、高血脂、心脏病等慢性病,以及婴幼儿、孕产妇、儿童、学生、老年人等特殊体质和生活不规律人群。长期食用,效果显着。
具体实施方式
下面将结合实例对本发明的实施方案进行详细描述,但是本领域技术人员将会理解,下列实施例仅用于说明本发明,而不应视为限定本发明的范围。
实施例1:
小麦芽20克、豌豆芽20克、蚕豆芽10克、芸松芽10克。
实施例2:
小麦芽20克、豌豆芽20克、蚕豆芽10克、芸松芽10克、萝卜芽10克。
实施例3:
小麦芽20克、豌豆芽20克、蚕豆芽10克、芸松芽10克、藜麦芽10克。
实施例4
小麦芽20克、豌豆芽20克、蚕豆芽10克、芸松芽10克、苜蓿芽10克。
实施例5
小麦芽20克、豌豆芽20克、蚕豆芽10克、芸松芽10克、苜蓿芽10克、
花生芽10克。
实施例6
小麦芽20克、豌豆芽20克、蚕豆芽10克、芸松芽10克、苜蓿芽10克、
藜麦芽10克。

以上实施例的芽长3-5mm。
以上实施例的制备方法如下:
1)选种:选用颗粒饱满的纯天然非转基因植物种子,要求种子为专用品种,具高芽率、高活力等优点,以保证生产出高营养率、口感好的功能性种子胚芽。
2)浸种:把种子清选干净,用清水浸泡8-12小时,在此期间,用清水淘洗2-3次,继续浸泡。
3)发芽:将浸泡后的种子放到纸张上进行发芽,播种时种子之间不能有相互遮盖,此生产过程中无土、无肥、免营养液、零添加,避免了采用土壤或基质栽培而可能产生的细菌等有害物质,发芽过程中温室控制在15-25℃。
4)包装:当70%以上种子发芽接近5mm时,将发芽的种子放入包装盒或塑料袋中,所使用包装需具有透气性,并放入少量的清水,以使种子在包装及后期的运输过程中继续保持活性。
5)将以上芽苗按配方共混,备用。
对比例1
配方同实施例11,具体如下:
小麦芽35克、豌豆芽25克、萝卜芽16克、蚕豆芽17克、芸松芽19克、花生芽15克、苜蓿芽6克、藜麦芽7克。
对比例1的芽长15-20mm。
以上实施例、对比例的食用方法如下:将步骤5)的共混芽苗,用清水冲洗,加入豆浆中(豆浆的用量以喝完为准),煮沸,作成豆浆饮品,成人每日早晚2次,每次50克。
对比例2,
采用纯种子,配方同实施例11,具体如下:
小麦35克、豌豆25克、萝卜16克、去皮蚕豆17克、芸松19克、花生15克、苜蓿6克、藜麦7克。
对比例2的食用方法如下:将对比例2的种子加入黄豆中,一起做成豆浆,豆浆的用量以喝完为准,成人每日早晚2次,每次50克。
以上实施例用于糖尿病病人食用效果如下:
(1)高血糖病人使用效果:
空腹血糖大于6,餐后血糖大于等于7.7都可以说是高血糖,将没有达到糖尿病标准的高血糖病人260人,平均分为13组,每组20人,分别每天用实施例1-11、对比例1-2的食品配方,每日早晚2次,每次50克,连续食用5个月,饮食低糖饮食,实施例10-11的病人空腹血糖和餐后血糖全部恢复正常,实施例5-9的病人需要连续食用9个月,才能全部恢复正常,实施例2-4连续食用9个月,每组均有3-5例没有恢复正常,但是血糖有所改善;实施例1和对比例1-2连续食用9个月,没有病人恢复正常,血糖有所改善。
(2)1型糖尿病人使用效果:
1型糖尿病人100例,平均分为10组,每组10人,分别食用实施例2-11的纸上活体综合胚芽功能性微量激活源食品配方(因为实施例1的降糖效果稍差,没有用于1型糖尿病人),每日早晚2次,每次50克;这些病人餐前血糖平均14mmol/L,餐后血糖平均21mmol/L,主诉头昏、耳鸣、胸闷、气短、失眠,每天3次服用降糖药二甲双胍片维持。食用效果见表1:

(2)2型糖尿病人使用效果:
2型糖尿病人肥胖患者60例(比本人标准体重肥胖25-40%),平均分为3组,每组20人,分别食用实施例9-11的纸上活体综合胚芽功能性微量激活源食品配方,每日早晚2次,每次50克;这些病人餐前平均血糖15mmol/L,餐后平均血糖21mmol/L,每天3次注射胰岛素,主诉头昏、耳鸣、胸闷、气短、失眠。食用效果见表2:

2型糖尿病患者90%呈肥胖状态,试验证明,2型糖尿病患者食用本发明的纸上活体综合胚芽功能性微量激活源食品配方具有减重作用,服用12个月后减重效果见表3:

Claims (10)
1.一种纸上活体综合胚芽功能性微量激活源,其特征在于以重量分数计,包括以下原料:小麦芽15-50份、豌豆芽15-50份、蚕豆芽10-30份、芸松芽10-30份,所述原料的种子芽长为3-5mm。
2.根据权利要求1所述的纸上活体综合胚芽功能性微量激活源,其特征在于所述小麦芽为20-45份。
3.根据权利要求1所述的纸上活体综合胚芽功能性微量激活源,其特征在于所述豌豆芽为20-45份。
4.根据权利要求1所述的纸上活体综合胚芽功能性微量激活源,其特征在于所述蚕豆芽为20-30份。
5.根据权利要求1所述的纸上活体综合胚芽功能性微量激活源,其特征在于所述芸松芽为10-30份。
6.根据权利要求1所述的纸上活体综合胚芽功能性微量激活源,其特征在于还可以加入萝卜芽10-30份。
7.根据权利要求1所述的纸上活体综合胚芽功能性微量激活源,其特征在于还可以加入花生芽5-10份。
8.根据权利要求1所述的纸上活体综合胚芽功能性微量激活源,其特征在于还可以加入苜蓿芽5-10份。
9.根据权利要求1所述的纸上活体综合胚芽功能性微量激活源,其特征在于还可以加入藜麦芽5-10份。
10.根据权利要求1所述纸上活体综合胚芽功能性微量激活源的制备方法,其特征在于依次包括如下步骤:
1)原料选种:选用纯天然非转基因植物种子;
2)浸种:把种子清选干净,用清水浸泡8-12小时,期间用清水淘洗2-3次;
3)发芽:将浸泡后的种子放到纸张上进行发芽;
4)包装:当70%以上种子发芽接近5mm时,将发芽的种子放入包装盒或塑料袋中;
5)将芽苗按配方共混,得到纸上活体综合胚芽功能性微量激活源。
