Abstract

本发明涉及一种黄精米酒及其制备方法,该黄精米酒由糯米、黄精、黄芪、葛根、木瓜、蒲公英、玉竹制备而成,制备方法为:先将中药组份烘干,再超微粉碎,与蒸熟的糯米、甜酒药曲加水混合,发酵30‑40h后保存2‑3周,经过滤,沉清,得到的黄精米酒色泽明亮、口感馨香,富含多种营养物质,具有养阴、润燥、清热、生津、抗疲劳、抗氧化、提高免疫力的功效,适用于各种成年人群。

一种黄精米酒及其制备方法
技术领域
本发明属于食品酿造技术领域,尤其是涉及一种黄精米酒及其制备方法。
背景技术
随着人们生活水平的提高,对生活质量的追求亦越来越高,养生保健酒日益受到人们的青睐。目前,我国养生保健酒类产品纷繁复杂,大多数均仅采用单味或多味中药材通过简单浸泡或酿制获得,产品质量及口感等均难保证。
中国专利“黄酒酿制方法”(申请号:200710020987.3)仅以黄精压榨的汁与渣为原料,和曲一起简单发酵蒸馏获得;专利“一种黄精酒制备方法”(申请号:200910185092.4)仅将单一黄精的酒精提取浓缩液与原酒浆密封陈酿获得;专利“一种保健黄酒及其制备方法”(申请号:201110098026.0)是以枸杞子、黄精等为原料,采用超临界CO2萃取或水提醇沉法或微波辅助提取技术得到的提取物与白酒勾兑而成;专利“一种发酵型黄精黄酒的生产方法”( 申请号:201210208654.4)是在发酵过程中加入黄精浆,添加一定量的柠檬酸和维生素C一起发酵而成。可见,上述黄精保健酒的生产方法是仅以一种黄精为原材料酿制或者几种药材材料与白酒简单浸泡而成。据了解,目前还没有以黄精为主药,结合保肝、生津、顺气、清热的中药材,与糯米饭、酒曲等一同酿制而制得的黄精保健酒。
发明内容
本发明的目的在于提供具有保健功能的黄精米酒,以提高人体抵抗力、改善生理机能。
本发明的另一个目的是提供该黄精米酒的制备方法,以促进原料中有效成分的溶出,提高黄精米酒的营养价值。
本发明的黄精米酒,由如下质量比的原料制备而成:
糯米600-800、黄精30-35、黄芪9-10、葛根6-8、木瓜8-12、蒲公英5-8、玉竹3-5。
本发明的黄精米酒的制备方法,包括如下步骤:
(1)原料准备:
将黄精、黄芪、葛根、木瓜、蒲公英、玉竹烘干,使其含水量在8%以下,取所述质量比的黄精、黄芪、葛根、木瓜、蒲公英、玉竹,用超微粉碎机破碎为350目的中药粉末,备用;将糯米高温蒸熟,冷却至30-35℃,备用;把糯米质量1%-2%的甜酒药曲粉碎,备用;
(1)酿造:
将中药粉末、蒸熟的糯米、甜酒药曲粉末混合,加入糯米质量50%-80%的水,搅拌均匀,置于容器内密封发酵,发酵温度控制在28-38℃,时间控制在30-40h,见容器边缘有液体溢出,且口感有甜味,即开封,在20-25℃下保存2-3周,经过滤,沉清,即可罐装制成黄精米酒。
本发明的有益效果:
本发明的黄精米酒由多种中药与糯米配合发酵而成,各味药将协同作用,药用价值极高,得到的黄精米酒色泽明亮、口感馨香,含有钾盐、苹果酸、柠檬酸、谷氨酸、丙氨酸、亚麻酸、棕榈酸、葡萄酸、VC、VE、VB12等多种维生素,并含有蛋白质、异黄酮、皂甙、苷、钙、铁、锌、硒多种成份和微量元素,具有养阴、润燥、清热、生津、抗疲劳、抗氧化、提高免疫力的功效,适用于各种成年人群。
具体实施方式
下面结合具体实施例对本发明做进一步的详细说明。
实施例1
按照如下步骤制备本发明黄精米酒:
(1)原料准备:
将黄精、黄芪、葛根、木瓜、蒲公英、玉竹烘干,使其含水量在8%以下,取黄精3.5kg、黄芪1kg、葛根0.8kg、木瓜1.2kg、蒲公英0.8kg、玉竹0.5kg,用超微粉碎机破碎为350目的中药粉末,备用;将80kg糯米高温蒸熟,冷却至35℃,备用;把糯米质量0.8kg的甜酒药曲粉碎,备用;
(2)酿造:
将中药粉末、蒸熟的糯米、甜酒药曲粉末混合,加入64kg的水,搅拌均匀,置于容器内密封发酵,发酵温度控制在38℃,时间控制在40h,见容器边缘有液体溢出,且口感有甜味,即开封,在25℃下保存3周,经过滤,沉清,即可罐装制成黄精米酒。

Claims (2)

1.一种黄精米酒,其特征在于,由如下质量比的原料制备而成:
糯米600-800、黄精30-35、黄芪9-10、葛根6-8、木瓜8-12、蒲公英5-8、玉竹3-5。
2.如权利要求1所述的糯米黄精米酒的制备方法,包括如下步骤:
原料准备:
将黄精、黄芪、葛根、木瓜、蒲公英、玉竹烘干,使其含水量在8%以下,取所述质量比的黄精、黄芪、葛根、木瓜、蒲公英、玉竹,用超微粉碎机破碎为350目的中药粉末,备用;将糯米高温蒸熟,冷却至30-35℃,备用;把糯米质量1%-2%的甜酒药曲粉碎,备用;
(2)酿造:
将中药粉末、蒸熟的糯米、甜酒药曲粉末混合,加入糯米质量50%-80%的水,搅拌均匀,置于容器内密封发酵,发酵温度控制在28-38℃,时间控制在30-40h,见容器边缘有液体溢出,且口感有甜味,即开封,在20-25℃下保存2-3周,经过滤,沉清,即可罐装制成黄精米酒。
