Abstract
本发明公开了一种复合发酵型鸭梨保健酒的生产工艺,该发明选用鸭梨、麸皮、枸杞、山楂、山药、何首乌、甜叶菊、菟丝子、刺五加、党参、茯苓、五味子、甘草为原料通过复合发酵生产工艺生产鸭梨保健酒,该产品酒质温和爽口、风味独特,营养价值高,基本保持鸭梨中的天然营养成分,且富含人体所需的鸭梨多糖、多肽、多种氨基酸、维生素及矿物质。鸭梨保健酒的产品具有滋肺润心、哮喘止咳、解酒护肝、延缓衰老、养颜美容、增强机体免疫功能等功效;本发明的转化应用不仅可以改变酒类消费结果,满足人民群众对健康保健食品的需求,有益于国民健康,而且可以高值化充分利用鸭梨资源,实现鸭梨资源的高值化利用。

技术领域
本发明涉及一种复合发酵型鸭梨保健酒及其生产工艺,属于保健食品领域。
背景技术
阳信鸭梨,产于山东省阳信县,栽培历史悠久,唐、明时即有大面积栽培,现有梨园20万亩,被誉为“鸭梨之乡”,阳信鸭梨在全国展评中屡屡盖压群芳,蝉联桂冠。阳信鸭梨个大,平均单果重175克,外形美观,呈倒卵形,因梨梗基部突起状似鸭头而得名,初采为黄绿色,贮藏后通体金黄,鸭梨皮薄核小,汁多无渣,香味浓郁,清脆爽口,酸甜适度,风味独特,含糖量高达12%,素有“天生甘露”之称,富含糖、维生素C、钙、磷、铁等营养成分,以其品质优良而驰名中外。
阳信鸭梨,含糖一般在10-13%,并含有果酸、蛋白质、脂肪、多种维生素、矿物质和碳水化合物,具有清肺、化痰、润早、利便之功效,对咳喘病、高血压等病症有辅助治疗作用,堪称果中佳品。据我国药典<本草从新>中说,鸭梨“性甘寒微酸”,具有“清心肺、利肠、止咳消痰、清喉降火,醒酒解毒”之功效。<本草纲目>把鸭梨的功能注定为:“生者清六腑之热,熟者滋五脏之阴”。
近些年鸭梨种植在鲁西北地区得到快速发展,但由于鸭梨保鲜时间较短,目前仍以鲜食为主。近几年鸭梨的短期化使得鸭梨价格不断下降,冬季大量鸭梨腐烂,严重的挫伤了果农的种植积极性,使我国的鸭梨产业面临不断萎缩的风险。虽然我国的鸭梨保鲜技术取得了一定的成效并应用于实践,但长时间保存成本昂贵,难以适应鸭梨产业化发展的需求,因此开发鸭梨保健食品的开发成为我国鸭梨产业发展的主题,而营养保健的鸭梨保健酒的研制开发是发展的重点领域之一。
中草药是我国传统文化的瑰宝,有多种药食同源的中草药在保健酒领域具有广阔的应用价值。其中枸杞是我国保健领域最具应用价值和应用前景的中草药,目前枸杞主要的药用种类为宁夏枸杞(Lycium barbarum L.),枸杞全身是宝,据李时珍《本草纲目》记载“枸杞,补肾生精,养肝,明目,坚精骨,去疲劳,易颜色,变白,明目安神,令人长寿”。其富含多种活性物质,枸杞多糖(LBP)为其主要活性成分之一,具有增加白细胞活性、促进肝细胞新生、有免疫调节、抗肿瘤、保肝、降压、降血糖 抗衰老等多种作用。
本发明以鸭梨为组方基础,配伍枸杞、山楂、山药等中草药,辅以麸皮,利用高活性酿酒酵母与具有保健治疗作用的中药进行复合型发酵,制备一种全新的具有鸭梨和中草药双重健康作用的保健酒,拓展了中草药保健酒的应用途径,既保持了酒的醇香,又保留了鸭梨、枸杞等物质的医学保健作用;产品营养丰富又方便食用,醇味飘香、风味独特,是一种很有特色的中草药保健酒,适合多种人群食用。
发明内容
本发明的目的在于提供一种复合发酵型鸭梨保健酒及其生产工艺,该发明选用鸭梨、枸杞、山楂、山药、麸皮为原料通过复合发酵生产工艺生产鸭梨保健酒,该产品酒质温和爽口、风味独特,营养价值高,基本保持鸭梨中的天然营养成分,且富含人体所需的鸭梨多糖、多肽、多种氨基酸、维生素及矿物质。
为实现上述目的,本发明所采用的技术方案是:
本发明提供一种复合发酵型鸭梨保健酒,其特征在于发酵原料的组成为:鸭梨45~55份、麸皮12~18份、枸杞8~12份、山楂8~12份、山药4~6份、何首乌4~6份、甜叶菊4~6份、菟丝子2~4份、刺五加1~3份、党参1~3份、茯苓1份、五味子1份、甘草1份。
所述原料中鸭梨的处理方法如下:鸭梨洗净后切块,然后打浆,过滤,分离果渣和果汁,果汁中加入质量比1~2%果胶酶,在40~50℃条件下酶解30~60min;
所述原料中枸杞、山楂、山药的处理方法如下:取上述原料混合,加入质量比2~3倍的水,放入75℃水浴中浸泡1~2h,打浆,加入质量比1~2%果胶酶,在40~50℃条件下酶解30~60min。
所述原料中何首乌、甜叶菊、菟丝子、刺五加、党参、茯苓、五味子、甘草的处理方法如下:将上述中草药清洗去除杂质,粉碎后过80目筛,加入3~5倍纯净水,在超声波辅助条件下浸提30~60min,浸提温度50~60℃。
所述原料中麸皮的处理方法如下:将麸皮粉碎后过40目筛,用水冲洗去除植酸,与鸭梨果渣混合,加入质量比1~2倍纯净水,蒸煮30min;然后加入3~5倍纯净水,调整小麦麸皮悬浮液的pH至5.5~7.5,加入小麦麸皮质量比3~5%α~淀粉酶、2~3%纤维素酶、1~2%木聚糖酶,在超声波辅助作用下酶解,酶解温度70~80℃,超声功率300W,期间采用搅拌机匀速搅拌,利用碘液检查至淀粉完全水解为止;调整悬浮液的pH至8.0~9.0,加入麸皮质量比2~3%的碱性蛋白酶,在超声波辅助作用下酶解,酶解温度50~60℃,超声功率300W,期间采用搅拌机匀速搅拌,酶解时间为60~90min。
本发明提供一种复合发酵型鸭梨保健酒的生产工艺,其特征在于具备包括以下步骤:
(1)发酵液制备:将上述原料混合后,加入发酵液质量比0.15~0.20% (NH4)2SO4、0.10~0.15% KH2PO4、0.1%MgSO4;
(2)酒精发酵:向发酵液中加入活化后的干酵母,接种量为6~10%;在26~28℃条件下控温发酵,发酵时间为24~36h;
(3)过滤:发酵结束后通过粗过滤法实现渣液分离;
(4)陈酿:为促进酒体的稳定和澄清,在0~10℃条件下陈酿10~20d;
(5)复配:调整鸭梨保健酒的酒精体积浓度8~10%,加入1~1.5g/L木糖醇、1~2g/L低聚异麦芽糖、5~10g/L柠檬酸、5~10g/L乳酸钙、3~5g/L蔗糖;
(6)膜过滤:用孔径为0.15μm的微孔膜过滤鸭梨保健酒;
(7)无菌灌装:在无菌灌装生产线中灌装封口制得复合发酵型鸭梨保健酒。
本发明提供一种复合发酵型鸭梨保健酒及其生产工艺,其中鸭梨保健酒的产品特征在于鸭梨保健酒的酒精体积浓度为8~10%, 含糖量≤4 g/L, 总酸( 以苹果酸计)8~10 g/L, 挥发酸( 以乙酸计)< 1.1 g/L,干浸出物≥19.2g/L:复合发酵型鸭梨保健酒独具浓郁自然的鸭梨味,释放天然营养于唇齿之间,色泽为琥珀色、晶莹透明、入口绵软淳厚,舒适爽口,诸味协调,不仅保留了鸭梨原有的营养及药用价值,而且通过与枸杞、麸皮、山楂、山药等中草药的协同作用,更易于人体吸收。
本发明提供一种复合发酵型鸭梨保健酒及其生产工艺,其中鸭梨保健酒的产品具有滋肺润心、哮喘止咳、解酒护肝、延缓衰老、养颜美容、增强机体免疫功能、补气养血、降血糖降血脂、安神助眠、抗肿瘤等功效;本发明的转化应用不仅可以改变酒类消费结果,满足人民群众对健康保健食品的需求,有益于国民健康,而且可以高值化充分利用给海洋环境带来严重污染的鸭梨资源,实现鸭梨资源的高值化利用。
本发明提供一种复合发酵型鸭梨保健酒及其生产工艺,其优势在于:一是复合发酵中加入鸭梨和麸皮,不仅保证了发酵液中富含鸭梨中的多糖、果酸、蛋白质、脂肪、多种维生素等营养物质,而且使鸭梨保健酒中富含具有降血脂降血压、减肥等多种功效的水溶性膳食纤维、阿魏酸、低聚木聚糖等营养成分;二是采用超声波辅助提取的工艺提取何首乌、甜叶菊、菟丝子、刺五加、党参、茯苓、五味子、甘草等中草药中的多糖、皂甙、黄酮、生物碱等生物活性物质,提升了中草药活性物质的提取率,提高了鸭梨保健酒的营养价值;三是采用复合发酵工艺,相比保健酒勾兑生产工艺更具优势,产品口味及营养水平更高;四是采用微孔膜过滤的生产工艺,除菌、除杂效果好,产品澄清度高,灭菌效果彻底,替代了传统的巴氏灭菌法,产品中营养成本损失小。
本发明提供一种复合发酵型鸭梨保健酒及其生产工艺,取得了预料不到的技术效果。一是发酵保健酒原料中加入鸭梨、麸皮、枸杞、山楂、何首乌、甜叶菊、菟丝子、刺五加、党参、茯苓、五味子、甘草,不同的中草药性味各异,功效存在着巨大的差异,不同的中草药组合后存在复杂的相互作用关系,且中草药之间的配比比较密切,不同配比也将使君臣佐使关系发生实质性的变化,从而使复合中草药的关系发生实质性改变。本申请麸皮与中草药的加入与鸭梨通过彼此间存在复杂的相互作用关系,通过合理配比,使复合发酵型鸭梨保健酒的关系发生实质性改变,检测结果表明同样工艺条件下,单纯鸭梨保健酒的总抗氧化能力为192.36±9.25U/mL,而本申请复合发酵型鸭梨保健酒的总抗氧化能力达到263.57±11.37U/mL,取得了预料不到的技术效果,改变中草药原料组成会显著降低保健酒的总抗氧化能力;(2)发酵原料采用了超声波辅助浸提和酶解工艺,且在发酵基质中添加了(NH4)2SO4、KH2PO4、MgSO4等能够促进酵母繁殖的无机盐促生长因子,加速酵母在发酵基质中的代谢过程,降解发酵浆液中的多糖、膳食纤维等,丰富鸭梨发酵饮料中的功能性多糖、寡糖、可溶性膳食纤维等功能活性物质,使得鸭梨发酵保健酒中皂甙提取率达到92.5%、功能性多糖提取率达到91.57%,可溶性膳食纤维含量增加27.24%;(3)膜过滤后直接无菌灌装工艺也能减少高温对多糖、皂甙等功能活性物质的损失,本申请中的复合发酵型鸭梨保健酒中的干浸出物≥19.2g/L,显著高于一般保健酒中干浸出物含量(12-15g/L)。
具体实施方式
实施例1:
一种复合发酵型鸭梨保健酒的生产工艺,具备包括以下步骤:
(1)备料:按鸭梨50份、麸皮15份、枸杞10份、山楂10份、山药5份、何首乌5份、甜叶菊5份、菟丝子3份、刺五加2份、党参2份、茯苓1份、五味子1份、甘草1份比例备料;
(2)原料预处理,根据原料不同的属性分别处理原料:
①所述原料中鸭梨的处理方法如下:鸭梨洗净后切块,然后打浆,过滤,分离果渣和果汁,果汁中加入质量比1.5%果胶酶,在40~50℃条件下酶解45min;
②所述原料中枸杞、山楂、山药的处理方法如下:取上述原料混合,加入质量比2.5倍的水,放入75℃水浴中浸泡1.5h,打浆,加入质量比1~2%果胶酶,在40~50℃条件下酶解30~60min;
③所述原料中何首乌、甜叶菊、菟丝子、刺五加、党参、茯苓、五味子、甘草的处理方法如下:将上述中草药清洗去除杂质,粉碎后过80目筛,加入4倍纯净水,在超声波辅助条件下浸提45min,浸提温度50~60℃;
④所述原料中麸皮的处理方法如下:将麸皮粉碎后过40目筛,用水冲洗去除植酸,与鸭梨果渣混合,加入质量比1.5倍纯净水,蒸煮30min;然后加入4倍纯净水,调整小麦麸皮悬浮液的pH至5.5~7.5,加入小麦麸皮质量比4%α~淀粉酶、2.5%纤维素酶、1.5%木聚糖酶,在超声波辅助作用下酶解,酶解温度70~80℃,超声功率300W,期间采用搅拌机匀速搅拌,利用碘液检查至淀粉完全水解为止;调整悬浮液的pH至8.0~9.0,加入麸皮质量比2.5%的碱性蛋白酶,在超声波辅助作用下酶解,酶解温度50~60℃,超声功率300W,期间采用搅拌机匀速搅拌,酶解时间为60~90min;
(3)发酵液制备:将上述原料混合后,加入发酵液质量比0.18% (NH4)2SO4、0.12% KH2PO4、0.1%MgSO4;
(4)酒精发酵:向发酵液中加入活化后的干酵母,接种量为8%;在26~28℃条件下控温发酵,发酵时间为30h;
(5)过滤:发酵结束后通过粗过滤法实现渣液分离;
(6)陈酿:为促进酒体的稳定和澄清,在0~10℃条件下陈酿15d;
(7)复配:调整鸭梨保健酒的酒精体积浓度8~10%,加入1.2g/L木糖醇、1.5g/L低聚异麦芽糖、7.5g/L柠檬酸、7.5g/L乳酸钙、4g/L蔗糖;
(8)膜过滤:用孔径为0.15μm的微孔膜过滤鸭梨保健酒;
(9)无菌灌装:在无菌灌装生产线中灌装封口制得复合发酵型鸭梨保健酒。
实施例2:
一种复合发酵型鸭梨保健酒的生产工艺,具备包括以下步骤:
(1)备料:按鸭梨55份、麸皮12份、枸杞12份、山楂8份、山药6份、何首乌4份、甜叶菊6份、菟丝子2份、刺五加3份、党参1份、茯苓1份、五味子1份、甘草1份比例备料;
(2)原料预处理,根据原料不同的属性分别处理原料:
①所述原料中鸭梨的处理方法如下:鸭梨洗净后切块,然后打浆,过滤,分离果渣和果汁,果汁中加入质量比2%果胶酶,在40~50℃条件下酶解30min;

(3)发酵液制备:将上述原料混合后,加入发酵液质量比0.20% (NH4)2SO4、0.15% KH2PO4、0.1%MgSO4;
(4)酒精发酵:向发酵液中加入活化后的干酵母,接种量为10%;在26~28℃条件下控温发酵,发酵时间为24h;
(5)过滤:发酵结束后通过粗过滤法实现渣液分离;
(6)陈酿:为促进酒体的稳定和澄清,在0~10℃条件下陈酿20d;
(7)复配:调整鸭梨保健酒的酒精体积浓度8~10%,加入1.5g/L木糖醇、2g/L低聚异麦芽糖、10g/L柠檬酸、10g/L乳酸钙、5g/L蔗糖;
(8)膜过滤:用孔径为0.15μm的微孔膜过滤鸭梨保健酒;
(9)无菌灌装:在无菌灌装生产线中灌装封口制得复合发酵型鸭梨保健酒。
实施例3:
一种复合发酵型鸭梨保健酒的生产工艺,具备包括以下步骤:
(1)备料:按鸭梨45份、麸皮18份、枸杞8份、山楂12份、山药4份、何首乌6份、甜叶菊4份、菟丝子4份、刺五加1份、党参3份、茯苓1份、五味子1份、甘草1份比例备料;
(2)原料预处理,根据原料不同的属性分别处理原料:
①所述原料中鸭梨的处理方法如下:鸭梨洗净后切块,然后打浆,过滤,分离果渣和果汁,果汁中加入质量比1%果胶酶,在40~50℃条件下酶解60min;
②所述原料中枸杞、山楂、山药的处理方法如下:取上述原料混合,加入质量比2~3倍的水,放入75℃水浴中浸泡1~2h,打浆,加入质量比1~2%果胶酶,在40~50℃条件下酶解30~60min;
③所述原料中何首乌、甜叶菊、菟丝子、刺五加、党参、茯苓、五味子、甘草的处理方法如下:将上述中草药清洗去除杂质,粉碎后过80目筛,加入3倍纯净水,在超声波辅助条件下浸提60min,浸提温度50~60℃;
④所述原料中麸皮的处理方法如下:将麸皮粉碎后过40目筛,用水冲洗去除植酸,与鸭梨果渣混合,加入质量比1倍纯净水,蒸煮30min;然后加入3倍纯净水,调整小麦麸皮悬浮液的pH至5.5~7.5,加入小麦麸皮质量比3%α~淀粉酶、2%纤维素酶、1%木聚糖酶,在超声波辅助作用下酶解,酶解温度70~80℃,超声功率300W,期间采用搅拌机匀速搅拌,利用碘液检查至淀粉完全水解为止;调整悬浮液的pH至8.0~9.0,加入麸皮质量比2%的碱性蛋白酶,在超声波辅助作用下酶解,酶解温度50~60℃,超声功率300W,期间采用搅拌机匀速搅拌,酶解时间为90min;
(3)发酵液制备:将上述原料混合后,加入发酵液质量比0.15~0.20% (NH4)2SO4、0.10~0.15% KH2PO4、0.1%MgSO4;
(4)酒精发酵:向发酵液中加入活化后的干酵母,接种量为6%;在26~28℃条件下控温发酵,发酵时间为36h;
(5)过滤:发酵结束后通过粗过滤法实现渣液分离;
(6)陈酿:为促进酒体的稳定和澄清,在0~10℃条件下陈酿10d;
(7)复配:调整鸭梨保健酒的酒精体积浓度8~10%,加入1g/L木糖醇、1g/L低聚异麦芽糖、5g/L柠檬酸、5g/L乳酸钙、3g/L蔗糖;
(8)膜过滤:用孔径为0.15μm的微孔膜过滤鸭梨保健酒;
(9)无菌灌装:在无菌灌装生产线中灌装封口制得复合发酵型鸭梨保健酒。
以上实施例仅用于说明本发明的技术方案,而非对其进行限制;尽管参照前述实施例对被发明进行了详细的说明,但对于本领域的普通技术人员来说,依然可以对前述实施例所记载的技术方案进行修改,或者对其中部分技术特征进行等同替换;而对这些修改或者替换,并不使相应技术方案的本质脱离本发明所要求保护的技术方案的精神和范围。
Claims (1)
1.一种复合发酵型鸭梨保健酒,其特征在于生产工艺具备包括以下步骤:
(1)备料:按鸭梨45~55份、麸皮12~18份、枸杞8~12份、山楂8~12份、山药4~6份、何首乌4~6份、甜叶菊4~6份、菟丝子2~4份、刺五加1~3份、党参1~3份、茯苓1份、五味子1份、甘草1份比例备料;
(2)原料预处理,根据原料不同的属性分别处理原料:
①所述原料中鸭梨的处理方法如下:鸭梨洗净后切块,然后打浆,过滤,分离果渣和果汁,果汁中加入质量比1~2%果胶酶,在40~50℃条件下酶解30~60min;
②所述原料中枸杞、山楂、山药的处理方法如下:取上述原料混合,加入质量比2~3倍的水,放入75℃水浴中浸泡1~2h,打浆,加入质量比1~2%果胶酶,在40~50℃条件下酶解30~60min;
③所述原料中何首乌、甜叶菊、菟丝子、刺五加、党参、茯苓、五味子、甘草的处理方法如下:将上述中草药清洗去除杂质,粉碎后过80目筛,加入3~5倍纯净水,在超声波辅助条件下浸提30~60min,浸提温度50~60℃;
④所述原料中麸皮的处理方法如下:将麸皮粉碎后过40目筛,用水冲洗去除植酸,与鸭梨果渣混合,加入质量比1~2倍纯净水,蒸煮30min;然后加入3~5倍纯净水,调整小麦麸皮悬浮液的pH至5.5~7.5,加入小麦麸皮质量比3~5%α~淀粉酶、2~3%纤维素酶、1~2%木聚糖酶,在超声波辅助作用下酶解,酶解温度70~80℃,超声功率300W,期间采用搅拌机匀速搅拌,利用碘液检查至淀粉完全水解为止;调整悬浮液的pH至8.0~9.0,加入麸皮质量比2~3%的碱性蛋白酶,在超声波辅助作用下酶解,酶解温度50~60℃,超声功率300W,期间采用搅拌机匀速搅拌,酶解时间为60~90min;
(3)发酵液制备:将上述原料混合后,加入发酵液质量比0.15~0.20% (NH4)2SO4、0.10~0.15% KH2PO4、0.1%MgSO4;
(4)酒精发酵:向发酵液中加入活化后的干酵母,接种量为6~10%;在26~28℃条件下控温发酵,发酵时间为24~36h;
(5)过滤:发酵结束后通过粗过滤法实现渣液分离;
(6)陈酿:为促进酒体的稳定和澄清,在0~10℃条件下陈酿10~20d;
(7)复配:调整鸭梨保健酒的酒精体积浓度8~10%,加入1~1.5g/L木糖醇、1~2g/L低聚异麦芽糖、5~10g/L柠檬酸、5~10g/L乳酸钙、3~5g/L蔗糖;
(8)膜过滤:用孔径为0.15μm的微孔膜过滤鸭梨保健酒;
(9)无菌灌装:在无菌灌装生产线中灌装封口制得复合发酵型鸭梨保健酒。
