本发明选择的中草药主要有杜仲、巴戟天、山药、桑葚、枸杞等。各中草药的简介如下:
杜仲在我国不仅资源丰富,而且是我国特有的名贵中药,能强筋骨、补骨肾、安胎、降血压。在《神农本草经》中列为上品,并云:主腰脊痛,补中、坚筋骨、强志久服轻身耐老。科学家们也发现,它含有黄酮类、苷类、酚类多种生物活性物质,能促进机体代谢,增强细胞活力,抗衰老、抗疲劳作用显著。
巴戟天,茜草科多年生攀援木质藤本植物,根据李时珍的《本草纲目》及其他经典文献记载:巴戟天药性温补、口味甘甜,具有补肾壮阳、强筋健骨、补中益气、祛风湿等功效,主要治疗四肢无力、手脚酸软、肾虚尿频、虚劳腰痛、气喘内伤等症,是我国一种常用而古老的名贵中药材。
山药为薯蓣科植物薯蓣的块根,是人们喜的蔬菜,又是常用中药材,不仅含有多种常见的营养成分,还富含多种必需氨基酸、维生素、微量元素及多糖、皂甙元、黄酮、尿囊素等活性保健成分,具有健脾补肺,固肾益精,聪耳明目,长志安神,延年益寿的作用。最新研究表明山药含有大量粘蛋白,可以预防动脉硬化;可以诱导产生干扰素,增强人体免疫力;含有的胆碱和卵磷脂有助于提高人的记忆力,近年来在保健食品中的应用愈来愈加广泛。
枸杞是我国保健领域最具应用价值和应用前景的中草药,目前枸杞主要的药用种类为宁夏枸杞(Lycium barbarum L.),枸杞全身是宝,据李时珍《本草纲目》记载“枸杞,补肾生精,养肝,明目,坚精骨,去疲劳,易颜色,变白,明目安神,令人长寿”。其富含多种活性物质,枸杞多糖(LBP)为其主要活性成分之一,具有增加白细胞活性、促进肝细胞新生、有免疫调节、抗肿瘤、保肝、降压、降血糖 抗衰老等多种作用。
桑葚又名桑果、桑子,为多年生木本植物桑的果穗,在我国从南到北种植的地域分布都很广泛。桑葚营养丰富,还具有良好的医疗保健价值。桑葚中含水分 84.71%,粗蛋白 0.36%,转化糖 9.16%,灰分0.66%,粗纤维 0.91%,另外还含苹果酸,VB1,VB2,硫胺素,核黄素,抗坏血酸和胡萝卜素等。据许多医药史书记载,桑葚味甘、性寒,具有生津止渴,补肝益肾,熄风滋液,黑发明目,利关节,解酒和祛病延年的功效。现代医学对桑葚进行药理、毒理测试的结果也表明,它能提高动物体内酶的活性,抑制有害物质的生成,增强抵抗能力,延缓或防止疾病的生成,以及提高肌体的免疫功能等。桑葚已被卫生部列为“既是食品又是药品”的农产品之一。
发明内容
本发明的目的在于提供一种以杜仲、巴戟天、山药、桑葚、枸杞为原料的复合发酵中草药保健酒,该酒酒色棕黄泛红,液体清亮,酒感醇香,发酵酒果药味香郁,营养保健价值极佳,基本保持杜仲、巴戟天、山药、枸杞、桑葚中的天然营养成分,并在酿造过程中产生多糖、蛋白质、多肽、人体必需氨基酸等各种营养成分,合理饮用具有强筋健骨、固肾益精、健脾补肝、增强机体免疫力、抗疲劳、降血压、降血脂、聪耳明目、祛病延年等功效。
为实现上述目的,本发明采用的技术方案如下。
本发明提供一种杜仲巴戟天山药桑葚枸杞复合发酵中草药保健酒,其特征在于:以杜仲、巴戟天、山药、桑葚、枸杞等为原料,利用高活性酿酒酵母厌氧发酵复方中草药复合发酵液制得。
上述的复方中草药复合发酵液,是由杜仲提取液、巴戟天提取液、山药汁、桑葚汁、枸杞汁混合而成,各组分所占比例为:杜仲提取液20~30%,巴戟天提取液10~20%,山药汁25~35%,桑葚汁15~21%,枸杞汁10~14%。
本发明提供一种杜仲巴戟天山药桑葚枸杞复合发酵中草药保健酒,是按如下方法制备的:将杜仲提取液、巴戟天提取液、山药汁、桑葚汁、枸杞汁按上述比例混合调配,加入一定比例的糖调整发酵液总糖含量12%左右,并添加0.15% (NH4)2SO4、0.15% KH2PO4、0.1%MgSO4;加入活化后的酿酒酵母,接种量为6~10%;在缓慢搅拌条件下控温厌氧发酵,发酵温度控制在26~28℃,发酵时间为48~72h;发酵结束后通过硅藻土过滤机过滤实现渣液分离;为促进酒体的稳定和澄清,将酒液置于0~10℃条件下陈酿20~30天;调整复合发酵保健酒的酒精度10%~12%/(v/v),加入2~3g/L柠檬酸、3~5g/L木糖醇、5~10g/L维生素C、5~10g/L蔗糖、10~20g/L蜂蜜;用孔径为0.15μm的微孔膜过滤复合发酵保健酒;在无菌灌装生产线中灌装封口制得发酵中草药保健酒。
所述的杜仲提取液和巴戟天提取液按如下方法制备:将粉碎后的杜仲和巴戟天干品分别浸于pH为7.5~8.0(用Na2CO3调节)的纯净水中,料液比为1:3~5;在超声波辅助条件下浸提20~30min,浸提温度60~70℃,浸提结束后即得到杜仲提取液和巴戟天提取液。
所述的山药汁按如下的方法制备:新鲜山药后洗净切片,迅速放入含有0.5%柠檬酸和1%维生素C的沸水中热烫5min,然后将山药片匀浆,将匀浆后的山药汁在95℃下糊化15min,加热采用蒸煮法90℃左右,糊化后即得山药汁。
所述的桑葚汁、山楂汁按如下的方法制备:称取一定量的桑葚或山楂,加10倍的水,放入75℃水浴中浸泡2~3h,然后打浆。
本发明提供一种杜仲巴戟天山药桑葚枸杞复合发酵中草药保健酒,所选用的发酵酵母是市售安琪牌酿酒活性干酵母。
本发明提供一种杜仲巴戟天山药桑葚枸杞复合发酵中草药保健酒,该酒酒色棕黄泛红,液体清亮,无悬浮物和沉淀物;酒感醇香,发酵酒果药味香郁,入口绵软淳厚,舒适爽口,诸味协调。营养保健价值极佳,基本保持杜仲、巴戟天、山药、桑葚和枸杞等中草药中的天然营养成分,并在酿造过程中产生多糖、蛋白质、多肽、人体必需氨基酸等各种营养成分,合理饮用具有强筋健骨、固肾益精、健脾补肝、增强机体免疫力、抗疲劳、降血压、降血脂、聪耳明目、祛病延年等功效。
本发明提供一种杜仲巴戟天山药桑葚枸杞复合发酵中草药保健酒,产品特征在于复方中草药发酵保健酒的酒度为10%~12%/(v/v), 含糖量≤20g/L, 总酸( 以苹果酸计)8~10 g/L, 挥发酸( 以乙酸计)< 1.2 g/L,干浸出物≥18g/L,微生物指标符合国家相关规定。
本发明提供一种杜仲巴戟天山药桑葚枸杞复合发酵中草药保健酒,其优势在于:一是采用超声波辅助提取工艺,且通过微生物发酵作用,提升了活性物质的提取率,提高了发酵中草药保健酒的营养价值;二是采用杜仲提取液、巴戟天提取液、山药汁、桑葚汁和枸杞汁复合发酵,既保证了初始发酵液中的糖含量,又提高了发酵中草药保健酒的营养水平;三是采用复合发酵工艺,相比保健酒勾兑生产工艺更具优势,基本保持杜仲、巴戟天、山药、桑葚、枸杞等中草药中的天然营养成分,并在酿造过程中产生多糖、蛋白质、多肽、人体必需氨基酸等各种营养成分;四是采用微孔膜过滤的生产工艺,除菌、除杂效果好,产品澄清度高,灭菌效果彻底,替代了传统的巴氏灭菌法,产品中营养成分损失小。
具体实施方式
实施例1:
一种杜仲巴戟天山药桑葚枸杞复合发酵中草药保健酒,其具体的生产工艺如下:
1)杜仲提取液和巴戟天提取液制备:将粉碎后的杜仲和巴戟天干品分别浸于pH为7.5~8.0(用Na2CO3调节)的纯净水中,料液比为1:5;在超声波辅助条件下浸提20~30min,浸提温度60~70℃,浸提结束后即得到杜仲提取液和巴戟天提取液;
2)桑葚汁、枸杞制备:称取一定量的桑葚或枸杞,加10倍的水,放入75℃水浴中浸泡2~3h,然后打浆;
3)山药汁制备:新鲜山药后洗净切片,迅速放入含有0.5%柠檬酸和1%维生素C的沸水中热烫5min,然后将山药片匀浆,将匀浆后的山药汁在95℃下糊化15min,加热采用蒸煮法90℃左右,糊化后即得山药汁;
4)复合发酵液调配:将杜仲提取液、巴戟天提取液、山药汁、桑葚汁、枸杞汁按照30%、10%、35%、15%、10%的比例混合调配,添加0.15% (NH4)2SO4、0.15% KH2PO4、0.1%MgSO4,调整总糖含量至12%;
5)加入发酵剂:加入活化后的干酵母,接种量为10%;
6)发酵:在缓慢搅拌条件下控温发酵,发酵温度控制在26~28℃,发酵时间为48h;
7)渣液分离:发酵结束后通过硅藻土过滤机过滤实现渣液分离;
8)陈酿:将酒液置于0~10℃条件下陈酿20~30天;
9)调配:调整绞股蓝保健酒的酒精度10%~12%/(v/v),按以下比例加入2g/L柠檬酸、5g/L木糖醇、5g/L维生素C、10g/L蔗糖、10g/L蜂蜜;
10)微孔膜过滤:用孔径为0.15μm的微孔膜过滤绞股蓝保健酒;
11)无菌灌装封口:在无菌灌装生产线中灌装封口。
实施例2:
一种杜仲巴戟天山药桑葚枸杞复合发酵中草药保健酒,其具体的生产工艺如下:
1)杜仲提取液和巴戟天提取液制备:将粉碎后的杜仲和巴戟天干品分别浸于pH为7.5~8.0(用Na2CO3调节)的纯净水中,料液比为1:4;在超声波辅助条件下浸提20~30min,浸提温度60~70℃,浸提结束后即得到杜仲提取液和巴戟天提取液;
2)桑葚汁、枸杞制备:称取一定量的桑葚或枸杞,加10倍的水,放入75℃水浴中浸泡2~3h,然后打浆;
3)山药汁制备:新鲜山药后洗净切片,迅速放入含有0.5%柠檬酸和1%维生素C的沸水中热烫5min,然后将山药片匀浆,将匀浆后的山药汁在95℃下糊化15min,加热采用蒸煮法90℃左右,糊化后即得山药汁;
4)复合发酵液调配:将杜仲提取液、巴戟天提取液、山药汁、桑葚汁、枸杞汁按照20%、20%、25%、21%、14%的比例混合调配,添加0.15% (NH4)2SO4、0.15% KH2PO4、0.1%MgSO4,调整总糖含量至12%;
5)加入发酵剂:加入活化后的干酵母,接种量为8%;
6)发酵:在缓慢搅拌条件下控温发酵,发酵温度控制在26~28℃,发酵时间为60h;
7)渣液分离:发酵结束后通过硅藻土过滤机过滤实现渣液分离;
8)陈酿:将酒液置于0~10℃条件下陈酿20~30天;
9)调配:调整绞股蓝保健酒的酒精度10%~12%/(v/v),按以下比例加入3g/L柠檬酸、3g/L木糖醇、10g/L维生素C、5g/L蔗糖、20g/L蜂蜜;
10)微孔膜过滤:用孔径为0.15μm的微孔膜过滤绞股蓝保健酒;
11)无菌灌装封口:在无菌灌装生产线中灌装封口。
实施例3:
一种杜仲巴戟天山药桑葚枸杞复合发酵中草药保健酒,其具体的生产工艺如下:
1)杜仲提取液和巴戟天提取液制备:将粉碎后的杜仲和巴戟天干品分别浸于pH为7.5~8.0(用Na2CO3调节)的纯净水中,料液比为1:3;在超声波辅助条件下浸提20~30min,浸提温度60~70℃,浸提结束后即得到杜仲提取液和巴戟天提取液;
2)桑葚汁、枸杞制备:称取一定量的桑葚或枸杞,加10倍的水,放入75℃水浴中浸泡2~3h,然后打浆;
3)山药汁制备:新鲜山药后洗净切片,迅速放入含有0.5%柠檬酸和1%维生素C的沸水中热烫5min,然后将山药片匀浆,将匀浆后的山药汁在95℃下糊化15min,加热采用蒸煮法90℃左右,糊化后即得山药汁;
4)复合发酵液调配:将杜仲提取液、巴戟天提取液、山药汁、桑葚汁、枸杞汁按照25%、15%、30%、18%、12%的比例混合调配,添加0.15% (NH4)2SO4、0.15% KH2PO4、0.1%MgSO4,调整总糖含量至12%;
5)加入发酵剂:加入活化后的干酵母,接种量为6%;
6)发酵:在缓慢搅拌条件下控温发酵,发酵温度控制在26~28℃,发酵时间为72h;
7)渣液分离:发酵结束后通过硅藻土过滤机过滤实现渣液分离;
8)陈酿:将酒液置于0~10℃条件下陈酿20~30天;
9)调配:调整绞股蓝保健酒的酒精度10%~12%/(v/v),按以下比例加入2.5g/L柠檬酸、4g/L木糖醇、7.5g/L维生素C、7.5g/L蔗糖、15g/L蜂蜜;
10)微孔膜过滤:用孔径为0.15μm的微孔膜过滤绞股蓝保健酒;
11)无菌灌装封口:在无菌灌装生产线中灌装封口。
以上实施例仅用于说明本发明的技术方案,而非对其进行限制;尽管参照前述实施例对被发明进行了详细的说明,但对于本领域的普通技术人员来说,依然可以对前述实施例所记载的技术方案进行修改,或者对其中部分技术特征进行等同替换;而对这些修改或者替换,并不使相应技术方案的本质脱离本发明所要求保护的技术方案的精神和范围。
Claims (3)
1. 一种杜仲巴戟天山药桑葚枸杞复合发酵中草药保健酒,其特征在于:以杜仲、巴戟天、山药、桑葚、枸杞等为原料,利用高活性酿酒酵母厌氧发酵复方中草药复合发酵液制得。
2.根据权利要求1所述的复合发酵液,其特征在于:是由杜仲提取液、巴戟天提取液、山药汁、桑葚汁、枸杞汁混合而成,各组分所占比例为:杜仲提取液20~30%,巴戟天提取液10~20%,山药汁25~35%,桑葚汁15~21%,枸杞汁10~14%。
3.根据权利要求1所述的复合发酵型保健酒的生产方法,其特征在于:是按如下方法制备的:将杜仲提取液、巴戟天提取液、山药汁、桑葚汁、枸杞汁按权力要求2所述的比例混合调配,加入一定比例的糖调整发酵液总糖含量12%左右,并添加0.15% (NH4)2SO4、0.15% KH2PO4、0.1%MgSO4;加入活化后的酿酒酵母,接种量为6~10%;在缓慢搅拌条件下控温厌氧发酵,发酵温度控制在26~28℃,发酵时间为48~72h;发酵结束后通过硅藻土过滤机过滤实现渣液分离;将酒液置于0~10℃条件下陈酿20~30天;调整复合发酵保健酒的酒精度10%~12%/(v/v),加入2~3g/L柠檬酸、3~5g/L木糖醇、5~10g/L维生素C、5~10g/L蔗糖、10~20g/L蜂蜜;用孔径为0.15μm的微孔膜过滤复合发酵保健酒;在无菌灌装生产线中灌装封口制得发酵中草药保健酒。
