Abstract
一种均衡营养主食面粉,由小麦粉、燕麦粉、马铃薯粉、薏米粉、小米粉、玉米粉、高粱米粉、稻米粉、糯米粉、黄豆粉、绿豆粉、红小豆粉、白芸豆粉构成,其生产方法是:a、将小麦、燕麦、谷子、玉米、高粱、水稻、糯米分别烘干、磨粉;b将薏米、马铃薯干、黄豆、绿豆、红小豆、芸豆分别烘干、超微粉碎;c、将粉状各原料倒入搅拌机,搅拌均匀后,装袋即为成品。本发明采用科学配比粮豆薯中的13种食材制作均衡营养主食面粉,口感好,能使人们每天均衡进食五谷杂粮,充分中和其营养成分,改变单一食用小麦粉或大米的传统习惯,增强人的体质和免疫力,达到提高人民身体健康水平的目的,可作为人民日常生活的主食面粉。

技术领域:
本发明涉及营养食品,特别是营养主食面粉的配方及生产方法。
背景技术:
目前我国乃至世界绝大多数人以面食为主,而且多是食用单纯以小麦粉为主制作的主食,因食材结构单一,所以摄取微量元素不够广泛,需要吃一些其它药物或食品,不利于人们的身体健康。为了解决这一问题,人们作了多种努力,如发明一些杂粮食品的制作技术,配备几种杂粮,以求增加人们对微量元素的摄取。这是一个进步。但因不是以小麦粉为主,与人们餐用主食的习惯不相吻合,所以一般只能作为佐餐,在食用主食时仍为单纯的小麦粉,无法达到公众每餐都能食用五谷杂粮的目的。解决这些问题已成为急需。
发明内容:
为了克服现有技术的不足,本发明结合中西医理论与现代科学对杂粮的研究成果,提出一种以小麦粉为主、科学配比粮豆薯品种、能使人们每天均衡进食五谷杂粮的均衡营养主食面粉及其制备方法。一种均衡营养主食面粉,原料重量配比:小麦粉65—72份;燕麦粉1.8—2.2份;马铃薯粉0.5—0.6份;薏米粉0.9—1.2份;小米粉5—9份;;玉米粉8.1—13.8份;高粱米粉2—3份;稻米粉2.5—3.3份;糯米粉0.8—1.1份;黄豆粉0.7—1.3份;绿豆粉0.8—1.3份;红小豆粉0.8—1.2份;白芸豆粉0.4—0.7份。均衡营养主食面粉的生产方法是:a、将小麦、燕麦、、谷子、玉米、高粱、水稻、糯米分别烘干、磨粉;b将薏米、马铃薯干、黄豆、绿豆、红小豆、芸豆分别烘干、超微粉碎;c、将粉状小麦、燕麦、马铃薯、薏米、谷子、玉米、高粱、水稻、糯米、黄豆、绿豆、赤小、芸豆倒入搅拌机,搅拌均匀后,装袋。本发明采用科学配比粮豆薯中的13种食材制作均衡营养主食面粉,口感好,能使人们每天均衡进食五谷杂粮,充分中和其营养成分,改变单一食用小麦粉或大米的传统习惯,增强人的体质和免疫力,达到提高人民身体健康水平的目的,解决目前了面食人群主食食材品种单一,所含营养成分不全面、不均衡进而影响身体健康的问题;既没有违背人们以往餐用主食的传统习惯,易于推广,而且营养更加齐全。本发明的均衡营养主食面粉除小麦粉和大米外还加入了:1.燕麦。燕麦是一种低糖、高营养、高能食品,其营养素不但含量高,而且质量优。(1)可有效地降低人体中的胆固醇,可对心脑血管病起到预防作用;(2)对糖尿病患者也有很好的降糖功效;(3)有通便作用,可防止因大便干燥导致的脑出血等意外;(4)可改善血液循环,缓解工作和生活带来的压力;(5)含有的钙、磷、铁、锌等矿物质有预防骨质疏松、促进伤口愈合、防止贫血等功效,还是补钙佳品;(6)含有极其丰富的亚油酸,对脂肪肝、浮肿等也有辅助疗效;(7)还可以补虚,止汗。2.薏米。(1)抗肿瘤作用,薏米的主要化学活性成分薏米仁酯、薏米仁油等具有很强的抗肿瘤作用,目前抗肿瘤药康莱特注射液的主要成分就是薏米仁脂肪油。(2)增强免疫力,薏米仁多糖可显著提高免疫力,促进溶血素形成,促进淋巴细胞转化,对体力恢复等起着积极的作用。(3)可减少化学物质对人体的侵害。(4)降血糖作用,薏米仁多糖有显著的降糖作用。(5)对心血管的作用,薏米油在低浓度时对蛙离体心脏有兴奋作用,高浓度时则有抑制作用,有降压作用,可改善心脑血管的动脉硬化;(6)美容瘦身作用,薏米仁油、酯、及薏米酯三菇化合物等成分有降脂减肥的作用,对皮肤有细腻的作用。3.小米。《滇南本草》:“主滋阴,养肾气,健脾胃,暖中。”《日用本草》:“和中益气。” 《纲目》:“益丹田,补虚损,开肠胃。”《健康与养生》:“小米中含有类雌激素物质,有保护皮肤、延缓衰老的作用。”具体说来:小米中蛋白质、脂肪、碳水化合物这几种主要营养素含量很高,维生素B1含量是大米的几倍,矿物质的含量也高于大米。一般粮食中不含有的胡萝卜素,小米每100克含量达0.12毫克。小米含铁量突出,其磷含量也很高,是大米的2~3倍,维生素E为大米的4.8倍。(1)滋阴养血的功效,可以使产妇虚寒的体质得到调养,帮助她们恢复体力。(2)防治消化不良,对泻肚、呕吐、消化不良及糖尿者都有帮助。(3)减少细菌,减少口中的细菌滋生,还能治脚气病,神经炎和癞皮病,失眠、头疼、精神倦怠、皮肤“出油”、头皮屑增多等症状。(4)防流产能滋阴,丰富的氨基酸帮助预防流产,抗菌及预防女性阴道发炎。小米中所含的类雌激素物质,能滋阴。(5)能维持生长和生殖力正常,能防止男性阴囊皮肤出现渗液、糜烂、脱屑等现象;防止女性会阴瘙痒、阴唇皮炎和白带过多。使性器官和第二性征发育健全;使男性勃起坚硬、精子数量正常、前列腺不致肿大;使女性月经和性欲正常;使所怀胎儿发育健全,不致畸,生长正常,有利于性欲,精子数量、交配能力、生殖功能健康正常。(6)保持胎儿的正常发育,可避免胎儿痴呆或智力低下或骨骼发育延缓或成为侏儒症患者。(7)祛斑美容,减轻皱纹、色斑、色素沉着的功效。4.玉米。(1)延缓衰老,中医学认为,玉米性平味甘,入肝、肾、膀胱经,有利尿消肿、平肝利胆、健脾渗湿、调中开胃、益肺宁心、清湿热等功能,不但能祛燥,还有助于延缓衰老。(2)预防心脑血管疾病,现代医学认为,玉米含有丰富的不饱和脂肪酸、维生素、微量元素和氨基酸等营养成分。现代研究证实,玉米中的不饱和脂肪酸,尤其是亚油酸的含量高达60%以上,它和玉米胚芽中的维生素E协同作用,可降低血液胆固醇浓度,并防止其沉积于血管壁,因此,玉米对冠心病、动脉粥样硬化、高脂血症及高血压等都有一定的预防和治疗作用。(3)明目,玉米含有类黄酮,对视网膜黄斑有一定作用。(4)防癌、抗衰老,玉米中含的硒和镁有防癌、抗癌作用。当硒与维生素E联合作用时,能防止十多种癌瘤,尤其是最常见的乳腺癌和直肠癌,另外硒还可以调节甲状腺的工作,防止白内障的发生;镁一方面能抑制癌细胞的发展,另一方面能加强肠壁蠕动,促使体内废物排出体外,这对防癌也有重要意义。含有的谷胱甘肽是一种长寿因子,它在硒的参与下,生成谷胱甘肽氧化酶,具有恢复青春、延缓衰老的功能。(5)美容、减肥功能,玉米胚芽中的维生素E还可促进人体细胞分裂,防止皮肤出现皱纹。(6)调节荷尔蒙,玉米中富含的维生素E可通过生殖腺增加荷尔蒙的分泌。(7)健脑,玉米中含有的谷氨酸还有一定的健脑功能。5.糯米。糯米又叫江米。明代李挺《医学人门》中说糯米可以推陈致新,利脯养胃,生津液,令人清爽,所补不小。"(1)具有补中益气,健脾养胃,止虚汗之功效;(2)温补强壮食品,具有补中益气,健脾养胃,止虚汗之功效,对脾胃虚寒,食欲不佳,腹泻有一定缓解作用;(3)收涩作用,对尿频,盗汗有较好的食疗效果。(4)滋补健身,壮气提神、美容益寿、舒筋活血的功效。有补脑益智、护发明目、活血行气、延年益寿的作用。(5)适宜肺结核、神经衰弱、病后产后之人食用。6.高粱米。《本草纲目》说高粱米“甘涩,温,无毒”。《本草撮要》:“入手足太阴、阳明经。”(1)和胃、健脾、消积、温中、涩肠胃、止霍乱的功效。高粱中含有单宁,有收敛固脱的作用,患有慢性腹泻的病人常食高粱米有明显疗效。(2)平喘,利尿、止血是其特长。如将其与其他粮食混合食用,则可提高营养价值。(3)主治胃肠道紊乱和霍乱的情况,还可以治疗人体发生的脾胃虚寒,湿热痢疾的情况,对于小便不利以及胃肠道消化不良也有很好的功效与作用。7.黄豆。黄豆被称为“豆中之王”,在营养上的种种优胜之处,决定了它的药用价值。《神农本草经》中指出它的功用可治“痈肿”、“止痛”等;《名医别录》说黄豆可以“逐水胀,除胃中热痹、伤中淋露,下瘀血,散五脏结积内寒”等。李时珍指出:大豆“治肾病,利水下气,制诸风热,活血,解诸毒。”(1)黄豆中的大豆蛋白质和豆固醇能明显地改善和降低血脂和胆固醇,从而降低患心血管疾病的概率。大豆脂肪富含不饱和脂肪酸和大豆磷脂,有保持血管弹性、健脑和防止脂肪肝形成的作用。(2)大豆中富含皂角苷、蛋白酶抑制剂、异黄酮、钼、硒等抗癌成分,对前列腺癌、皮肤癌、肠癌、食道癌等几乎所有的癌症都有抑制作用。(3)黄豆中的植物雌激素与人体中产生的雌激素在结构上十分相似,为辅助治疗妇女更年期综合征的最佳食物,不但经济、有效,而且绝无副作用。(4)大豆中还富含钙质,对骨质疏松也有疗效。对皮肤干燥粗糙、头发干枯大有好处,可以提高肌肤的新陈代谢,促使机体排毒,令肌肤常葆青春。(5)黄豆中的皂甙类物质能降低脂肪吸收功能,促进脂肪代谢。(6)大豆纤维还可加快食物通过肠道的时间,有减肥轻身的作用。(7)黄豆有补肝养胃、滋润强壮之功效。8.绿豆。《开宝本草》记载:“绿豆,甘,寒,无毒,入心、胃经。治丹毒烦热,风疹,热气奔豚,消肿下气,压热解毒。”(1)抗菌抑菌作用,绿豆具有抗菌抑菌作用。通过抑菌试验证实,对葡萄球菌有抑制作用。根据有关研究,绿豆所含的单宁能凝固微生物原生质,可产生抗菌活性。绿豆中的黄酮类化合物、植物甾醇等生物活性物质有一定程度的抑菌抗病毒作用。(2)增强免疫力,绿豆所含有的众多生物活性物质如香豆素、生物碱、植物甾醇、皂甙等可以增强机体免疫功能,增加吞噬细胞的数量或吞噬功能。(3)降血脂作用,可明显减轻冠状动脉病变,可降低血清胆固醇,绿豆中含有的植物甾醇结构与胆固醇相似,植物甾醇与胆固醇竞争酯化酶,使之不能酯化而减少肠道对胆固醇的吸收、并可通过促进胆固醇异化在肝脏内阻止胆固醇的生物合成等途径使血清胆固醇含量降低。(4)抗肿瘤作用,绿豆对吗啡+亚硝酸钠诱发肺癌与肝癌有一定的预防作用。(5)解毒作用,绿豆中含有丰富的蛋白质,可保护胃肠粘膜。绿豆蛋白、鞣质和黄酮类化合物可与有机磷农药、汞、砷、铅化合物结合形成沉淀物,使之减少或失去毒性,并不易被胃肠道吸收。(6)防治高温出汗使机体因丢失大量的矿物质和维生素而导致的内环境紊乱,绿豆含有丰富无机盐、维生素,可以及时补充丢失的营养物质,以达到清热解暑的治疗效果。(7)绿豆磷脂中的磷脂酰胆碱、磷脂酰乙醇胺、磷脂酰肌醇、磷脂酰甘油、磷脂酰丝氨酸和磷脂酸有增进食欲作用。(8)减肥和抑制血糖作用,绿豆淀粉中含有相当数量的低聚糖(戊聚糖、半乳聚糖等),这些低聚糖对于肥胖者和糖尿病患者有辅助治疗的作用。9.红小豆。被李时珍称为“心之谷”。红小豆是人们生活中不可缺少的高营养、多功能的杂粮。(1)红小豆含有较多的皂角甙,可刺激肠道。因此它有良好的利尿作用,能解毒;(2)对心脏病和肾病、水肿均有益。(3)它含有较多的膳食纤维,具有良好的润肠通便、降血压、降血脂、调节血糖、解毒抗癌、预防结石、健美减肥的作用。(4)红小豆是富含叶酸的食物。产妇、乳母多吃红小豆有催乳的功效。(4)红小豆具有“增津液、利小便、消胀、除肿、止吐”的功能;(5)红小豆还可用于治疗心脏性和肾脏性水肿、肝硬化腹水、浮肿和外用于疮毒之症,都有一定效果。(6)红小豆对金黄色葡萄球菌、福氏痢疾杆菌和伤寒杆菌等有抑菌作用。(7)红小豆可用于治疗肾脏、心脏、肝脏、营养不良、炎症等多种疾病。10.白芸豆。(1)我国古代医籍记载,白芸豆味甘平,具有温中下气、利肠胃、止呃逆、益肾补元等功用,是一种滋补食疗佳品。(2)白芸豆还有镇静作用。(3)白芸豆对治疗虚寒呃逆、胃寒呕吐、跌打损伤、喘息咳嗽、腰痛、神经痛均有一定疗效。(4)白芸豆还是一种高钾低钠食品,适合于心脏病、动脉硬化、高血脂和忌盐患者食用。现代医学分析,芸豆粒含有血球凝集素等多种球蛋白。富含易于吸收的优质蛋白质,适量的碳水化合物及多种微量元素等补充机体的营养成分,提高免疫力。所含维生素B1能维持正常的消化腺分泌和胃肠道蠕动,抑制胆碱酶活性,可帮助消化,增进食欲。(5)白芸豆所含磷脂有促进胰岛素分泌,参加糖代谢,是糖尿病患者的理想食品,适宜肾虚者、腹泻者、小便频繁者、男子遗精和女子带下病者;尤其是糖尿病和肾虚者更佳。(6)现代医学分析,白芸豆粒含有血球凝集素等多种球蛋白。11.土豆粉。土豆中含有蛋白质、脂肪、糖类,还含有人体必须的21种氨基酸和维生素B1、B2、B6、C以及胡萝卜素、纤维素、钙、磷、铁、钾、钠、碘、镁和钼等。(1)土豆粉可防中风,有学者指出,每日吃1个土豆,即可使中风的机会下降40%。(2)土豆中含有丰富的B族维生素和优质纤维素,在人体延缓衰老过程中有重要作用。(3)土豆富含的膳食纤维、蔗糖,有助于防治消化道癌症和控制血液中胆固醇的含量;(4)土豆粉中的黏体蛋白质,能预防心血管疾病。(4)减肥。土豆只含有0.1%的脂肪,是其他所有充饥食物望尘莫及的。每天吃土豆可以减少脂肪的摄入,使多余的脂肪渐渐代谢掉。(5)土豆含的优质蛋白质首屈一指,无论是营养价值还是保健功能都很全面;即使是人体需要的其他营养如碳水化合物、各种维生素、矿物质等更全面。近些年来,意大利、西班牙、美国、加拿大、俄罗斯等国家,先后涌现了一批风味独特的土豆食疗餐厅,以满足健美减肥人士的日常需求。本发明均衡营养主食面粉营养成分更加全面、均衡,尤其人体需要的一些稀有营养成分明显高于小麦粉——常规检测的粮食的48个营养指标,按本方案制备的营养均衡主食面粉34个营养指标超过纯小麦粉,13种粮豆薯合成的面粉中,杂粮还独具一些稀有营养成分,按照药食同源的理论,本方案制备的均衡营养主食面粉对于预防和治疗人体的各种疾病,都将大有益处,特别是发明采用将薏米、马铃薯干、黄豆、绿豆、红小豆、芸豆分别烘干、超微粉碎的工艺,使得上述原料中所含的微量元素更加易于人体消化吸收;本发明制备的均衡营养主食面粉蒸馒头、花卷,烙饼,包饺子、包子口感明显好于纯小麦粉,可以用“满口香”来形容。

本发明的一个最佳实施例,均衡营养主食面粉的各成分配料是:取小麦粉72kg、燕麦粉1.8kg、马铃薯粉0.5kg、薏米粉0.9kg、小米粉5kg、玉米粉8.1kg、高粱米粉2kg、稻米粉2.5kg、糯米粉0.8kg、黄豆粉0.7kg、绿豆粉0.8kg、红小豆粉0.8kg、白芸豆粉0.4kg,均衡营养主食面粉的生产方法是:a、将小麦、燕麦、、谷子、玉米、高粱、水稻、糯米分别烘干、磨粉;b将薏米、马铃薯干、黄豆、绿豆、红小豆、芸豆分别烘干、超微粉碎;c、将粉状小麦、燕麦、马铃薯、薏米、谷子、玉米、高粱、水稻、糯米、黄豆、绿豆、赤小、芸豆倒入搅拌机,搅拌均匀后,装袋即为成品。
本发明的第二个实施例,取小麦粉65kg、燕麦粉2.2kg、马铃薯粉0.6kg、薏米粉1.2kg、小米粉9kg、玉米粉13.8kg、高粱米粉3kg、稻米粉、3.3kg、糯米粉1.1kg、黄豆粉1.3kg、绿豆粉1.3kg、红小豆粉1.2kg、白芸豆粉、0.7kg,其生产方法同实施例1。

Claims (2)
1.一种均衡营养主食面粉,其特征在于所述均衡营养主食面粉原料重量配比:小麦粉65—72份;燕麦粉1.8—2.2份;马铃薯粉0.5—0.6份;薏米粉0.9—1.2份;小米粉5—9份;;玉米粉8.1—13.8份;高粱米粉2—3份;稻米粉2.5—3.3份;糯米粉0.8—1.1份;黄豆粉0.7—1.3份;绿豆粉0.8—1.3份;红小豆粉0.8—1.2份;白芸豆粉0.4—0.7份。
2.如权利要求1所述的均衡营养主食面粉的生产方法是:a、将小麦、燕麦、谷子、玉米、高粱、水稻、糯米分别烘干、磨粉;b将薏米、马铃薯干、黄豆、绿豆、红小豆、芸豆分别烘干、超微粉碎;c、将粉状小麦、燕麦、马铃薯、薏米、谷子、玉米、高粱、水稻、糯米、黄豆、绿豆、赤小、芸豆倒入搅拌机,搅拌均匀后,装袋。
