本发明公开了一种果味山药保健片的加工方法,以山药为主要原料,采用原料预处理、切片、烘干、料液浸泡、二次烘干、油炸、灭菌、分级包装、贮藏的步骤加工而成。采用本发明方法加工的果味山药保健片,营养流失少,在保留山药营养物质的同时又添加料液内的营养成分,也为山药的深加工利用提供了一种新的途径。产品营养丰富,本产品富含膳食纤维,有利于保护胃粘膜、帮助消化,还具有滋阴养肺、降低血压、血糖的功效。操作简单,易于掌握、便于实施。

技术领域
本发明涉及一种食品的加工方法,尤其是涉及一种果味山药保健片的加工方法。
背景技术
山药具有营养滋补、诱生搅扰素、增强机体免疫力、调度内排泄、补气通脉、镇咳祛痰、平喘等感化,能改善冠状动脉及微轮回血流,可治疗慢性气管炎、冠芥蒂、心绞痛等。铁棍山药具有补气润肺的功用,既可切片煎汁当茶饮,又可切细煮粥喝,对虚性咳嗽及肺痨发烧患者都有很好的治疗结果。春季天气较枯燥,易伤肺津,招致阴虚,出现口干、咽干、唇焦、干咳等病症,此时进补山药最为适合,因山药是安然平静之品,为滋阴养肺之上品。
山药不易长期保存、易变质,现有的技术多把山药加工成果汁、饮料、果浆等食品或饮品,目前山药片的加工过程中存在着营养物质流失大的问题。
发明内容
本发明针对上述的问题,提供一种营养丰富、食用方便、风味可口的果味山药保健片的加工方法。解决山药不易长期保存、易变质的问题。
本发明解决其技术问题所采取的技术方案是:
一种果味山药保健片的加工方法,其特征在于:采用以下步骤:
A、原料处理:挑选新鲜、八成熟、无病虫的山药,用清水冲洗干净,并用不锈钢刀切去头尾、去皮;
B、切片:将处理后的山药切成20mm的片状;
C、一次烘干:将山药片放入烘干设备中,在55℃下使水分降低至18%,后降温冷却,制成初干片;
D、浸泡:将初干片放置由车厘子果浆、枸杞汁、何首乌粉、丹参粉和甘草、槐花配置的溶液中,以淹没初干片为准,浸泡2-3小时;
E、二次烘干:将浸泡后的初干片置于烘干设备中,升温78℃,待干片含水量达原干片重量的8%时取出,停止烘干,取出降温冷却;
F、油炸:将二次烘干后的干片放入125℃的大豆油中炸制,时间为35s,制成山药片;
G、灭菌:采用微波灭菌法处理;
H、包装:山药片成品经检验合格后采用真空包装。
有益效果:采用本发明方法加工的果味山药保健片,营养流失少,在保留山药营养物质的同时又添加料液内的营养成分,也为山药的深加工利用提供了一种新的途径。产品营养丰富,本产品富含膳食纤维,有利于保护胃粘膜、帮助消化,还具有滋阴养肺、降低血压、血糖的功效。操作简单,易于掌握、便于实施。
具体实施方式
实施例1:
一种果味山药保健片的加工方法,采用以下步骤:
A、原料处理:挑选新鲜、七成熟、无病虫、不腐烂的山药,用清水冲洗干净,并用不锈钢刀切去头尾、去皮;
B、切片:将去皮后的山药切成20mm的片状;
C、一次烘干:将山药片放入烘干设备中,在56℃下使水分降低至25%以下,后降温冷却,制成初干片;
D、浸泡:将初干片放置由番荔枝果浆、麦芽汁、菱角粉、绞股蓝粉和甜菊苷、桂花配置的溶液中,以淹没初干片为准,浸泡1小时;
E、二次烘干:将浸泡后的初干片置于烘干设备中,升温82℃,待干片含水量达原干片重量的15%时取出,停止烘干,取出降温冷却;
F、油炸:将二次烘干后的干片放入125℃的花生油中炸制,时间为2min,制成山药片;拌入少许柠檬香精,晾干即可;
G、灭菌:采用微波灭菌法处理;
H、包装:成品经检验合格后采用真空包装。
实施例1:
一种果味山药保健片的加工方法,采用以下步骤:
A、原料处理:挑选新鲜、八成熟、无病虫、的山药,用清水冲洗干净,并用不锈钢刀切去头尾、去皮;
B、切片:将处理后的山药切成10-15mm的片状;
C、一次烘干:将山药片放入烘干设备中,在70-75℃下使水分降低至20~22%,后降温冷却,制成初干片;
D、浸泡:将初干片放置由桑椹果浆、青柠汁、红参粉、蛋白粉和桂花浸膏、茉莉配置的溶液中,以淹没初干片为准,浸泡4~5小时;
E、二次烘干:将浸泡后的初干片置于烘干设备中,升温70~75℃,待干片含水量达原干片重量的10~12%时取出,停止烘干,取出降温冷却;
F、油炸:将二次烘干后的干片放入130~135℃的芝麻油中炸制,时间为2~4min,制成山药片;
G、灭菌:采用微波灭菌法处理;
H、包装:山药片成品经检验合格后采用真空包装。
