本发明针对上述的问题,提供一种营养丰富、食用方便、风味可口的黄瓜片的加工方法。解决黄瓜不易长期保存、易变质的问题。
本发明解决其技术问题所采取的技术方案是:
一种黄瓜片的加工方法,其特征在于:采用以下步骤:
A、原料处理:挑选新鲜、八成熟、无病虫、的黄瓜,用清水冲洗干净,并用不锈钢刀切去头尾;
B、切片:将处理后的黄瓜切成10-15mm的片状;
C、一次烘干:将黄瓜片放入烘干设备中,在70-75℃下使水分降低至20~22%,后降温冷却,制成初干片;
D、浸泡:将初干片放置料液中,以淹没初干片为准,浸泡4~5小时;
E、二次烘干:将浸泡后的初干片置于烘干设备中,升温70~75℃,待干片含水量达原干片重量的10~12%时取出,停止烘干,取出降温冷却;
F、油炸:将二次烘干后的干片放入130~135℃的芝麻油中炸制,时间为2~4min,制成黄瓜片;
G、灭菌:采用微波灭菌法处理;

具体实施方式
实施例1:
一种黄瓜片的加工方法,采用以下步骤:
A、原料处理:挑选新鲜、七成熟、无病虫、不腐烂的黄瓜,用清水冲洗干净,并用不锈钢刀切去头尾;
B、切片:将去皮后的黄瓜切成20mm的片状;
C、一次烘干:将黄瓜片放入烘干设备中,在56℃下使水分降低至25%以下,后降温冷却,制成初干片;
D、浸泡:将初干片放置料液中,以淹没初干片为准,浸泡1小时;
E、二次烘干:将浸泡后的初干片置于烘干设备中,升温82℃,待干片含水量达原干片重量的15%时取出,停止烘干,取出降温冷却;
F、油炸:将二次烘干后的干片放入125℃的花生油中炸制,时间为2min,制成黄瓜片;拌入少许柠檬香精,晾干即可;
G、灭菌:采用微波灭菌法处理;
H、包装:成品经检验合格后采用真空包装。

Claims (1)
1. 一种黄瓜片的加工方法,其特征在于:采用以下步骤:
A、原料处理:挑选新鲜、八成熟、无病虫、的黄瓜,用清水冲洗干净,并用不锈钢刀切去头尾;
B、切片:将处理后的黄瓜切成10-15mm的片状;
C、一次烘干:将黄瓜片放入烘干设备中,在70-75℃下使水分降低至20~22%,后降温冷却,制成初干片;
D、浸泡:将初干片放置料液中,以淹没初干片为准,浸泡4~5小时;
E、二次烘干:将浸泡后的初干片置于烘干设备中,升温70~75℃,待干片含水量达原干片重量的10~12%时取出,停止烘干,取出降温冷却;
F、油炸:将二次烘干后的干片放入130~135℃的芝麻油中炸制,时间为2~4min,制成黄瓜片;
G、灭菌:采用微波灭菌法处理;
H、包装:黄瓜片成品经检验合格后采用真空包装。
