一种保健蔬菜酱及其制备方法,其特征在于由下列重量份的原料制成:菊花1.1-1.3、玉竹1-2、牛膝1.5-2、鸡内金1.2-1.5、罗汉果花1-2、王母钗1-1.5、万年藓1-2、杨梅13-14、干贝20-22、虾皮30-35、青菜150-160、菠菜120-130、食盐30-35、白醋30-35、蜂蜜5-6、玉米粒80-90、香蕉30-35、甜面酱500-550、营养添加剂10-12。本发明添加的多种蔬菜经过腌制,独具风味,且腌制过程中添加了麦饭石,可吸收在腌制过程中产生的亚硝酸盐,使得本发明更加健康,同时,本发明添加了虾皮,提高了本发明的钙含量,此外,本发明还含有多种中草药成分,具有补肝益肾、润肺养胃、活血通经的功效。

本发明属于食品加工技术领域,尤其涉及一种保健蔬菜酱及其制备方法。
背景技术
调味酱在我国有着悠久的历史,多用于烹调菜肴。目前,市场上销售的调味酱的种类繁多,但其只具有单一的调味功能,而不具有保健功能,已不能满足消费者日益增长的需求。
发明内容
本发明的目的是提供一种保健蔬菜酱及其制备方法,本发明具有香郁可口,营养健康的特点。
本发明所采用的技术方案是:
一种保健蔬菜酱,其特征在于由以下重量份的原料制成:
菊花1.1-1.3、玉竹1-2、牛膝1.5-2、鸡内金1.2-1.5、罗汉果花1-2、王母钗1-1.5、万年藓1-2、杨梅13-14、干贝20-22、虾皮30-35、青菜150-160、菠菜120-130、食盐30-35、白醋30-35、蜂蜜5-6、玉米粒80-90、香蕉30-35、甜面酱500-550、营养添加剂10-12;
所述营养添加剂由下列重量份的原料制成:山楂核1-2、黄芪1-2、陈皮2-3、石榴叶4-5、莲藕7-8、冬瓜8-9、红糖3-4、马蹄粉50-52、奶油4-5;
制备方法为:(1)将山楂核、黄芪、陈皮、石榴叶加4-5倍的水文火煎煮30-35分钟,过滤除渣,收集滤液;
(2)将莲藕、冬瓜去皮,加步骤(1)所得物料打浆,过滤除渣,在所得蔬菜汁中加入红糖,大火煮沸,然后与剩余物料混合揉匀,烘干后进行超微粉碎,即得。
所述的保健蔬菜酱的制备方法,其特征在于包括以下步骤:
(1)将菊花、玉竹、牛膝、鸡内金、罗汉果花、王母钗、万年藓加5-6倍的水文火煎煮40-50分钟,过滤除渣,所得滤液经喷雾干燥制成粉末,得中药粉;
(2)将杨梅送入榨汁机进行榨汁,得杨梅汁;将白醋、杨梅汁混合入锅,大火煮沸后出锅,晾凉后加入蜂蜜、药液,充分搅拌,得杨梅保健醋;
(3)将青菜、菠菜、食盐、杨梅保健醋混合拌匀,倒入坛子中,用麦饭石压实,于阴凉处密封放置7-8天后将蔬菜取出,剁碎;
(4)取香蕉果肉,与玉米粒混合,加1.5-2倍的水打浆,过滤除渣,收集滤液;
(5)将虾皮烘干后进行粉碎,得虾皮粉;将虾皮粉、步骤(4)所得物料与甜面酱混合入锅,小火加热,熬至浓稠,然后加入步骤(3)所得物料及剩余物料,加热搅拌3-5分钟后出料,即得。
本发明中的王母钗为莎草种植物异型莎草的带根全草,万年藓为万年藓科植物万年藓的植物体。
本发明的有益效果为:
本发明添加的多种蔬菜经过腌制,独具风味,且腌制过程中添加了麦饭石,可吸收在腌制过程中产生的亚硝酸盐,使得本发明更加健康,同时,本发明添加了虾皮,提高了本发明的钙含量,此外,本发明还含有多种中草药成分,具有补肝益肾、润肺养胃、活血通经的功效。
具体实施方式
一种保健蔬菜酱,其特征在于由以下重量份(公斤)的原料制成:
菊花1.1、玉竹2、牛膝1.5、鸡内金1.5、罗汉果花2、王母钗1.5、万年藓2、杨梅14、干贝22、虾皮35、青菜160、菠菜130、食盐30、白醋35、蜂蜜5、玉米粒90、香蕉35、甜面酱500、营养添加剂12;
所述营养添加剂由下列重量份(公斤)的原料制成:山楂核2、黄芪1、陈皮2、石榴叶5、莲藕8、冬瓜8、红糖4、马蹄粉52、奶油5;
制备方法为:(1)将山楂核、黄芪、陈皮、石榴叶加4-5倍的水文火煎煮30-35分钟,过滤除渣,收集滤液;
(2)将莲藕、冬瓜去皮,加步骤(1)所得物料打浆,过滤除渣,在所得蔬菜汁中加入红糖,大火煮沸,然后与剩余物料混合揉匀,烘干后进行超微粉碎,即得。

所述营养添加剂的制备方法为:
