一种鱼香糯米酱及其制备方法,其特征在于由下列重量份的原料制成:槐花2-3、知母1-2、柏子仁3-4、山药2-2.5、知母1-2、铁骨银参2-3、阴香皮1-2、糯米50-60、花生仁20-24、苋菜7-8、茶树菇5-6、鱼肉120-130、小麦胚芽粉20-22、甜面酱500-550、乳酸菌0.2-0.3、营养添加剂10-12。本发明口感细腻,味道鲜美,且营养丰富,其中添加的鱼肉富含蛋白质,提升了本发明的营养价值,苋菜、茶树菇等中则含有丰富的膳食纤维、维生素C、矿物质等,营养全面完善,此外,本发明还含有多种中草药成分,经常食用可达到清肝明目、养心安神、润肠养肺、滋阴润燥的功效。

本发明属于食品加工技术领域,尤其涉及一种鱼香糯米酱及其制备方法。
背景技术
调味酱在我国有着悠久的历史,多用于烹调菜肴。目前,市场上销售的调味酱的种类繁多,但其只具有单一的调味功能,而不具有保健功能,已不能满足消费者日益增长的需求。
发明内容
本发明的目的是提供一种鱼香糯米酱及其制备方法,本发明具有香郁可口,营养健康的特点。
本发明所采用的技术方案是:
一种鱼香糯米酱,其特征在于由以下重量份的原料制成:
槐花2-3、知母1-2、柏子仁3-4、山药2-2.5、知母1-2、铁骨银参2-3、阴香皮1-2、糯米50-60、花生仁20-24、苋菜7-8、茶树菇5-6、鱼肉120-130、小麦胚芽粉20-22、甜面酱500-550、乳酸菌0.2-0.3、营养添加剂10-12;
所述营养添加剂由下列重量份的原料制成:山楂核1-2、黄芪1-2、陈皮2-3、石榴叶4-5、莲藕7-8、冬瓜8-9、红糖3-4、马蹄粉50-52、奶油4-5;
制备方法为:(1)将山楂核、黄芪、陈皮、石榴叶加4-5倍的水文火煎煮30-35分钟,过滤除渣,收集滤液;
(2)将莲藕、冬瓜去皮,加步骤(1)所得物料打浆,过滤除渣,在所得蔬菜汁中加入红糖,大火煮沸,然后与剩余物料混合揉匀,烘干后进行超微粉碎,即得。
所述的鱼香糯米酱的制备方法,其特征在于包括以下步骤:
(1)将槐花、知母、柏子仁、山药、知母、铁骨银参、阴香皮加5-6倍的水文火煎煮40-50分钟,过滤除渣,得药液;
(2)将糯米入锅,加4-5倍的水、药液,小火加热,煮沸后将糯米捞出,摊开晾干;
(3)将步骤(2)所得糯米倒入炒锅,加入糯米同等重量的麦饭石,小火翻炒20-25分钟后出料,将麦饭石筛除,得炒糯米;
(4)将苋菜、茶树菇加4-5倍的水打浆,过滤除渣,得蔬菜汁;将花生仁加蔬菜汁进行磨浆,所得浆液在35-37℃下接入乳酸菌,发酵2-3小时;
(5)将鱼肉绞碎,与步骤(4)所得物料混合拌匀,送入蒸锅大火蒸10-15分钟后出料,然后与炒糯米、剩余物料混合拌匀,即得。
本发明中的铁骨银参为茜草科植物污毛粗叶木的根,阴香皮为樟科植物阴香的树皮。
本发明的有益效果为:
本发明口感细腻,味道鲜美,且营养丰富,其中添加的鱼肉富含蛋白质,提升了本发明的营养价值,苋菜、茶树菇等中则含有丰富的膳食纤维、维生素C、矿物质等,营养全面完善,此外,本发明还含有多种中草药成分,经常食用可达到清肝明目、养心安神、润肠养肺、滋阴润燥的功效。
具体实施方式
一种鱼香糯米酱,其特征在于由以下重量份(公斤)的原料制成:
槐花3、知母2、柏子仁4、山药2.5、知母2、铁骨银参3、阴香皮1、糯米60、花生仁20、苋菜8、茶树菇6、鱼肉130、小麦胚芽粉22、甜面酱550、乳酸菌0.2、营养添加剂12;
所述营养添加剂由下列重量份(公斤)的原料制成:山楂核2、黄芪1、陈皮2、石榴叶5、莲藕8、冬瓜8、红糖4、马蹄粉52、奶油5;
制备方法为:(1)将山楂核、黄芪、陈皮、石榴叶加4-5倍的水文火煎煮30-35分钟,过滤除渣,收集滤液;
(2)将莲藕、冬瓜去皮,加步骤(1)所得物料打浆,过滤除渣,在所得蔬菜汁中加入红糖,大火煮沸,然后与剩余物料混合揉匀,烘干后进行超微粉碎,即得。
