本发明公开了一种佛跳墙冻品,将调配后的汤汁装入罐中速冻,所述汤汁用定量灌装机自动灌装到罐中,冷却后放入螺旋单冻机中,设定温度-38~-40℃,速冻时间20-40分钟,速冻成块状,然后将即食海参、鲍鱼、瑶柱、花胶、鱼唇、海螺肉和花菇摆放在冻块上二次速冻,二次速冻时温度为-38~-40℃,速冻时间20-40分钟,最后用包装袋包装并抽真空,得到佛跳墙冻品,在-18℃以下冷冻贮存。本发明的佛跳墙冻品,精选上等辽参、鲍鱼,配以瑶柱、花胶、鱼唇等名贵食材,经文火炖制,标准化加工而成,鲜香四溢,美味可口,消费者买回家后缓化、加热即可食用,轻松方便。

背景技术
[0002]海参是一种名贵海产动物,因补益作用类似人参而得名。海参肉质软嫩,营养丰富,是典型的高蛋白、低脂肪食物,滋味鲜美,风味高雅,是久负盛名的名馔佳肴,是海味“八珍”之一,与燕窝、鲍鱼、鱼翅齐名,不仅是珍贵的食品,也是名贵的药材,在大雅之堂上往往扮演着“压台轴”的角色。
[0003]鲍鱼自古被人们视为“海味珍品之冠”,其肉质柔嫩细滑,滋味极其鲜美。鲍鱼本身营养价值极高,鲍鱼肉含有丰富的球蛋白,具有滋阴补阳功效。欧洲人早在200年前已把鲍鱼当作一种活性鲜食用,中国在清朝时期,宫廷中有所谓全鲍宴。鲍鱼与官吏品位的高低挂钩,可见其价值显贵。作为海八珍之一的鲍鱼,自古入肴,且颇有名气。

发明内容
[0005]本发明的目的是提供一种佛跳墙冻品,用简便、安全、放心的方式将复杂的菜品工厂化、简单化、平民化,消费者买回家后缓化、加热即可食用,轻松方便。
[0006]本发明的技术方案是这样实现的:一种佛跳墙冻品,将调配后的汤汁装入罐中速冻,所述汤汁用定量灌装机自动灌装到罐中,冷却后放入螺旋单冻机中,设定温度-38〜-400C,速冻时间20-40分钟,速冻成块状,然后将即食海参、鲍鱼、瑶柱、花胶、鱼唇、海螺肉和花菇摆放在冻块上二次速冻,二次速冻时温度为-38〜-40°C,速冻时间20-40分钟,最后用包装袋包装并抽真空,得到佛跳墙冻品,在-18°C以下冷冻贮存。其中所述汤汁的制备方法为:
[0007] I)备料:将龙骨14-16千克、精肉8-10千克、鸡爪8-10千克、黄油鸡30-35千克和老母鸡30-35千克切块、清洗干净,浸泡;将75-100千水烧开后加入150-200克料酒,将上述原料分别氽一下,去除血水,捞出备用;
[0008] 2)熬汤汁:将氽好的原料放入锅中,加300-350千克水和20-40克白胡椒粒,烧开后小火慢炖,炖制过程中温度保持在90-95°C左右,炖制10-12小时,出汤200-240千克,然后将汤汁过滤,冷却后放入冷藏室静置,将上面析出的油脂层撇掉备用;

1.一种佛跳墙冻品,其特征在于,将调配后的汤汁用定量灌装机自动灌装到罐中冷却后放入螺旋单冻机中,设定温度-38〜-40 0C,速冻时间20-40分钟,速冻成块状,将即食海参、鲍鱼、瑶柱、花胶、鱼唇、海螺肉和花菇摆放在冻块上二次速冻,所述二次速冻的温度为-38〜-40°C,速冻时间20-40分钟,用包装袋包装并抽真空,得到佛跳墙冻品,成品放在_18°C以下冷冻贮存,所述汤汁的制备方法为: 1)备料:将龙骨14-16千克、精肉8-10千克、鸡爪8-10千克、黄油鸡30-35千克和老母鸡30-35千克切块、清洗干净,浸泡;将75-100千水烧开后加入150-200克料酒,将上述原料分别氽一下,去除血水,捞出备用; 2)熬汤汁:将氽好的原料放入锅中,加300-350千克水和20-40克白胡椒粒,烧开后小火慢炖,汤炖制过程中温度保持在90-95°C,炖制10-12小时,出汤200-240千克,然后将汤汁过滤,冷却后放入冷藏室静置,将上面析出的油脂层撇掉备用; 3)调味:取冷凝成冻的汤汁加入夹层锅中,加热缓化后加入蚝油5-11%、文蛤精3-8%、鸡汁3-5%、味精1-3%、淀粉4-8%,加热至沸腾10-15分钟后停火,冷却出锅。
