背景技术:
一种蚌和蛤的汤品,是依据蚌和蛤(注)都是味甘咸、性寒之物,都有清热解毒,滋阴降火、抗肿瘤、除湿热、解烦燥、消喝、清肺养胃润五脏的作用,而加工成能防治肝火亢盛、湿热烦燥、肺热喘咳的清凉解毒汤品。
传统上人们将蚌和蛤的肉壳分离,取肉晒干,随时吃用,或将生鲜的蚌、蛤炒或炆煮而吃。本申请利用蚌入肝清热解毒去湿,滋阴明目、治雀目之功;利用蛤入肺,清肺化痰、软坚散结、利水消肿之力,将它们加工成可口宜人的清凉滋阴降火益肾汤,对身体健康有益。
解注:蚌的品种有:珍珠蚌、园顶蛛蚌、短褶矛蚌、川南蛛蚌、土牡蛎等,现简称为蚌。蛤的品种有:文蛤、青蛤、花蛤、沙蛤、砂蚬子、蛤蜊等,现简称为蛤。
发明内容:
一种蚌和蛤的汤品,是采用蚌、蛤、田螺、石螺、河蚬、花蚬、猪骨、鸡骨、鸭骨、鱼骨、牛磺酸、木香、紫苏叶等加工而成,该汤奶白清香,甜润可口,清肺养胃、滋阴降火,有抗肿瘤的作用。宜于心情烦燥、口干目赤、热火遮眼、热毒疮痈,捱夜眼红涩痛,肝热肾衰等人士食用。

将蚌和蛤在清水中浸泡至吐净泥沙,洗净放入沸水中焯一下,沥干水份,再将蚌和蛤分别放入热油锅中加入适量的生姜适量的米酒炒片刻离火,全部倒入煲汤锅中待用,将猪骨、鸡骨、洗净分别放入沸水中焯一下,放入上述同一煲汤锅中加入适量清水加温煲汤,约煲至沸后100-130分钟时加入木香、紫苏叶再继续煲8-12分钟离火,即加入适量的牛磺酸适量的冰糖适量的食盐拌匀,成为清热解毒滋味营养的蚌蛤汤。
本发明的有益效果:
1、蚌味甘咸、性寒、归肝、肾二经,能清热解毒、滋阴明目、主治烦热、消渴、血崩、带下、痔瘘、目赤。蛤味咸,性微寒,归肺、胃、肾经,能清肺化痰、软坚散结、利水消肿、制酸止痛、敛疮收湿。田螺味甘咸、性寒,归肝、脾、膀胱经。蚌和蛤、田螺都能清热解毒、滋阴潜阳、除湿热、解烦燥、消渴、清肺养胃润五脏,治疗肺热咳嗽,湿疹、痔瘘、肝火亢盛,捱夜肝热眼红涩痛、咽喉红肿声沙哑等症。
2、牛磺酸除营养作用外,尚有广泛的保健药理作用,能增强人体免疫功能,抗菌解热、解毒镇痛、利胆保肝,降血压降血糖等,国内外很多食品都加入了牛磺酸,特别是婴幼儿的食品,都含有多功效无副作用的牛磺酸,本申请还利用牛磺酸的酸味抑制蚌、蛤、田螺等动物肉类的异腥味,增加鲜野味。
3、由于蚌和蛤田螺味甘咸、性寒,如多食者,特别是脾胃虚寒之人多食会动冷气,寒中惹至发风,为抑制消除这不利的弊病,本申请添加辛温,入脾、胃、肝、肾经的木香和紫苏叶,能行气止痛,调中导寒滞,散寒解表,行气化痰、专解鱼虾蟹等海产品的毒素,并能通达经脉,散风寒解郁结,因此,木香和紫苏叶能分解蚌和蛤、田螺多食引起的冷气、寒滞动风的弊病,克服了不利的因素。木香和紫苏叶还掩盖了蚌和蛤、田螺的异腥味,并增加了汤品怡人舒心的芳香味。

采用的蚌有:珍珠蚌、圆顶蛛蚌、短褶矛蚌、川南蛛蚌,任选其中的一种或二种以上;
采用的蛤有:文蛤、青蛤、花蛤、沙蛤、砂蚬子,任选其中的一种或二种以上;
