本发明涉及食品领域,具体地说是一种以石磨黑小麦面粉为原料加工的一种养生挂面。
背景技术
目前市场上挂面,都是以小麦、豆类、鸡蛋、各类蔬菜加工制成的营养挂面,其所含微量元素不足,人们食用这种单一挂面,缺硒而引起会引起肌肉萎缩、心血管和肝脏疾病,缺钙会引起骨质疏松,缺铁造成缺铁性贫血;易疲劳;脸色和指甲苍白;手脚发凉;免疫力和抗感染能力降低;儿童发育迟缓,智力受损;心跳加快;食欲下降;头晕;导致癌症、心脏病剧增等。
发明内容
本发明的目的是提供一种高营养、高滋补、高免疫“药食兼用”的以石磨黑小麦面粉为原料加工制成营养、健康、养生挂面,以满足人们生活水平不断提高的要求和回归自然、营养保健饮食消费的愿望。
为实现上述目的,本发明采用的技术方案如下:
一种石磨黑小麦养生挂面,由下列重量份的原料制成:石磨黑小麦面粉90-100、石磨黑荞麦面粉30-40、黑木耳粉10-20、桑葚粉10-15、黑李子汁5-10、覆盆子汁8-12、老鹰茶5-10、枸杞子5-10、红薯藤5-10、马齿苋5-8、南瓜花5-8、何首乌4-6、红薯叶4-6、田七2-5、茯苓2-5、精盐1-2、食碱0.2-0.3。
石磨黑小麦养生挂面的制备方法,包括以下步骤:
(1)将老鹰茶、枸杞子、红薯藤、马齿苋、南瓜花、何首乌、红薯叶、田七、茯苓放入其总重量的10-15倍热水中煎煮30-40 min,温度控制在85-90℃,然后离心分离,弃去废渣,再过滤即得煎煮液;
(2)将剩余配料放入和面机内,加入煎煮液,再加入适量的温水,混合搅拌20-30min,使之形成面团,和面时要注意黑豆粉在调制面团中的均匀性;
(3)在熟化机上苫—层湿布,把和好的面团放入熟化机内,熟化机转速为5-10 r/min,保持面团温度25-30℃,静置20-30min;
(4)把经过和面、熟化的面料辊轧成二块面带,再通过一组轧辊将其合压成一块面带,连续通过2-3次轧辊,逐步压薄到0.8-1.0毫米厚,切成宽1.8-2.0毫米的面条;
(5)采用多排隧道式烘干后切成长200-220毫米的面条,烘干切断后,凉至室温包装即可。
所述的石磨黑小麦面粉、石磨黑大豆粉是在继承传统石磨生产工艺:去杂筛理-吸石-洗麦-润麦-剥皮-磨制-分级-包装上,利用现代科技开发出的机械传动石磨加工而成。
所述的过滤为先经250目双联过滤器过滤,再经硅藻过滤机精滤以除去其中的杂质及不溶物。
黑小麦属优质专用型小麦,籽粒硬质,长圆形,黑色或黑紫色。黑小麦营养丰富,是普通小麦所不能比的,据农业部谷物品质监督检验测试中心检验:黑小麦含有丰富的淀粉、脂肪、蛋白质、多种维生素、食物纤维,大量矿质元素和稀有微量元素及PP碘,蛋白质的含量占17.1%;18种氨基酸的总含量为15.2%,高于普通小麦80%-90%;赖氨酸的含量在0.4%,高于普通小麦50%-80%;铁的含量高于普通小麦81.03%;磷的含量高于普通小麦80%;钾的含量高于普通小麦72.4%;钙的含量高于普通小麦300%-400%;脂溶性的维生素(如A、E、D、K类)含量丰富;特别是含有0.5X10-6的碘和丰富的硒,硒的含量高于普通小麦300%。钙是人体血浆和骨胳中不可缺少的,可解决人类补钙的世界性难题,特别是对防止妇女和老人的骨质疏松症非常重要。硒是营养性抗癌剂,对人类防癌起重大作用。小麦是作物之首,食品之王,而黑小麦则是小麦之王营养之最。黑小麦是世界上珍贵的小麦品种,是黑色保健食品之一。由于营养成分丰富且含量高,被营养专家称补钙、富硒、高碘、优蛋白营养麦。
本发明使用的石磨黑小麦面粉和石磨黑荞麦面粉是在继承传统石磨生产工艺:去杂筛理-吸石-洗麦-润麦-剥皮-磨制-分级-包装上,利用现代科技开发出的机械传动石磨加工而成,它不添加任何增白剂及化学制剂,避免了由于电磨的高速、高温、高压对黑小麦和黑荞麦营养成分造成的破坏,充分保持了黑小麦和黑荞麦的本色及纯正小麦香味,不仅面筋含量高、营养成分多,而且粉质细腻,麦香浓郁,又保留了黑小麦和黑荞麦所富含的多种微量元素。本发明生产出来的挂面呈淡紫色,麦香浓郁,风味独特,耐煮性好,煮熟后不糊,不粘牙、口感不粘、不牙碜,柔滑爽口,富含人类所需的多种微量元素及其他营养,具有滋阴润肺、延缓衰老、益气养血、增强免疫力、改善营养性贫血、健脑养神等保健功能,是集营养和食疗于一体的养生挂面。
具体实施方式
下面结合具体实施例对本发明作进一步的说明。
实施例
一种石磨黑小麦养生挂面,由下列重量份的原料制成:95份石磨黑小麦面粉、35份石磨黑荞麦面粉、15份黑木耳粉、12份桑葚粉、10份黑李子汁、12份覆盆子汁、8份老鹰茶、10份枸杞子、10份红薯藤、6份马齿苋、8份南瓜花、5份何首乌、6份红薯叶、4份田七、4份茯苓、1份精盐、0.3份食碱。
石磨黑小麦养生挂面的制备方法,包括以下步骤:
(1)将老鹰茶、枸杞子、红薯藤、马齿苋、南瓜花、何首乌、红薯叶、田七、茯苓放入其总重量的12倍热水中煎煮40 min,温度控制在90℃,然后离心分离,弃去废渣,再过滤即得煎煮液;
(2)将剩余配料放入和面机内,加入煎煮液,再加入适量的温水,混合搅拌30min,使之形成面团,和面时要注意黑豆粉在调制面团中的均匀性;
(3)在熟化机上苫—层湿布,把和好的面团放入熟化机内,熟化机转速为8 r/min,保持面团温度30℃,静置30min;
(4)把经过和面、熟化的面料辊轧成二块面带,再通过一组轧辊将其合压成一块面带,连续通过3次轧辊,逐步压薄到0.8毫米厚,切成宽2.0毫米的面条;
(5)采用多排隧道式烘干后切成长200毫米的面条,烘干切断后,凉至室温包装即可。

本实施例制备出来的石磨黑小麦养生挂面,色泽为淡紫色,无霉味、酸味及其他异味,无外来杂质,不整齐度为5%,其中自然断条率为6%;水分含量为13.2%,脂肪酸值(湿基)为32,盐分(以氯化钠计)为1%。铅(以Pb计)为0.12毫克/千克,砷(以As计)为0.15毫克/千克卫;细菌总数为456个/克,大肠杆菌群为14个/100克,致病菌不得检出。
