目前市场上挂面,都是以小麦、豆类、鸡蛋、各类蔬菜加工制成的营养挂面,其所含微量元素不足,人们食用这种单一挂面,缺硒而引起会引起肌肉萎缩、心血管和肝脏疾病,缺钙会引起骨质疏松,缺铁造成缺铁性贫血;易疲劳;脸色和指甲苍白;手脚发凉;免疫力和抗感染能力降低;儿童发育迟缓,智力受损;心跳加快;食欲下降;头晕;导致癌症、心脏病剧增等。
小麦,又称富硒麦。众所周知,黑色作物产品含有黑色素,具有高营养、高滋补、高免疫之功能而身价倍增。富硒麦问世后之所以倍受青睐,就是因为黑小麦表皮黑色素的存在可有效地消除人体内自由基,减少脂肪堆积,有效地防止可见光和紫外线辐射,有效抑制99%的亚硝酸致癌物质的形成。富硒黑小麦粉中人体必需氨基酸、蛋白质、和矿物营养元素硒、钙、铁和锌的含量远高于普通小麦粉。尤其是硒的含量是普通小麦粉的3-5倍,属于预防肿瘤的最佳含量范围。此外,清除自由基的生物黄酮以及能够预防肠道疾病的活性多糖均远高于普通小麦粉。经国家农业部谷物品质监督检验测试中心检测表明:富硒黑小麦面粉属纯天然富硒、高钙、高蛋白、高营养、粗纤维的食品,因此具有重要的营养保健、延年益寿、防癌、降血糖、降血脂、减肥等功能。

石磨富硒黑小麦粉95-97、青稞粉2-3、茯苓1-2、槲叶0.5-1、马齿苋1-2、虎皮草1-2、苦草1-2、菱角茎1-2、薏仁3-5、豆腐乳1-2、山药3-5、魔芋粉3-5、蓝莓汁0.4-0.6、精盐1-2、食碱0.2-0.3。
一种富硒黑小麦长寿面的制备方法,包括以下步骤:
(1)将茯苓、槲叶、马齿苋、虎皮草、苦草、菱角茎混合水提2-3次,合并滤液,加入青稞粉、魔芋粉,搅拌成糊状;将山药与薏仁混合,加水打浆,加入豆腐乳,60-80℃下搅拌混合2-4分钟,与上述糊状物混合,加入蓝莓汁,搅拌均匀,得营养液;
(2)将上述营养液与除了石磨富硒黑小麦粉以外的各原料混合,在20-30℃下搅拌混合10-15分钟,得配料;
(3)将上述配料放入和面机内,加入石磨富硒黑小麦粉,混合搅20-30min,使之形成面团;
(4)把和好的面团放入熟化机内,熟化机转速为5-10 r/min,保持面团温度25-30℃,静置20-30min;
(5)把经过和面、熟化的面料辊轧成二块面带,再通过一组轧辊将其合压成一块面带,连续通过2-3次轧辊,逐步压薄到0.8-1.0毫米厚,切成宽1.8-2.0毫米的面条;
(6)采用多排隧道式烘干后切成长200-220毫米的面条,烘干切断后,凉至室温包装即可。

一种富硒黑小麦长寿面的制备方法,包括以下步骤:
(1)将茯苓、槲叶、马齿苋、虎皮草、苦草、菱角茎混合水提3次,合并滤液,加入青稞粉、魔芋粉,搅拌成糊状;将山药与薏仁混合,加水打浆,加入豆腐乳,80℃下搅拌混合4分钟,与上述糊状物混合,加入蓝莓汁,搅拌均匀,得营养液;

本实施例制备出来的富硒黑小麦长寿面,色泽为淡紫色,无霉味、酸味及其他异味,无外来杂质,不整齐度为5%,其中自然断条率为6%;水分含量为12.2%,脂肪酸值(湿基)为32,盐分(以氯化钠计)为1%。铅(以Pb计)为0.12毫克/千克,砷(以As计)为0.15毫克/千克;细菌总数为456个/克,大肠杆菌群为14个/100克,致病菌不得检出。
Claims (3)
1.一种富硒黑小麦长寿面,其特征在于它是由下列重量份的原料制成:
石磨富硒黑小麦粉95-97、青稞粉2-3、茯苓1-2、槲叶0.5-1、马齿苋1-2、虎皮草1-2、苦草1-2、菱角茎1-2、薏仁3-5、豆腐乳1-2、山药3-5、魔芋粉3-5、蓝莓汁0.4-0.6、精盐1-2、食碱0.2-0.3。
2.一种如权利要求1所述的富硒黑小麦长寿面的制备方法,其特征在于包括以下步骤:
(1)将茯苓、槲叶、马齿苋、虎皮草、苦草、菱角茎混合水提2-3次,合并滤液,加入青稞粉、魔芋粉,搅拌成糊状;将山药与薏仁混合,加水打浆,加入豆腐乳,60-80℃下搅拌混合2-4分钟,与上述糊状物混合,加入蓝莓汁,搅拌均匀,得营养液;
(2)将上述营养液与除了石磨富硒黑小麦粉以外的各原料混合,在20-30℃下搅拌混合10-15分钟,得配料;
(3)将上述配料放入和面机内,加入石磨富硒黑小麦粉,混合搅20-30min,使之形成面团;
(4)把和好的面团放入熟化机内,熟化机转速为5-10 r/min,保持面团温度25-30℃,静置20-30min;
(5)把经过和面、熟化的面料辊轧成二块面带,再通过一组轧辊将其合压成一块面带,连续通过2-3次轧辊,逐步压薄到0.8-1.0毫米厚,切成宽1.8-2.0毫米的面条;
(6)采用多排隧道式烘干后切成长200-220毫米的面条,烘干切断后,凉至室温包装即可。
3.根据权利要求2所述的一种富硒黑小麦长寿面的制备方法,其特征在于,所述的营养液与石磨富硒黑小麦粉的重量比为1:1.5-2。
