本发明公开了一种保健竹笋挂面的加工方法,通过对竹笋进行卤煮、喷雾干燥制得竹笋粉,然后经过挂面加工工艺制得成品,其中对竹笋进行卤煮的水中,每1000质量份的水中,含有以下质量份的中药成分:陈皮7-10、仓术6-8、蒲公英7-9、生姜4-7、大蓟8-10、木瓜叶6-9、鬼针草5-7、向日葵花盘6-8、苹果叶3-5。本发明方法生产的保健竹笋挂面,口感好、筋道足,加工方法简单,可实现连续化生产;原料中所加入的竹笋,主要成分包括蛋白质、氨基酸、脂肪、糖类、及多种微量成分等,均为人体所必须的营养成分;陈皮、苍术、生姜、大蓟等均能够增强人体免疫能力,有效改善人体亚健康状况,对人体有益。

挂面在我国传统的面食中具有举足轻重的地位,随着人们生活水平的日益提高,保健挂面逐步走入人们的生活,更加受到青睐。竹笋是一种色香味俱全的保健佳品,两者结合,可生产出一种保健竹笋挂面。
发明内容
本发明目的在于提供一种保健竹笋挂面的加工方法。
本发明是通过以下技术方案实现的:
一种保健竹笋挂面的加工方法,其特征在于包括以下制作步骤:
(1)将新鲜竹笋去皮后,将竹笋放入锅中,加2-3倍质量份的水烧开后,用小火卤煮30-40分钟,其中,每1000质量份的水中,含有以下质量份的中药成分:陈皮7-10、仓术6-8、蒲公英7-9、生姜4-7、大蓟8-10、木瓜叶6-9、鬼针草5-7、向日葵花盘6-8、苹果叶3-5;卤煮完成后的竹笋,连卤煮水一起打成浆,喷雾干燥,过120-140目筛,得竹笋粉;
(2)将0.5-0.8质量份的食用碱溶于适量的水中,然后用其和70-80质量份的面粉,和面的过程中,加入4-6份的猪油、1-3份的食用盐和10-15份的竹笋粉,充分搅拌均匀,然后进行20-30分钟熟化,熟化完成后的面团经挂面加工机制作成挂面,即得。

一种保健竹笋挂面的加工方法,其特征在于包括以下制作步骤:
(1)将新鲜竹笋去皮后,将竹笋放入锅中,加3倍质量份的水烧开后,用小火卤煮40分钟,其中,每1000质量份(克)的水中,含有以下质量份(克)的中药成分:陈皮10、仓术8、蒲公英8、生姜5、大蓟8、木瓜叶7、鬼针草5、向日葵花盘8、苹果叶5;卤煮完成后的竹笋,连卤煮水一起打成浆,喷雾干燥,过120-140目筛,得竹笋粉;
(2)将0.8千克的食用碱溶于适量的水中,然后用其和80千克的面粉,和面的过程中,加入5千克的猪油、2千克的食用盐和15千克的竹笋粉,充分搅拌均匀,然后进行30分钟熟化,熟化完成后的面团经挂面加工机制作成挂面,即得。
