Abstract
本发明提供了一种鲜虾酱,由下述原料制备而成:虾肉、白糖、盐、味精、菜籽油、剁椒酱、豆瓣酱、甜面酱、山楂酱、桂丁、大料、公丁香、甘草、核苷酸、山梨酸钾、纯净水。本发明所述鲜虾酱能提供优质蛋白质、钙和脂肪酸,营养丰富,同时本发明香辣味美,能增进食欲也是佐餐良品。

本发明涉及一种鲜虾酱,属于食品技术领域。
背景技术
虾酱是中国沿海地区、香港以及东南亚地区常用的调味料之一,是用小虾加入盐,经发酵磨成粘稠状后,做成的酱食品。但是,传统虾酱无法满足大众口味,使用的范围也很有限。
发明内容
本发明的目的是针对现有技术存在的不足,提供一种鲜虾酱。
为实现上述目的,本发明采用的技术方案是:
一种鲜虾酱,包括如下质量份数原料:虾肉30-40份,白糖8-10份,盐15-20份,味精8-10份,菜籽油25-30份,剁椒酱10-16份,豆瓣酱15-20份,甜面酱10-16份,山楂酱3-5份,桂丁4-6份,胡椒3-5份,公丁香6-8份,甘草3-5份,核苷酸1-3份,山梨酸钾2-4份,纯净水7-9份。
所述的鲜虾酱,包括如下质量份数原料:虾肉30份,白糖8份,盐15份,味精8份,菜籽油25份,剁椒酱10份,豆瓣酱15份,甜面酱10份,山楂酱3,桂丁4份,胡椒3份,公丁香6份,甘草3份,核苷酸1份,山梨酸钾2份,纯净水7份。

虾肉30份,白糖8份,盐15份,味精8份,菜籽油25份,剁椒酱10份,豆瓣酱15份,甜面酱10份,山楂酱3份,桂丁4份,胡椒3份,公丁香6份,甘草3份,核苷酸1份,山梨酸钾2份,纯净水7份。制作本发明时,需将本发明所需香料洗好备用,后将油放入冷锅中中烧热,下虾肉炒熟至变色,放入豆瓣酱、甜面酱、山楂酱等调料,继续翻炒3分钟即可。
实施例二:

虾肉35份,白糖9份,盐17.5份,味精9份,菜籽油27.5份,剁椒酱13份,豆瓣酱17.5份,甜面酱13份,山楂酱4份,桂丁5份,胡椒4份,公丁香7份,甘草4份,核苷酸2份,山梨酸钾3份,纯净水8份。制作本发明时,需将本发明所需香料洗好备用,后将油放入冷锅中中烧热,下虾肉炒熟至变色,放入豆瓣酱、甜面酱、山楂酱等调料,继续翻炒5分钟即可。
