本发明涉及食品加工领域,具体地说是涉及一种香芋龙须面粉及其制备方法。
背景技术
面粉是我国居民喜爱的传统主食。面食不仅是我国的主要食物资源,其丰富的烹饪制作方式也是我国饮食文化的重要标志。面粉消费人群和地区的高覆盖率及相对较低的强化技术壁垒使得面粉成为营养强化的首选食物载体之一。我国是一个面粉消费大国,目前我国的面食加工主要以精制面粉为主,在营养方面其营养素不能满足人体需要,产品比较单一,主要以小麦面粉为主。随着人们生活水平的提高,以及保健意识的加强,具有保健功能的主食越来越受人们的欢迎,这也是我国改善公众营养状况的主要途径之一。
香芋营养丰富,色、香、味俱佳,曾被认为蔬菜之王。据测定,每百克鲜香芋,含蛋白质5.15克,脂肪0.28克,碳水化合物12.71克,钙170毫克,磷80毫克。其蛋白质含量为山药的2.1倍。食之有散积理气、解毒补脾、清热镇咳之药效。

为解决上述问题,本发明提供了一种香芋龙须面粉及其制备方法。
本发明所采取的技术方案为:
一种香芋龙须面粉,其特征在于,由以下重量份的原料组成:小麦粉300-320、薏米20-25、香芋16-24、红薯淀粉14-17、芒果40-45、苦瓜粉3-4、乳清粉6-7、玉米油8-10、山慈菇16-18、龙须菜30-34、菱茎6-7、罗布麻叶3-5、榕须2-3、三筒管1-2、鹅管石2-3、营养添加剂8-9;其中营养添加剂由下列重量份的原料组成:海参冻干粉5-6、莲子芯7-8、杨桃汁18-20、甜杏仁4-6、齐墩果3-5、西兰花8-10、紫菜粉2-3、当归叶1-2、牛蒡粉3-4、鹿角粉5-6、红参须2-3、麦冬7-8,制备方法为:将莲子芯、甜杏仁、齐墩果、西兰花、当归叶、红参须、麦冬加适量水煮沸后文火煎煮40-50分钟,滤去残渣后得煎煮液,然后加入海参冻干粉、杨桃汁、紫菜粉、牛蒡粉、鹿角粉、继续加热浓缩至煎煮液体积的五分之一,烘干后粉碎即得。

(1)将菱茎、罗布麻叶、榕须、三筒管、鹅管石加5-6倍的水文火煎煮50-60分钟,过滤除渣,然后小火熬稠,烘干后研成粉末,得到保健中药粉;
(2)薏米、香芋洗净后放入水中浸泡20-30分钟,捞出后一起放进笼蒸制熟香,然后放入水中研磨成浆,过滤去渣后加入玉米油,滤液喷雾干燥得营养粉;
(3)取芒果果肉,山慈菇、龙须菜洗净后一起加适量水打磨成浆液,然后进行汽蒸熟化,冷却后送入冷冻干燥机,干燥后磨成粉,得到风味冻干粉;
(4)将面粉与步骤(1)保健中药粉、步骤(2)营养粉、步骤(3)风味冻干粉及其他剩余成分混合搅拌均匀,过80-100目筛,烘干后冷却即得。
