Abstract

本发明涉及一种快餐干银耳及其制备方法,属于快餐食品技术领域。本发明是在前期工作的基础上,提供一种新的快餐干银耳。所述快餐干银耳水含量为3-5%,复水前快餐干银耳保持银耳叶片原有的外形(与生银耳或烘干前外形体积一样),且断面为蜂窝状,复水后体积增大5-20%,但是基本形状不变。复水时间很短,不超过5分钟。最快可在1分钟复水。而且在制备过程中没有有益成分的流失,保留银耳原有的外形和风味。在旅游、外出时用开水浸泡即可食用。加入枸杞、红枣、冰糖等将与熬煮的银耳粥一样美味。

快餐干银耳及其制备方法
技术领域
本发明涉及一种快餐干银耳及其制备方法,属于快餐食品技术领域。
背景技术
银耳含有蛋白质、脂肪、碳水化合物、粗纤维、无机盐、维生素以及多种氨基酸,具有抗衰老、抗肿瘤、抗放射作用、抗炎、促进蛋白质和核酸的合成。经常食用银耳有助于身体健康。我国药典记载:银耳有滋补强壮、扶正固本之功效,能滋阴润肺、益脾肾。银耳的药食价值高,被人们誉为“山珍”。
但是传统的熬煮方法需要花费大量时间,熬煮的银耳也不便携带,大大影响了人们食用银耳。对现代快节奏的生活以及经常外出旅行的人们来说,需要方便快捷的银耳食品。
中国专利申请98112239.6公开了一种快餐干银耳及其制备方法,干银耳浸泡、充分吸水发胀、清洗后装入有清水的容器内,加温至银耳熟化变软,维持温度60-100℃,保温1-24小时,精确碎片,送入干燥箱烘干,烘干温度50-140℃,冷却即得。银耳要经过碎片工艺,而且干燥后的干银耳呈不规则块状,食用时需要熬煮3-5分钟变软、熟化。食用不方便且无法保留银耳的原有形状和风味。
中国专利申请02104306.X公开了一种方便银耳,经过干燥、粉碎、膨化等等已经不再是银耳原有的风味。中国专利申请200410013227.6号公开了一种银耳速食冲击,它是将银耳磨成细粉添加多种辅料制成,也已经不再是银耳原有风味。
本发明的发明人前期研究工作“ZL 02113746.3”提供了一种速泡快餐干银耳的制备方法,包括以下步骤:
(1)将生银耳去蒂、去杂质,洗净;
(2)将上述得到的生银耳放入反应罐,反应罐中压力为0.7-0.8MPa,温度200-400度,
加食用酒精浸泡1-4小时,得到熟银耳;
(3)将上述熟银耳取出后,放入离心机脱水,烘干成成品。
制得的银耳在旅游、外出时用开水浸泡即可食用。浸泡后的银耳保留银耳原形状,且软度适宜,口感较好。
但是,该方法成本较高,需要使用大量的食用酒精,且经食用酒精浸泡易造成其中的有益成分流失。另外,乙醇的大量使用也给工业化生产带来安全隐患。虽然该方法制备的银耳浸泡后(复水后)是叶片完全展开,是银耳原形状。但是由于经离心机脱水后的干银耳体积皱缩,呈不规则块状,不是银耳形状叶片。
发明内容
本发明的目的在于:在前期工作的基础上,提供一种新的快餐干银耳。
本发明的技术方案:所述快餐干银耳水含量为3-5%,复水前快餐干银耳保持银耳叶片原有的外形,且断面为蜂窝状(与烘干前体积基本一样)。
快餐干银耳复水后体积有所增大,体积增大5-20%,但是基本形状不变。
本发明快餐银耳的复水时间通常为1-5min。较好的是1-3分钟。最快1分钟即可复水软化。
本发明快餐银耳的制备方法:
(1)将生银耳清洗干净后熟化;
(2)熟化后的银耳经过微波真空冷冻干燥即得。
其中所述的熟化是指:微波熟化或反应罐中加水加热熟化。
进一步地,反应罐中熟化的加水量为使得待熟化物料淹没即可。反应压力为0.4-0.8MPa,温度为100-200℃,熟化时间20-60分钟。也可在常压100-150℃下进行熟化60-120分钟。
其中,为了制得均匀的银耳叶片,可对银耳进行切整、筛选。可切整生银耳,也可在熟化后切整。
上述步骤(2)中所述的微波真空冷冻干燥是指使用微波真空冷冻干燥设备进行干燥。
将熟化后的银耳在低温0~-50℃(优选的是-10℃~-30℃)下冻结,然后在真空环境下(13-300Pa,优选50-200Pa)冻结的水分子直接升华成为水蒸气逸出。由于干燥前银耳处于低温冻结状态,升华过程不会因脱水而发生浓缩现象。干燥后的银耳呈干海棉多孔状,体积变化不大,且极易溶于水而恢复原状。
升华出来的水蒸气以一定的流速抵达凝结器表面结成冰霜,升华过程需要的热量由微波提供。微波频率为2450±50HZ,微波输出功率根据设备大小确定,通常为4-30KW。
本发明的有益效果:采用本发明的方法制备得到的快餐银耳复水前保留银耳叶片的原有外形。复水时间很短,不超过5分钟。最快可在1分钟复水。复水后体积有所增大,体积增大5-30%,但是基本形状不变,而且在制备过程中没有有益成分的流失,保留银耳原有的外形和风味。在旅游、外出时用开水浸泡即可食用。加入枸杞、红枣、冰糖等将与熬煮的银耳粥一样美味。
具体实施方式
以下通过具体实施例的方式对本发明做进一步详述,但不应理解为是对本发明的限制。
快餐银耳的制备方法:(1)将生银耳清洗干净后熟化;(2)熟化后的银耳经过微波真空冷冻干燥即得。
其中所述的熟化可以通过微波熟化或反应罐中加热熟化。
反应罐中加热熟化可在反应压力为0.4-0.8MPa,温度100-200℃下20-60分钟进行熟化。也可在常压100-150℃下熟化60-120分钟。
其中,为了制得均匀的银耳叶片,可对银耳进行切整、筛选。可切整生银耳,也可在熟化后切整。
上述步骤(2)中所述的微波真空冷冻干燥是指使用微波真空冷冻干燥设备进行干燥。温度为0~-50℃,优选的是-10℃~-30℃。真空度通常维持在13-300Pa,优选50-200Pa。其微波频率为2450±50HZ,微波输出功率为根据设备大小(10KW-40KW)。
本发明熟化后的银耳在低温下冻结,然后在真空环境下是冻结的水分子直接升华成为水蒸气逸出。由于干燥前银耳处于低温冻结状态,升华过程不会因脱水而发生浓缩现象。干燥后的银耳水含量为3-5%,呈干海棉多孔状,体积变化不大,且极易溶于水而恢复原状。复水时间通常为1-5min。较好的是1-3分钟。

其中,对比例是根据发明人以前的工作,ZL 02113746.3的方法制备。
其中复水时间是由以下方法测定:取样品2g置于带盖保温容器中加入85℃以上的水300ml,同时开始用秒表计时。用玻璃片夹紧银耳,观察糊化状态无明显硬心时记录的时间即是复水时间。
综上所述,采用本发明方法制备得到的快餐干银耳复水前即是银耳原有的外形,复水时间短,方便快捷,为快餐领域提供了一种新的选择。

Claims (10)

1.一种快餐干银耳,其特征在于:所述快餐干银耳水含量为3-5%,复水前快餐干银耳保持银耳叶片原有的外形,且断面为蜂窝状。
2.根据权利要求1所述的快餐干银耳,其特征在于:所述快餐干银耳复水后体积增大5-20%,但是基本外形不变。
3.根据权利要求1或2所述的快餐干银耳,其特征在于:所述快餐干银耳的复水时间为1-5min。
4.根据权利要求3所述的快餐干银耳,其特征在于:所述快餐干银耳的复水时间为1-3分钟。
5.权利要求1-4任一项所述的快餐干银耳的制备方法,其特征在于由以下步骤完成:
(1)将生银耳清洗干净后熟化;
(2)熟化后的银耳经过微波真空冷冻干燥即得。
6.根据权利要求5所述的快餐干银耳的制备方法,其特征在于:步骤(2)所述的微波真空冷冻干燥是使用微波真空冷冻干燥设备进行干燥。
7.根据权利要求6所述的快餐干银耳的制备方法,其特征在于:微波频率为2450±50HZ,真空度维持在13-300Pa,干燥物料温度控制在-0~-50℃。
8.根据权利要求7所述的快餐干银耳的制备方法,其特征在于:真空度为50-200Pa,干燥物料温度控制在-10℃~-30℃。
9.根据权利要求5-7任一项所述的快餐干银耳的制备方法,其特征在于:步骤(1)所述的熟化是指:生银耳用水充分浸泡2-6小时后进行微波熟化或反应罐中加水加热熟化。
10.根据权利要求9所述的快餐干银耳的制备方法,其特征在于:反应罐中加水加热熟化的压力为0.4-0.8MPa,温度为100-200℃,熟化时间20-60分钟,或在常压100-150℃下熟化60-120分钟。
