发明背景

本文所用的术语“饮料”指适于人消费的基本上水性的可饮用的组合物。饮料优选包含至少为饮料的85重量%的水,更优选包含至少90重量%的水,最优选包含至少95重量%-99.9重量%的水。
茶固体
本文所用的术语“茶固体”指可以从植物中国茶(Camellia sinensisvar.sinensls)和/或普洱茶(Camellia sinensis var.assamica)的叶子中提取的干物质。叶子可以经历所谓“发酵”步骤,在发酵步骤中叶子被在“红茶”加工的早期阶段中释放的特定内源性酶氧化。这种氧化作用甚至可以用诸如氧化酶、漆酶和过氧化物酶的外源性酶的作用加以补充。或者,叶子可能经部分发酵(“乌龙茶”)或基本上未发酵(“绿茶”)。
茶饮料
本文所用的术语“茶饮料”指包含至少为饮料重量0.01重量%的茶固体的饮料。茶饮料优选包含0.04%-3%的茶固体,更优选包含0.06%-2%的茶固体,最优选包含0.1%-1%的茶固体。
儿茶素类
本文所用的术语“儿茶素类”用作儿茶素、没食子儿茶素、儿茶素没食子酸酯、没食子儿茶素没食子酸酯、表儿茶素、表没食子儿茶素、表儿茶素没食子酸酯、表没食子儿茶素没食子酸酯及其混合物的通称。
饮料中的儿茶素类和咖啡因的测定
通过如下的反相HPLC同时测定饮料中的儿茶素类和咖啡因的量:
样品制备
取9ml饮料,加入1.12ml乙腈,以及1.12ml含2.5mg/ml EDTA和2.5mg/ml抗坏血酸的蒸馏水溶液。然后将获得的溶液倾析到微离心管中并以14000g的相对离心力离心10分钟。
HPLC分析条件
色谱柱:Luna Phenyl hexyl 5μ,250×4.60mm
流速:1ml/min
柱温箱温度:30℃
溶剂:A:含有2%乙酸的乙腈
B:含有2%乙酸和0.02mg/ml EDTA的水

定量:相对于每日构建的校正曲线的峰面积。校正曲线由咖啡因构建,且儿茶素类的浓度使用单个儿茶素对于咖啡因的相对响应因子计算(来自ISO儿茶素方法-ISO/CD 14502-2)。单个的咖啡因标准品(Sigma,Poole,Dorset,UK)用作峰鉴别标志。
糖
本文所用的术语“糖”专指可消化的单糖和二糖。这包括来自茶固体、牛奶和果汁的任何糖。
总能量含量
饮料的总能量含量(E)定义为在100g饮料中存在的成分的可代谢能量的总和。总能量含量使用等式1计算:
其中,cj为100g饮料中的成分j的质量,fj为成分j的热转换系数。
对于可消化的糖类和蛋白质,fj一般为每克16.7kJ(4.0kcal)。对于脂肪,fj为每克37.7kJ(9.0kcal)。
热转换系数可以容易地由成分生产商提供。或者,该系数可以通过分析和比较饮食材料和排泄物的组成和燃烧热来确定(见,D.A.T.Southgate和J.V.G.A.Durnin,″Calorie conversion factors.Anexperimental reassessment of the factors used in the calculation of theenergy value of human diets.″,British Journal of Nutrition,1970,24,pp.517-535)。
非营养性甜味剂
非营养性甜味剂包括高甜度甜味剂、糖醇及其混合物。高甜度甜味剂是那些具有至少10、更优选30-30000的相对甜度的物质。高甜度甜味剂包括阿斯巴甜(aspartame)、糖精(saccharin)、安赛蜜(acesulfameK)、阿力甜(alitame)、索玛甜(thaumatin)、环己氨基磺酸盐(cyclamate)、甘草皂苷(glycyrrhizin)、甜菊苷(stevioside)、新橙皮苷(neohesperidine)、三氯蔗糖(sucralose)、莫内林(monellin)、纽甜(neotame)、罗汉果苷V(mogroside V)、MGGR、巴西甘草甜素I-V(periandrin I-V)、莱苞迪甙A(rebaudioside A)、甜菊提取物(stevia extract)及其混合物。糖醇包括HSH(氢化淀粉水解物,也叫聚多羟糖醇)、赤藓糖醇(eythritol)、阿拉伯糖醇、甘油、木糖醇、山梨糖醇、甘露糖醇、乳糖醇、麦芽糖醇、异麦芽糖醇(isomalt)、帕拉金糖醇(palatinit)及其混合物。
甜度
如本文所定义的,相对甜度Ri指物质i相对于相同重量蔗糖的甜度的甜度(即,蔗糖的相对甜度为1)。这是食品工业中表示甜度的通用方法。表1给出了特定的非营养性甜味剂的相对甜度。
存在量为mi(饮料的重量百分比)的非营养性甜味剂i以蔗糖计的甜度Si,为相对甜度和该存在量的乘积,即Si=Rimi。因此,对于非糖甜味剂的混合物,以蔗糖计的甜度(S)由等式2定义:

发明概述
第一方面,本发明提供了具有低于17kJ/100g的总能量含量的饮料,其中,该饮料含有含量(C)为饮料的0.04重量%-0.4重量%的儿茶素类,和满足下面条件的量的非营养性甜味剂:
34<(S/C)<115,
其中,S为非营养性甜味剂以蔗糖计的甜度。
我们发现,这样的饮料提供了在甜味和苦味方面良好均衡的味道。优选(S/C)比例低于105,更优选低于95,最优选低于85。也优选(S/C)比例至少为37,更优选至少为40,最优选至少为45。
我们发现,本发明的饮料即使在相对低水平的甜度下具有良好均衡的味道是可能的。因此,优选甜度(S)低于饮料的10重量%,更优选低于饮料的7重量%,最优选低于饮料的5重量%。也优选甜度至少为饮料的1重量%,更优选至少为饮料的2重量%,最优选至少为饮料的3重量%。
令人惊奇的是,我们还发现,本发明的饮料即使在缺乏诸如奎尼酸的苦味掩饰剂的情况下也具有良好均衡的味道。因此,本发明的饮料优选不含加入的奎尼酸。
为了将饮料的健康益处最大化,优选儿茶素类的量(C)至少为饮料的0.05重量%,更优选至少0.06重量%。为了使苦味最小,优选儿茶素类的量为低于饮料的0.3重量%,更优选低于0.2重量%。
饮料的低能量含量允许在不提供不健康量的热量的情况下,提供儿茶素类的健康益处。优选总能量含量低于5kJ/100g,更优选低于2kJ/100g,最优选为0.0001-1kJ/100g。
因为饮料的甜度主要由非营养性甜味剂提供,所以优选饮料包含低于饮料的0.25重量%的糖,更优选低于0.1重量%的糖,最优选为0.001重量%-0.05重量%的糖。
非营养性甜味剂的浓度取决于上述的儿茶素类的量和甜味剂的相对甜度。但是,典型地,饮料包含占饮料的0.00001重量%-10重量%的非营养性甜味剂,更优选0.001重量%-1重量%,最优选0.01重量%-0.1重量%。
为了使甜味剂的能量贡献最小化,优选非营养性甜味剂包含高甜度甜味剂。优选非营养性甜味剂包含占非营养性甜味剂的至少50重量%的高甜度甜味剂,更优选至少75重量%,最优选90重量%-100重量%。由于其全面均衡的(well-rounded)味道,最优选的高甜度甜味剂为三氯蔗糖、阿斯巴甜、安赛蜜或其混合物。
我们已发现甜味剂与儿茶素类的所述比例尤其适合产生具有清新的茶风味而不是太苦的茶饮料。因此,优选饮料为茶饮料,优选绿茶饮料。
从微生物稳定性和口味的角度,优选饮料具有酸性pH。尤其地,pH(在20℃)可以为2-5,更优选2.5-4.5,最优选3-4。
合适的酸化剂包括诸如柠檬酸、苹果酸、酒石酸、抗坏血酸的有机酸、它们的盐及它们的混合物。当酸包括苹果酸和/或其盐时,可以提供特别均衡的味道。柠檬酸(和/或其盐)、苹果酸(和/或其盐)和抗坏血酸(和/或其盐)的混合物也可以提供良好的味道。典型地,有机酸和/或盐在饮料中的浓度为0.001%-1%,更优选0.01%-0.5%。
饮料优选包含香料。合适的香料包括天然的和合成的水果香料,和/或天然的或合成的草药香料。水果香料的例子包括苹果、桃、梨、柠檬、酸橙、桔子、葡萄柚、蔓越桔(cranberry)、橙子、草莓、葡萄、猕猴桃(kiwi)、菠萝、西番莲果、芒果、番石榴、覆盆子和樱桃。草药香料的例子包括茉莉、甘菊、玫瑰、薄荷、山楂、菊花、木犀属植物、芙蓉、接骨木花(elderflower)和马鞭草。令人惊奇的是,我们也发现,菠萝香料(天然的或合成的)在掩盖儿茶素类的苦味方面尤其有效,因此,尤其优选香料包括菠萝香料。菠萝香料可以是天然的或合成的。菠萝香料优选包含己酸2-丙烯酯。香料的量优选占饮料的0.001重量%-0.5重量%,更优选0.05重量%-0.19重量%。
饮料可以额外地或选择性地包含一种体重控制活性剂。合适的活性剂包括生物素、泛酸(维生素B5)、维生素B6、烟酸、镁、巴拉圭茶提取物、瓜拉纳(guarana)提取物、羟基柠檬酸及其混合物。
在最优选的实施方式中,饮料包含占饮料0.001重量%-0.1重量%的咖啡因,更优选0.005重量%-0.05重量%。由于已证明咖啡因有助于身体控制、尤其是控制体重和/或体型控制,因而咖啡因是特别优选的。
本发明的饮料可以用作药物或用于药物的制备。特别是,该饮料可以用来提供与儿茶素类的消费有关的任何益处,比如治疗和/或预防癌症、和/或治疗和/或预防心血管疾病。尤其优选使用该饮料来控制个人的体重和/或体型。例如,该饮料可用于向个人提供这些益处中的至少一种的方法,该方法包括向个人施用本饮料。优选经口施用本饮料。

5.加水使得达到需要的量。
6.将产生的溶液灌注到330ml的罐中并密封。
7.在桌上型(bench-top)巴氏灭菌器中、70℃用巴氏法对罐消毒10分钟。
罐装产品在+5℃储存一周,然后由品尝小组评价。结果如表3所示。

7.权利要求6所述的饮料,其中,所述高甜度甜味剂为三氯蔗糖、阿斯巴甜、安赛蜜或其混合物。
8.前述权利要求任一项所述的饮料,其中,所述饮料为茶饮料。
9.前述权利要求任一项所述的饮料,其中,所述饮料具有2-5的pH。
10.权利要求9所述的饮料,其中,所述饮料具有3-4的pH。
11.前述权利要求任一项所述的饮料,其中,所述饮料包含有机酸。
12.权利要求11所述的饮料,其中,所述有机酸包括苹果酸和/或其盐。
13.前述权利要求任一项所述的饮料,其中,所述饮料包含香料。
14.权利要求13所述的饮料,其中,所述饮料包含占饮料的0.001重量%-0.5重量%的香料。
15.权利要求13或权利要求14所述的饮料,其中,所述香料包括水果香料。
16.权利要求15所述的饮料,其中,所述水果为菠萝。
