Abstract
COMPOSIçõES CONGELADAS, COMPOSIçõES PARA A OBTENçãO DE UM PRODUTO DE ALIMENTO CONGELADO E USOS DE HIDROFOBINA Trata-se de uma composição congelada que inclui hidrofobina. Também é apresentado a uso da hidrofobina na inibição do crescimento de cristais de gelo e/ou na modificação do hábito de cristais de gelo em produtos de alimento congelados.
