Abstract
Un metodo de fabricacion de un producto alimenticio recubierto de miga que comprende las etapas de: formar una mezcla acuosa que comprende: una mezcla de harina que comprende una o m s harinas, bicarbonato de sodio, aditivos opcionales seleccionados de auxiliares de procesamiento, sales, colorantes y, agua; agregar la mezcla a un extrusor; agregar un agente de gelificacion acuoso al extrusor; extruir la mezcla resultante a una temperatura mayor que 100øC para formar un extrudado; permitir que el extrudado se expanda para formar un producto poroso; secar el producto, y moler el producto secado para formar una miga.
