Abstract

Se proporciona un método para fabricar hojuelas de cereal con propiedades de textura. Las hojuelas tienen una porosidad de 40-70 %, un grosor medio de la pared de 100-180 micras, un grosor de 0.5-2 mm, una longitud de 2-8 mm y un índice de absorción de líquido de 80-200 g de líquido por 100 g de hojuelas. El método implica cocer una masa en un extrusor, cortar la masa extrudida para obtener las hojuelas y, después, secar las hojuelas.
