Abstract

Se divulga un método para preparar una bebida de malta, sin alcohol, libre de turbidez. El método incluye formar una solucion de malta que contiene un coagulante y agua, ajustar el pH de la solucion de malta de modo que el pH de la solucion de malta sea menor que aprox. 4,0 y coagular la proteína del extracto de malta en la solucion de malta. La proteína coagulada de la solucion de malta se retira para formar una bebida de malta, libre de turbidez, refrescante. También se divulga un método para preparar una bebida estable al almacenamiento. El método incluye carbonatar una solucion con más de aprox. 1,5 volumenes de dioxido de carbono por volumen de bebida terminada; agregar un acidulante a la solucion de modo que la bebida terminada tenga un pH de desde aprox. 2,5 a aprox. 4,0; y agregar a la solucion un conservante químico. También se divulga una bebida de malta sin alcohol, estable al almacenamiento y libre de turbidez.
