Abstract
La presente invención proporciona una bebida fermentada basada en soya que tiene un contenido de agua de al menos 80% en peso, un contenido de proteína de soya de 0.5-8.0% en peso y un pH en el intervalo de 3.5-5.5, la bebida contiene además de 0.03 a 0.8% en peso de fibras celulósicas insolubles. El uso de fibras celulósicas en la bebida anteriormente mencionada produce una sensación bucal cremosa muy placentera y mejora significativamente la estabilidad en emulsión, típicamente reflejada por una velocidad reducida de sinéresis.
