Abstract
Description
通気部を有する包装体を備え、
該通気部の開口部の合計面積は、該包装体の表面積100cm2あたり0.02~5cm2であり、
該包装体は、内部に、調理済み麺類と、該麺類100質量部に対して1~10質量部の水とを含み、該調理済み麺類と該水は凍結されている、
麺類を提供する。
通気部を有する包装体(該通気部の開口部の合計面積は、該包装体の表面積100cm2あたり0.02~5cm2である)に、調理済み麺類と、該麺類100質量部に対して1~10質量部の水とを充填すること;および
該調理済み麺類と該水とを凍結させること、
を含む方法を提供する。
市販の乾燥スパゲティを歩留り230%まで茹でた後、冷水にさらして冷却した。水をよく切って180gずつをトレーに盛りつけ、表1に示す量の水を霧吹きで吹き付けてスパゲティ全体に付着させた。水付着後のスパゲティを-20℃で急速凍結した。直径0.1cmの円形の通気部(通気部の開口部面積0.00785cm2)を、100cm2あたり20箇所(包装体通気部の開口部の面積合計0.16cm2/100cm2)有する、強度12Nのポリエチレン製フィルム製包装体を準備した。この包装体に上記の凍結スパゲティを充填し、冷凍包装スパゲティを製造した。
製造例1~6の冷凍包装スパゲティを、電子レンジ500Wで中心部の品温が60℃になるまで加熱して、加熱時間を計測した。加熱後の包装体の破損の有無を確認した後、破損のないものについて、麺のなめらかさや食感を表2に記載の評価基準に従って、10人のパネラーにより評価した。評価結果の平均値を表1に示す。
包装体の通気部のサイズを表3のように変更した以外は、製造例4と同様の手順で、製造例9~14の冷凍包装スパゲティを製造した。
製造例9~14の冷凍調理済みスパゲティを、試験例1と同様の手順で評価した。結果を表3に示す。なお、表3には製造例4の結果を再掲する。
包装体を強度8、10または12Nのポリエチレン製フィルムに代えた以外は、製造例4と同様の手順で、製造例15~17の冷凍包装スパゲティを各120個製造した。
包装体の強度を調べた。製造例15~17の冷凍包装スパゲティの各20個ずつを別々にダンボールに梱包し、製造例毎に5個のダンボールを製造した。このダンボールを高さ60cmから5回落下させた後、開梱して包装体の破損状況を確認した。破損した包装体の個数を表4に示す。

通気部を有する包装体を備え、
該通気部の開口部の合計面積は、該包装体の表面積100cm2あたり0.02~5cm2であり、
該包装体は、内部に、調理済み麺類と、該麺類100質量部に対して1~10質量部の水とを含み、該調理済み麺類と該水は凍結されている、
麺類。 - 前記水は前記調理済み麺類の表面に付着している、請求項1記載の冷凍麺類。
- 前記包装体が突き刺し強度が10N以上の素材から製造されている、請求項1又は2記載の冷凍麺類。
- 前記通気部の開口部の最大長が0.1~5.0mmである、請求項1~3のいずれか1項記載の冷凍麺類。
- 前記通気部が、上記包装体のマイクロ波が照射される面に、上記包装体の表面積100cm2あたり5箇所以上設けられている、請求項1~4のいずれか1項記載の冷凍麺類。
- 前記通気部が円形である、請求項1~5のいずれか1項記載の冷凍麺類。
- 冷凍麺類のマイクロ波調理による品質低下を防止する方法であって:
通気部を有する包装体(該通気部の開口部の合計面積は、該包装体の表面積100cm2あたり0.02~5cm2である)に、調理済み麺類と、該麺類100質量部に対して1~10質量部の水とを充填すること;および
該調理済み麺類と該水とを凍結させること、
