Abstract

La presente invención implica procedimientos de preparación de un jugo dulce a partir de frutas de la familia Cucurbitaceae que comprende los pasos siguientes: (a) separar cáscaras y semillas del jugo; (b) acidificar opcionalmente los jugos (c) remover del jugo precursores de sabor desagradable; y (d) remover del jugo una fracción volátil extraíble con cloruro de metileno que contiene materiales de sabor desagradable. La presente invención también incluye jugos dulces de las frutas de la familia Cucurbitaceae que comprenden menos de alrededor de 100 ppm (base seca) de metionina y de alrededor de 0.1 a aproximadamente 15 (base seca) de glucósido de terpeno dulce.
