Description
Claims (5)
- 油槽内に貯えた揚げ油をヒータで加熱して、当該油槽内に投入した食材の揚げ調理を行うフライヤーであって、
前記油槽は、
前記ヒータが配設されると共に食材の揚げ調理が行われる上部油槽と、前記上部油槽の下部に当該上部油槽に連続して設けられると共に、前記食材から上部油槽内に放出された水分や揚げカスを沈降させて捕集する下部油槽と、を備え、
前記ヒータは、
前記上部油槽内を一乃至複数の調理領域に区分すると共に各調理領域を囲む側部ヒータと、各調理領域の底部に設けられた下部ヒータと、を備え、
前記側部ヒータに供給される電力を前記下部ヒータに供給される電力よりも大きく設定したことを特徴とするフライヤー。 - 前記側部ヒータ及び前記下部ヒータには、それぞれに独立したスイッチが設けてられており、各スイッチの操作により、前記側部ヒータ及び前記下部ヒータに対して別々通電できることを特徴とする請求項1記載のフライヤー。
- 前記上部油槽内の揚げ油を所定温度に保つべく前記側部ヒータ及び前記下部ヒータへの通電を制御する制御部と、前記上部油槽に対して食材が投入されたか否かを判断する食材検出手段を備え、
前記制御部は、前記食材検出手段によって前記上部油槽に食材が投入されたと判断された場合に、当該判断時後の所定時間だけ、前記下部ヒータの出力を当該判断時前の出力に対して抑制することを特徴とする請求項1記載のフライヤー。 - 前記食材検出手段は、前記上部油槽内の揚げ油の温度の低下速度が所定値を超えた場合に、当該上部油槽内に食材が投入されたと判断することを特徴とする請求項3記載のフライヤー。
- 前記油槽の周囲に設けられると共に前記下部油槽内の揚げ油を強制的に冷却する水冷ジャケットが設けられていることを特徴とする請求項1乃至4のいずれかに記載のフライヤー。
