水400mLにカラスタケ、カバノアナタケ、ノウタケを同じ割合にて混合した粉末5gを入れ、100℃以上の温度に加熱して濃縮させて200mLのキノコ濃縮液を用意した。
水400mLにカラスタケ粉末5gを入れ、100℃以上の温度まで煮詰めて200mLのカラスタケ濃縮液を用意した。
水400mLにカバノアナタケ粉末5gを入れ、100℃以上の温度まで煮詰めて200mLのカラスタケ濃縮液を用意した。
水400mLにノウタケ粉末5gを入れ、100℃以上の温度まで煮詰めて200mLのカラスタケ濃縮液を用意した。
水400mLにシイタケ粉末5gを入れ、100℃以上の温度まで煮詰めて200mLのキノコ濃縮液を用意した。
水400mLにヒラタケ粉末5gを入れ、100℃以上の温度まで煮詰めて200mLのキノコ濃縮液を用意した。
水400mLにマツタケ粉末5gを入れ、100℃以上の温度まで煮詰めて200mLのキノコ濃縮液を用意した。
水400mLにカラスタケキノコ粉末5gを入れ、100℃以上の温度まで煮詰めて200mLのキノコ濃縮液を用意した。
Claims (6)
- 鹿茸をカバノアナタケ、ノウタケ及びカラスタケ濃縮液よりなる群から選ばれたいずれか一種以上のキノコ濃縮液に浸し、当該キノコ濃縮液に浸した鹿茸を、煮込んだ穀物の中で発酵させることを特徴とする鹿茸の発酵方法。
- 前記穀物は、小麦または粟であることを特徴とする請求項1に記載の鹿茸の発酵方法。
- 前記穀物には、当該穀物の総重量のl0〜20%の生そば粉を加えることを特徴とする請求項2に記載の鹿茸の発酵方法。
- 前記キノコ濃縮液は、前記カバノアナタケ、ノウタケ及びカラスタケよりなる群から選ばれたいずれか一種以上のキノコの粉末を水に入れて煎じて得られたものであることを特徴とする請求項1に記載の鹿茸の発酵方法。
- 前記穀物を煮込むときに、前記キノコ濃縮液を加えることを特徴とする請求項1に記載の鹿茸の発酵方法。
- 前記発酵は、30〜45℃で5〜10日間行われることを特徴とする請求項1乃至5のいずれか一項に記載の鹿茸の発酵方法。
