Claims (2)
- (−)−カテキン−6−C−β−D−グルコピラノシド、(−)−カテキン−8−C−β−D−グルコピラノシド、(−)−カテキン−6−C−8−C−β−D−ジグルコピラノシドもしくは(−)−エピカテキン−6−C−8−C−β−D−ジグルコピラノシド、またはガラクトシド残基もしくは他の還元糖を有する同様なアグリコンであるフラボノイド糖付加生成物を含む、渋味および苦味に対する味改変剤。
- 請求項1に記載の味改変剤の製造方法であって、フラボノイドを含有する出発原料を、8から12のpHで糖と反応させる工程を含み、前記出発原料はカテキンまたはエピカテキンであり、前記糖はグルコースもしくはガラクトースまたは他の還元糖であることを特徴とする製造方法。
