Description
(1) 酵母細胞壁をアルカリ条件下で洗浄し、アルカリ加水分解した後、アルカリ加水分解物を酸性条件下で加熱後、固形物を除去することを特徴とする酵母水溶性多糖類の製造方法。
(2) 酵母細胞壁をアルカリ条件下で洗浄し、アルカリ加水分解した後に固液分離し、上清溶液を酸性条件下で加熱し、固形物を除去することを特徴とする酵母水溶性多糖類の製造方法。
(3) 前記アルカリ加水分解を、pH8.0〜14.0、70〜110℃の条件で行うことを特徴とする(1)または(2)に記載された酵母水溶性多糖類の製造方法。
(4) 前記酵母細胞壁が醸造用酵母またはパン酵母の細胞壁であることを特徴とする(1)または(2)に記載された酵母水溶性多糖類の製造方法。
(5) 前記アルカリ条件下での洗浄を、pH8.0〜14.0に調整後、加水しながら遠心分離機で固液分離することを特徴とする(1)または(2)に記載された酵母水溶性多糖類の製造方法。
(6) 前記酸性条件下での加熱を、pH2.5〜5.0、90〜140℃、15〜120秒で行うことを特徴とする(1)または(2)に記載された酵母水溶性多糖類の製造方法。
以下に実施例を示すが、本発明はこれらに限定されるものではない。
4℃まで冷却した麦茶は、粘性が高くなることがなく、酵母水溶性多糖類無添加の麦茶と同様に、通常の茶類として飲用することができた。
薄力粉 30.0g
バター 3.0g
塩 5.0g
水 210.0g
ドライイースト 2.4g
酵母水溶性多糖類 8.0g
合 計 508.4g
Claims (6)
- 酵母細胞壁をアルカリ条件下で洗浄し、アルカリ加水分解した後、アルカリ加水分解物を酸性条件下で加熱し、固形物を除去することを特徴とする酵母水溶性多糖類の製造方法。
- 酵母細胞壁をアルカリ条件下で洗浄し、アルカリ加水分解した後に固液分離し、上清溶液を酸性条件下で加熱し、固形物を除去することを特徴とする酵母水溶性多糖類の製造方法。
- 前記アルカリ加水分解を、pH8.0〜14.0、70〜110℃の条件で行うことを特徴とする請求項1または2に記載された酵母水溶性多糖類の製造方法。
- 前記酵母細胞壁が醸造用酵母またはパン酵母の細胞壁であることを特徴とする請求項1または2に記載された酵母水溶性多糖類の製造方法。
- 前記アルカリ条件下での洗浄を、pH8.0〜14.0に調整後、加水しながら遠心分離機で固液分離することを特徴とする請求項1または2に記載された酵母水溶性多糖類の製造方法。
- 前記酸性条件下での加熱を、pH2.5〜5.0、90〜140℃、15〜120秒で行うことを特徴とする請求項1または2に記載された酵母水溶性多糖類の製造方法。
