B. 多様なペクチン用量を有し、SHMPを含まないペクチン溶液を添加する前にSHMPをヨーグルトに添加したヨーグルト飲料
C. 多様なペクチン用量を有し、ペクチンとSHMPの水溶液を調製してヨーグルトに加えたヨーグルト飲料
ペクチン、糖及びSHMPの粉末混合物を表6aに記述の通り調製し、上述の通り脱イオン水に溶解させた。17 % MSNFヨーグルトとペクチン溶液を混合し、多様な濃度のペクチンの熱処理済み試作乳飲料を表6b-1、6b-2、6b-3に従って上述の通りに調製した。測定した沈殿物の一覧を表6cに示した。
Claims (20)
- タンパク質の流動性懸濁液と溶存カルシウム塩を含む乳酸製品を供給する工程と;
HMペクチン及び1つ又は複数の金属イオン封鎖剤を含む安定化剤水溶液を調製する工程と;その後
該安定化剤水溶液と該乳酸製品を混合して乳酸飲料を提供する工程と
を含み、
該乳酸飲料が安定で、目視では不透明で、飲むことができる製品であるという特徴を持つ、乳酸飲料の調製方法。 - 前記乳酸飲料のpHが約3.0〜約5.0である、請求項1に記載の方法。
- 前記タンパク質が乳タンパク質、植物性タンパク質、又はそれらの組み合わせを含む、請求項1に記載の方法。
- 前記HMペクチンのメチルエステル化度が約50超である、請求項1に記載の方法。
- 前記HMペクチンのメチルエステル化度が約55〜約85である、請求項1に記載の方法。
- 前記HMペクチンが柑橘類の皮由来の非アミド化ペクチンである、請求項1に記載の方法。
- 前記HMペクチンのメチルエステル化度が約59〜約77である、請求項6に記載の方法。
- 前記HMペクチンが乳酸飲料中で約0.05〜約0.5 %(w/w)の濃度で存在する、請求項1に記載の方法。
- 1つ又は複数の前記金属イオン封鎖剤がヘキサメタリン酸ナトリウム、ピロリン酸ナトリウム、又はそれらの組み合わせを含む、請求項1に記載の方法。
- 1つ又は複数の前記金属イオン封鎖剤が、前記安定化剤水溶液中に存在するカルシウムイオンの濃度より化学量論的に高い量で前記安定化剤水溶液中に存在し、かつ前記乳酸飲料中に存在するカルシウムイオンの濃度より化学量論的に低い量で前記乳酸飲料中に存在する、請求項1に記載の方法。
- 1つ又は複数の前記金属イオン封鎖剤が、前記安定化剤水溶液中に約1〜約20 %(w/w)の濃度で存在し、かつ前記乳酸飲料中に約0.001〜約1.0 %(w/w)の濃度で存在する、請求項10に記載の方法。
- 1つ又は複数の前記金属イオン封鎖剤が、前記安定化剤水溶液中に約5〜約20 %(w/w)の濃度で存在し、かつ前記乳酸飲料中に約0.001〜約0.5 %(w/w)の濃度で存在する、請求項10に記載の方法。
- 1つ又は複数の前記金属イオン封鎖剤が、前記安定化剤水溶液中に約10〜約20 %(w/w)の濃度で存在し、かつ前記乳酸飲料中に約0.005〜約0.1 %(w/w)の濃度で存在する、請求項10に記載の方法。
- 前記安定化剤水溶液を調製する工程が、前記HMペクチンと1つ又は複数の前記金属イオン封鎖剤を乾式混合し、その後該乾式混合物を水性媒体に溶解させる工程を含む、請求項1に記載の方法。
- 前記安定化剤水溶液を調製する工程が、前記HMペクチンを、1つ又は複数の前記金属イオン封鎖剤を含む水溶液に添加する工程を含む、請求項1に記載の方法。
- 前記安定化剤水溶液を脱イオン水、水道水、又はそれらの組み合わせを用いて調製する、請求項1に記載の方法。
- 前記乳酸飲料が飲むヨーグルトを含む、請求項1に記載の方法。
- 安定で、目視では不透明で、飲むことができる製品であるという特徴を持ち、乳酸製品、HMペクチン、及び1つ又は複数の金属イオン封鎖剤を含み、pHが約3.0〜約5.0である乳酸飲料であって;
該HMペクチンが約55〜約85のメチルエステル化度を有し、かつ乳酸飲料中で約0.05〜約0.5 %(w/w)の濃度で存在し;かつ
1つ又は複数の該金属イオン封鎖剤が該乳酸飲料中に約0.001〜約0.5 %(w/w)の濃度で存在する、
乳酸飲料。 - 前記HMペクチンが前記乳酸飲料中で約0.05〜約0.15 %(w/w)の濃度で存在し、かつ1つ又は複数の前記金属イオン封鎖剤が前記乳酸飲料中に約0.001〜約0.1 %(w/w)の濃度で存在する、請求項18に記載の乳酸飲料。
- 安定で、目視では不透明で、飲むことができる前記製品の沈殿物が約2.5 %未満であるという特徴を持つ、請求項18に記載の乳酸飲料。
