Abstract
PURPOSE: To stabilize protein colloid, economically and industrially, by adding an ionic molecular subtance together with an acidic metaphosphate to protein colloid.
CONSTITUTION: A protein colloid (e.g. fruit-containing dairy drink, fermented milk, etc.) is stabilized with a stabilizer composed 1pt.wt. of an ionic moleuclar substance such as sodium cellulose glycolate and 20W0.001pts.wt. of an acidic methaphosphate. The amount of the stabilizer necessary to attain a remarkable stabilizing effect is as low as ≤2%, esp. 1W0.01% based on the protein colloid. The acidic metaphosphate is the one having a M2O/P2O5 value of 0W10 (M is Na, K or NH4) and the pH of ≤4 as 1% aqueous solution.
