【解決手段】油脂、乳化剤及び粗製海水塩化マグネシウムを含有し、1)塩化マグネシウムの濃度が5〜20質量%、2)塩化マグネシウム/ナトリウムの質量比が3/1〜25/1、3)塩化マグネシウム/カリウムの質量比が2/1〜18/1である油中水乳化型豆腐用凝固剤。

Description
ところが、塩化マグネシウム濃度が低い乳化凝固製剤を用いると豆腐が油臭くなったり、乳化剤の異味がしたりするとともに、塩化マグネシウム独自の甘味のある風味が感じられなくなる。その解決手段として、特定の割合で塩化ナトリウムを含むことで、風味の改良ができることが知られている(特許文献5)が、その効果は十分でない。
即ち本発明は、
油脂、乳化剤及び粗製海水塩化マグネシウムを含有し、
1)塩化マグネシウムの濃度が5〜20質量%、
2)塩化マグネシウム/ナトリウムの質量比が3/1〜25/1、
3)塩化マグネシウム/カリウムの質量比が2/1〜18/1
である油中水乳化型豆腐用凝固剤である。
また、本発明の豆腐用凝固製剤は、他の凝固剤、例えば、にがり(塩化マグネシウム)、GDL(グルコノデルタラクトン)、すまし粉(硫酸カルシウム)、塩化カルシウムなどを併用できる。
本発明において、乳化凝固製剤中の塩化マグネシウムの濃度はMgCl2で5〜20質量%(以下、単に%と言う)であるが、好ましくは8〜20%、より好ましくは、10〜18%である。この量が5%以上であると、乳化剤の異味が減少し、塩化マグネシウム独自の甘味のある風味が感じられる。一方、20%以下であると、製剤の保存安定性や、製剤化が安定にできる。
本発明で使用する粗製海水塩化マグネシウムは、塩化マグネシウムとして12.0%〜30.0%、ナトリウムとして4.0%以下を含有するものをいう。具体的には、室戸の潮にがり(赤穂化成(株)製)やマリンパワーII((株)シュアナチュラル製)等が挙げられる。
ポリグリセリン脂肪酸エステルの配合量は、保存性や豆腐の風味の点で乳化凝固剤中に0.2〜8.0%、好ましくは0.3〜5.0%、より好ましくは、0.5%〜3.0%である。
表1に示すような配合組成で全量500gの乳化凝固製剤の配合を水相、油相それぞれについて行った後、それぞれ60℃に加温し、油相をホモミキサーで8000rpmで回転しながら水相を徐々に(1分間)添加した後、10000rpm、1分間乳化を行い、油中水乳化型凝固剤を得た。
比較例3
(株)シュアナチュラル製:マリンパワーIIを水で希釈し、表1に示す組成の凝固剤を得た。
MgCl2、ナトリウム、カリウムの含有量は、原子吸光光度計(Z−6100形日立偏光ゼーマン原子吸光光度計)により測定した。
[豆腐の製造]
(実施例1〜2、比較例1〜2の場合)
大豆ビントンを用い、常法によって得られるBrix12の豆乳を用いた。80℃に調整し、定量ポンプにより750g/分で送液されている該豆乳に、該乳化凝固剤を豆乳中の塩化マグネシウム6水塩濃度が0.3%になるように定量ポンプを用いてライン中で混合し、さらにマイルダー(荏原製作所製)を用いて機械的分散を行った。分散処理液を型枠(8cm×7cm×3cm(高さ))に150g充填した。20分間熟成した後、一晩5℃で保存した。豆腐の物性、豆腐の風味を下記基準で評価を行い、結果を表2に示す。
(比較例3の場合)
大豆ビントンを用い、常法によって得られるBrix12の豆乳を用いた。20℃に調整した該豆乳を、型枠(8cm×7cm×3cm(高さ))に150g充填した後、該凝固剤を塩化マグネシウム6水塩濃度が0.3%になるように添加し、5秒間攪拌棒で攪拌混合した後、90℃の湯浴中で1時間型枠毎加熱した後、一晩5℃で保存した。豆腐の物性、豆腐の風味を下記基準で評価を行い、結果を表2に示す。
[豆腐の物性]
豆腐を半径1cm、高さ1.5cmの円柱に切り出し、小型卓上試験機Ez-Test(島津製作所製)を用い圧縮破断試験を行った。破断点の強度(N)を豆腐の硬さ、破断点の圧縮距離/1.5(試料の高さ)×100:破断歪率(%)を豆腐の弾力性の指標とした。破断強度5N以上、破断歪率50%以上の豆腐は、十分な硬さ及び優れた弾力性を有する。
[豆腐の風味]
豆腐を専門パネラー10名にて豆腐の風味・甘味について5点評価法で行い、その合計点で表した(評価は甘さ及び全体評価について行った)。評価の基準は、以下のとおりである。
5点:好ましい
4点:やや好ましい
3点:どちらともいえない
2点:やや好ましくない
1点:好ましくない
実施例の豆腐は、十分な硬さと弾力を有し、均一でなめらかな組織であり、風味に優れることがわかる。比較例1〜2は、塩化マグネシウム独自の甘味のある風味の点で劣る。比較例3は、均一な組織にならず、物性、風味とも実施例に劣る。
Claims (3)
- 油脂、乳化剤及び粗製海水塩化マグネシウムを含有し、
1)塩化マグネシウムの濃度が5〜20質量%、
2)塩化マグネシウム/ナトリウムの質量比が3/1〜25/1、
3)塩化マグネシウム/カリウムの質量比が2/1〜18/1
である油中水乳化型豆腐用凝固剤。 - 油中水乳化型凝固剤の油相/水相比(質量比)が60/40〜25/75である請求項1記載の油中水乳化型豆腐用凝固剤。
- ポリグリセリン脂肪酸エステルを含む乳化剤を使用し、該豆腐用凝固剤中におけるポリグリセリン脂肪酸エステルの含有量が0.2〜8.0質量%である請求項1又は2記載の油中水乳化型豆腐用凝固剤。
