Abstract
Procédé d'obtention d'un produit panifié, selon lequel on forme une pâte à base de farine, d'eau et de levure, que l'on pétrit et façonne en pâtons, qui sont soumis à cuisson après fermentation. Selon l'invention, ce procédé est caractérisé en ce que lesdits pâtons sont soumis à une cuisson partielle arrêtée après structuration mais avant coloration, après quoi les pâtons ainsi partiellement cuits sont mis sous un vide au moins partiel, dégazés, et emballés puis soumis, alors qu'ils se trouvent dans leurs emballages, à un traitement thermique apte à assurer leur stérilisation. Obtention de produit panifié de longue conservation auquel on peut donner de façon simple et rapide l'aspect, la consistance et la saveur d'un produit panifié frais.
