Abstract
Procedimiento, con su dispositivo correspondiente para fabricar fondos de tartas o pizzas, a base de pasta del tipo pasta de pan, según el cual la pasta se amansa, se la divide en trozos, se dejan reposar éstos durante un breve periodo de tiempo, se confeccionan luego los fondos, se someten a una sola fermentación y se cuecen los fondos, caracterizado porque los fondos se confeccionan directamente, sin laminación ni fermentación previa.
