Abstract

L'invention concerne un procédé de fabrication de fonds de tartes ou pizzas à base de pâte du type pâte à pain et un outillage pour la mise en oeuvre du procédé. Selon ce procédé la pâte est petrie, divisée en pâtons, les pâtons sont laissés au repos pendant une courte durée, puis foncés, subissent une seule pousse et les fonds sont cuits, l'opération de fonçage ayant lieu directement sans laminage ni pousse préalable. L'outillage représenté à la figure 1 comprend un poinçon et une matrice recevant le pâton sur son support et des moyens de formation d'un coussin d'air entre le poinçon et la pâte.
