PROCEDIMIENTO PARA PREPARAR UN COMPLEJO DE NORBIXINA Y UN SUBSTRATO SELECCIONADO DE UN POLISACARIDO DE CADENA RAMIFICADA O CICLICO O UNA PROTEINA SOLUBLES EN AGUA O DISPERSABLES EN AGUA O UNA COMBINACION DE LOS MISMOS. DICHO COMPLEJO NO SE PRECIPITARA AL ESTAR EN AGUA, Y DA UNA SOLUCION EN AGUA ESENCIALMENTE ESTABLE DE BRILLANTE COLOR ROJIZO O MAGENTA Y DE DICHO COMPLEJO NO PUEDE EXTRAERSE LA NORBIXINA POR CENTRIFUGACION. EL PROCEDIMIENTO CONSISTE EN PONER EN CONTACTO EL SUBSTRATO Y LA NORBIXINA EN UNA SOLUCION ACUOSA CON UN PH ALCALINO, POR EJEMPLO POR ENCIMA DE ALREDEDOR DE 8,5, EN EL QUE LA NORBIXINA ESTA PRESENTE EN SU FORMA HIDROSOLUBLE, ALCALINA Y DE COLOR ANARANJADO, PARA ACIDIFICARLO POSTERIORMENTE, BAJANDO EL PH A UN VALOR INFERIOR A APROXIMADAMENTE 7,7, PREFERENTEMENTE INFERIOR A APROXIMADAMENTE 6,8, MEDIANTE LO CUAL SE ESTABLECE EL COMPLEJO DE NORBIXINA EN SU FORMA NEUTRAL A ACIDA DE COLOR ROJIZO O MAGENTA CON EL SUBSTRATO.
