Claims (11)
- a) 고상물 농도가 약 8% 내지 24중량 %이고 pH가 약 4.7 내지 5.5인 수용성 차 농축물을 얻고, b) 식용 가능한 산을 농축물에 가하여 pH를 약 2.9 내지 3.5로 감소시키고, c) 농축물의 온도를 약 -1.1°내지 약 7.2℃(30°-45°F)로 감소시키고, pH를 감소시킨 농축물을 이와 같이 감소된 온도에서 적어도 1시간 동안 유지하여 침전물을 생성시키고, d) 농축물을 투명하게 하기 위해 침전물을 농축물로부터 제거하고, e) 투명화된 농축물의 pH를 약 3.9 내지 4.3수준으로 상승시킨후, f) 이 농축물을 실온에서 저장하는 단계로 되는, 저장에 안정하고 혼탁하지 않은 차 농축물의 제조방법.
- 제1항에 있어서, 단계(a)의 농축물을 이온제거수를 사용하여 제조하는 방법.
- 제1항에 있어서, 제거된 침전물이 단계(a)의 농축물에 함유된 고상물의 5% 내지 20중량 %로 구성되는 방법.
- 제1항에 있어서, 단계(a)의 농축물이 12% 내지 18%의 고상물 농도를 갖는 방법.
- 제1항에 있어서, pH를 단계(b)에서 3.1 내지 3.3으로 감소시키는 방법.
- 제1항에 있어서, 첨가된 산이 타닌산을 함유하는 방법.
- 제1항에 있어서, 첨가된 산이 타닌산과 인산의 배합물인 방법.
- 제1항에 있어서, 농축물의 온도를 단계(c)에서 0℃ 내지 약 3.3℃(32°내지 38°F)로 감소시키는 방법.
- 제1항에 있어서, 침전물을 원심분리하여 제거시키는 방법.
- 제1항에 있어서, pH를 단계(e)에서 약 4.0 내지 4.2로 상승시키는 방법.
